Cold sauces are perhaps a little neglected in our kitchen, with the exception of tartar sauce, although they always add a welcome variety of flavors to the prepared dishes.

Baked chicken with cold sauce
Boiled cold chicken in a creamy, spicy sauce with sultanas and apricots, this chicken is a British classic!
What will we need
- 100 ml of mayonnaise
- 3 tablespoons of Greek yogurt
- 1 ½ teaspoons of curry powder
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon of salt
- ⅛ teaspoon of white pepper
- 3 spoons of mango chutney
- 2 tablespoons of raisins
- 3 dried apricots – finely chopped
- 500 g cooked chicken breast, coarsely chopped
- 1 tablespoon of roasted almond flakes
Method
- In a bowl, mix mayonnaise, Greek yogurt, curry powder, cinnamon, salt, pepper, mango chutney, raisins, and apricots until combined.
- Add the shredded chicken and toss to coat the chicken.
- Place in a serving bowl and sprinkle with flaked almonds, then serve as part of a salad or in a sandwich.

Tzatziki
Almost everyone knows the classic Greek yogurt dip with garlic and cucumber, but do you know how it is made?
What will we need
- 400 g of white yogurt
- 3 cloves of garlic
- 1/2 salad cucumber
- 1 lime
- salt
- pepper
- fresh dill to taste
Method
- In a bowl, mix white yogurt with pressed garlic, a pinch of salt and pepper.
- Then add finely chopped cucumber and juice from half a lime.
- Mix thoroughly and let it sit in the cold for at least one hour.
- Garnish the finished sauce with fresh dill. Dill lovers can add it to the sauce itself.

Homemade BBQ sauce
This easy BBQ sauce recipe is ready in 15 minutes and is deliciously sweet, spicy and tangy.
What will we need
- 1 ½ cups brown sugar
- 1 ½ cups ketchup
- ½ cup apple cider vinegar
- ½ cup of water
- 1 tablespoon Worcestershire sauce
- 1 ½ tablespoons of chili powder
- 2 teaspoons paprika
- 1 tablespoon of dry minced garlic
- 1 tablespoon chopped dry onion
- 2 teaspoons of salt
- 1 ½ teaspoons of black pepper
Method
- Combine all ingredients in a saucepan over medium heat.
- Bring to a boil and immediately reduce heat to low.
- Pour into an airtight container and let cool completely.

Lemon sauce for fish
If you like fish, be sure to try this cold sauce recipe.
What will we need
- juice of 1 lemon
- 125 g liquid butter
- salt
- pepper
- 2 tablespoons finely chopped chives
- 1 teaspoon of chopped thyme
- 120 g sour cream
Method
- Beat the juice of one lemon in a water bath until frothy.
- Add liquid butter drop by drop until the sauce thickens.

Method
- Pour a cup of unflavored cottage cheese into a bowl, add sour cream and grated hard cheese.
- Mix well. Season with salt and ground pepper and pour a whole handful of fresh chopped chives into the finished sauce.
- Serve the cream sauce chilled.
- It is suitable as a dip for grilled meat or vegetables.

Tomato ketchup sauce
A slightly improved tomato sauce that goes great not only with meat, but also with tortillas.
What will we need
- 5 spoons of ketchup
- 150 g of white creamy yogurt
- 2 teaspoons Worcestershire sauce
- 100 g of mayonnaise
- 1/2 onion
- garlic, salt and chili to taste
Method
- Finely chop the onion, squeeze the garlic, mix in the other ingredients.
- Serve with meat or tortillas.

1. Bechamel (white sauce)
