METHOD
- Line a tray with baking paper.
- Make room in the fridge or freezer.
- Combine the coconut oil, maple syrup and coffee in a saucepan. Bring the mixture to a boil, stirring constantly, until the individual ingredients are combined. Let the mixture boil for about one minute, then set the pot aside.
- Mix together the peanut butter, vanilla and salt. Mix it into the quinoa.
- Mix all the prepared mixtures together and then make small scoops on the prepared tray with baking paper.
- Decorate the cookies with chocolate chips.

No classic flour or traditional sugar is used.
INGREDIENTS FOR COOKIES
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon of baking soda
- 1/4 teaspoon cinnamon
- a pinch of sea salt
- 1 tablespoon of freshly ground coffee
- 1/2 cup of ghee or coconut oil
- 1/2 cup coconut sugar
- 1/2 teaspoon of vanilla extract
- 1 large egg
INGREDIENTS FOR THE GLASS
- 3/4 cup coconut butter
- 1/4 cup pure maple syrup
- 3 spoons of cold coffee
- 2 tablespoons of almond milk
METHOD
- In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, salt, and coffee.
- Add ghee and coconut sugar. Mix the ingredients until a smooth dough is formed.
- Add the egg and vanilla, then mix again.
- Finally, add the dry ingredients and make a dough.
- Let the dough chill overnight in the refrigerator.
- Once the dough has cooled, preheat the oven to 180°C.
- Line a tray with baking paper.
- Roll out the dough to a sheet about 5 mm high.
- Cut out different shapes from the dough and put the cookies on a baking sheet lined with baking paper.
- Bake the candy for about 8 to 10 minutes, then let it cool.
- In the meantime, prepare the frosting by mixing all the ingredients in a bowl. Add more almond milk as needed. It is important that the frosting can be spread well.
- Once the cookies are cool, decorate them with the frosting.

- 3 spoons of cocoa
METHOD
- Preheat the oven to 180°C.
- Heat 2 tablespoons of milk in the microwave. Add the instant coffee to the hot milk and stir until the coffee granules dissolve.
- Place the warm coffee milk in the freezer to cool.
- Mix the flour and cocoa in a bowl. Set the mixture aside.
- In another bowl, rub the butter with the cottage cheese.
- Then add brown sugar, vanilla extract and cooled coffee milk to the butter. Mix all ingredients to combine.
- Mix the dry ingredients with the wet ingredients to form a dough.
- Then form ovals from the dough.
