  • 1/2 cup maple syrup

  • 3 cups cooked quinoa (you can make about 1 cup uncooked quinoa)

  1. Line a tray with baking paper.
  2. Make room in the fridge or freezer.
  3. Combine the coconut oil, maple syrup and coffee in a saucepan. Bring the mixture to a boil, stirring constantly, until the individual ingredients are combined. Let the mixture boil for about one minute, then set the pot aside.
  4. Mix together the peanut butter, vanilla and salt. Mix it into the quinoa.
  5. Mix all the prepared mixtures together and then make small scoops on the prepared tray with baking paper.
  6. Decorate the cookies with chocolate chips.

Paleo Christmas cookies with coffee

If you follow the paleo rules when eating , then you don’t have to despair! This recipe is delicious.

No classic flour or traditional sugar is used.


  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon cinnamon
  • a pinch of sea salt
  • 1 tablespoon of freshly ground coffee
  • 1/2 cup of ghee or coconut oil
  • 1/2 cup coconut sugar
  • 1/2 teaspoon of vanilla extract
  • 1 large egg


  • 3/4 cup coconut butter
  • 1/4 cup pure maple syrup
  • 3 spoons of cold coffee
  • 2 tablespoons of almond milk


  1. In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, salt, and coffee.
  2. Add ghee and coconut sugar. Mix the ingredients until a smooth dough is formed.
  3. Add the egg and vanilla, then mix again.
  4. Finally, add the dry ingredients and make a dough.
  5. Let the dough chill overnight in the refrigerator.
  6. Once the dough has cooled, preheat the oven to 180°C.
  7. Line a tray with baking paper.
  8. Roll out the dough to a sheet about 5 mm high.
  9. Cut out different shapes from the dough and put the cookies on a baking sheet lined with baking paper.
  10. Bake the candy for about 8 to 10 minutes, then let it cool.
  11. In the meantime, prepare the frosting by mixing all the ingredients in a bowl. Add more almond milk as needed. It is important that the frosting can be spread well.

  • 2 tablespoons of warm whole milk
  • 1 spoon of instant coffee
  • 3/4 cup room temperature unsalted butter
  • 1 tub of cottage cheese
  • 1 cup brown sugar
  • 1 teaspoon of vanilla extract
  • 2 and 1/2 cups plain flour
  • 3 spoons of cocoa


  1. Preheat the oven to 180°C.
  2. Heat 2 tablespoons of milk in the microwave. Add the instant coffee to the hot milk and stir until the coffee granules dissolve.
  3. Place the warm coffee milk in the freezer to cool.
  4. Mix the flour and cocoa in a bowl. Set the mixture aside.
  5. In another bowl, rub the butter with the cottage cheese.
  6. Then add brown sugar, vanilla extract and cooled coffee milk to the butter. Mix all ingredients to combine.
  7. Mix the dry ingredients with the wet ingredients to form a dough.
  8. Then form ovals from the dough.

Coffee ovals with Baileys glaze

  • 1 cup room temperature butter
  • 2 cups powdered sugar
  • 2 eggs
  • 2 tablespoons instant coffee dissolved in 1/4 cup water
  • 1 and 1/2 spoons of coffee creamer
  • 3 and 1/2 cups flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon salt


  1. Cream the butter with the sugar in a bowl.
  2. Add the eggs and mix until all the ingredients are perfectly combined.
  3. Next, pour the coffee into the bowl, add the baking powder, a pinch of salt and finally the flour.
  4. Make the dough, then let it rest in the fridge for half an hour.
  5. Take the dough out of the fridge and form it into ovals, which you then gently press with a fork, for example.
  6. Preheat the oven to 180°C and bake the Christmas coffee cookies for about 10 minutes.
  7. While your coffee ovals are cooling, start making the frosting.
TIP : Make the glaze with Baileys liqueur according to the recipe for coconut-rum glaze , but use Baileys instead of rum. You may or may not use coconut, it’s up to you.

You can customize the cookies to your taste. While some people like nuts in them, others like coffee cookies without nuts.

For example, in this recipe white chocolate is used instead of nuts.


  • 1 cup and 2 tablespoons plain flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 2 spoons of instant coffee or espresso
  • 1/2 cup chopped unsalted room temperature butter
  • 1/2 cup granulated sugar
  • 1 and 1/2 teaspoons of vanilla extract
  • 1 large room temperature egg
  • 3/4 cup white chocolate, chopped into small pieces


  1. Mix the flour, baking soda and instant coffee or espresso in a bowl. Set the bowl aside.
  2. In another bowl, rub the butter with the sugar. Then add the eggs and mix again until fluffy. Add the vanilla extract and mix the mixture again for a while.
  3. Mix the dry ingredients with the wet ingredients to make a smooth dough.
  4. Add pieces of white chocolate to the dough, then let it sit in the fridge for at least an hour, but ideally up to three days.
  5. Preheat the oven to 180°C.
  6. Line a baking sheet with baking paper.
  7. Then form balls from the dough, place them on a baking sheet lined with baking paper and gently press them to form cookies.
  8. Bake these coffee Christmas cookies for about 12 minutes until the edges start to brown.
  9. Remove the cookies from the oven and let them cool.
TIP : You can freeze the Christmas coffee cookies for two months. You can also freeze the dough itself. After two months, just take the dough out, leave it at room temperature for a while, and then make cookies out of it and bake it.
