Bruschetta with tomatoes
A great Italian appetizer or healthy snack full of fresh tomatoes and basil with a light garlic flavor. It is an ideal quick dish that will please not only vegetable lovers.
INGREDIENTS
- 1 baguette or ciabatta
- 4 large ripe tomatoes
- bunch of fresh basil
- salt
- pepper
- 3 cloves of garlic
- olive oil
METHOD :
- Cut the pastry into slices and toast them dry in the oven or toaster.
- Meanwhile, prepare the tomato mixture.
- Cut the tomatoes into small cubes.
- Finely chop the basil and mix thoroughly, but lightly, together with salt, pepper and a spoonful of olive oil.
- Finally, add pressed garlic cloves.
- Take the hot breads out of the oven, immediately brush them with olive oil and garnish generously with the tomato mixture.

Apple chips with cinnamon
Thinly sliced apples that are lightly sprinkled with cinnamon and then baked until crispy, your whole family will love them! The ideal healthy snack.
INGREDIENTS
- 3 large sweet crisp apples
- 3/4 teaspoon ground cinnamon
METHOD
- Place racks in the top and bottom thirds of your oven and preheat the oven to 90 degrees Celsius.
- Line two trays with baking paper.
- Wash the apples.
- Cut out the cores from the apples.
- Using a mandolin (recommended) or a very sharp knife, cut the apples horizontally into rounds about 0.3 cm thick.
- Spread the apples in a single layer on the prepared baking sheets.
- Sprinkle with cinnamon.
- Bake for 1 hour in the upper and lower thirds of the oven.
- Remove the trays from the oven and change the position of the trays (put the tray from the upper third of the oven to the lower third and vice versa).
- Continue baking for an additional 1 to 1 1/2 hours, until one apple chip is crisp when removed from the oven after 2 to 3 minutes at room temperature.
- Once you’re happy with the crispness (total time will vary depending on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour until they cool.
- If you are not worried that you have overcooked them, immediately remove the tray from the oven and let it sit at room temperature.

Healthy Tortilla Rolls
These rolls with vegetables and cream cheese will become your children’s favorite snack, be sure of that!
INGREDIENTS
- 1 cup chopped vegetables: broccoli, carrots, red pepper
- 110 g of softened cream cheese
- 1/3 cup mayonnaise
- 1/2 tsp garlic powder
- 1/4 teaspoon dried dill
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 large wheat tortillas
- 1/2 cup grated cheddar
- 2 tablespoons chopped spring onions
METHOD
- Choose the vegetables of your choice and chop them into extra small pieces.
- Let the cream cheese soften.
- In a medium bowl, combine the cream cheese, mayonnaise, garlic powder, dill, salt and pepper.
- Microwave the tortillas for 15-20 seconds first.
- Spread the mayonnaise mixture over the warmed tortillas and sprinkle evenly with the greens, cheddar and chopped spring onions.
- Roll tightly from one edge of the tortilla to the other.
- Secure with a toothpick or two and chill in the freezer for 20 minutes to set.
- All that’s left to do is cut and serve!

Cauliflower patties
The advantage of this recipe is the possibility to serve the patties both warm and cold. In cold form, it perfectly complements any fresh vegetable salad. Enjoy this great and above all healthy afternoon snack!
INGREDIENTS
- 1 cauliflower
- 1 teaspoon cumin
- 1/2 teaspoon nutmeg
- salt and pepper
- 3 eggs
- 6 spoons of semi-coarse flour
- frying oil
METHOD
- Separate the cauliflower into individual florets, cut off the hard ends of the florets and boil the rest in boiling water with amine for about ten minutes.
- Drain and let cool completely.
- Then mash the cauliflower with a potato masher, add nutmeg and salt and pepper to taste.
- Separate the yolks from the whites.
- Add the yolks to the cauliflower and beat the whites until stiff.
- Add flour to the mixture.
- Finally, carefully add the beaten egg whites.
- Heat the upper layer of oil in the pan.
- Gradually remove from the cauliflower mixture and fry small patties until golden brown on both sides.

Homemade chocolate termix
A healthy treat that will satisfy your sweet tooth and also add a decent amount of protein and calcium to your body.
INGREDIENTS
- 500 g of fine soft cottage cheese
- 250 ml sour cream (or Greek yogurt)
- 1 package of vanilla sugar
- 10 dates
- 1 teaspoon of cocoa
- 100 g of 70% dark chocolate (keep approx. 15-20 g for grating, it will be used for sprinkling the termix)
METHOD
- Melt the chocolate in a water bath.
- Pour hot water over the dates and let them soften for about 30 minutes.
- Then strain them and blend them together with the vanilla sugar with a hand blender to a smooth paste.
- Wipe the curd with the date pulp, add the sour cream, mix again and then mix in the dark chocolate using a whisk.
- If the cream is too sweet, you can add a small amount of sugar.
- Pour the cream into glass jars, roughly chop or grate the dark chocolate and sprinkle the cream.
- Leave to cool in the refrigerator for at least 3 hours.
