What will we need

For the dough

  • 200 g of cold butter
  • 100 g cold sour cream
  • 1 cold egg
  • 80 g of sugar
  • 350 g of flour
  • 6 g of baking powder
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt

  • 40 g of flour

For filling

  • 500 g of cottage cheese
  • 180 g of sugar
  • 2 eggs
  • 40 g cornstarch
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt

  • 70 g of halved strawberries
  • 70 g of raspberries
  • 70 g of blueberries
  • 3 apricots for quarters
  • 1 peach, cut into strips

Method

  • To prepare the dough, mix flour, sugar, baking powder and salt.
  • Add the chopped cold butter and work it in.
  • Add the sour cream, eggs and vanilla and knead quickly and briefly into a pliable dough. If the dough is too sticky, add a little more flour. If it is too dry, add a little more sour cream.
  • Cover the dough and put it in the fridge for about 40 minutes.
  • Mix the flour, sugar and salt for a crumb.
  • Add the butter and vanilla and knead it finely. Put the crumb in a cool place until you need it.
  • Beat the eggs for the filling in a large bowl.
  • Add the cottage cheese, sugar, vanilla and salt and mix until combined.
  • Add the cornstarch and mix again until the mixture is creamy.
  • Grease the baking sheet with butter and sprinkle it with flour, tap off the excess flour.
  • Roll out the dough, place it in the tin and press it to the bottom and sides.
  • Pour the curd filling onto the dough in the baking sheet.
  • Sprinkle the cottage cheese filling with about half of the crumbs.
  • Spread raspberries, blueberries, halved strawberries, quartered apricots and peaches on the bun.
  • Sprinkle the fruit with the remaining crumbs.
  • Bake the fruit curd bun with crumbs in a preheated oven at 180 °C for about 50 minutes, and then let it cool completely.

Yeasted buns with cottage cheese

We probably don’t even need to introduce this classic to you, it’s good old fashioned goodness!

What will we need

For yeast

  • 1 tablespoon of powdered sugar
  • 100 ml warm milk
  • 21 g of regular yeast

For the dough

  • 150 ml warm milk
  • 3 egg yolks
  • 1 egg
  • 160 g of melted butter
  • pinch of salt
  • 500 g plain flour
  • 4 tablespoons of powdered sugar

For filling

  • 500 g of cottage cheese
  • 2 egg yolks
  • 1-2 teaspoons cream (10% or 12% fat)
  • 1 teaspoon of lemon zest
  • 55 g of powdered sugar
  • Optional: rum or rum essence, almond essence, raisins

Method

  • Mix the milk and sugar in a small bowl. Make sure the milk is not too hot or too cold.
  • Add small pieces of yeast. Cover the bowl with a kitchen towel and put it in a warm place.
  • After 10 or 15 minutes, the yeast should have dissolved and there should be foam on the surface of the milk. If not, wait another 15 minutes.
  • In a large bowl, mix all the egg yolks, eggs and milk. Add half the melted butter and a pinch of salt.
  • Mix in the flour and sugar.
  • Add yeast.
  • Knead the dough carefully with a wooden spoon or in a food processor with a kneading hook. If you are doing it by hand, it can take about 15 minutes to knead the dough properly.
  • Once the dough stops sticking to the bowl, you can stop kneading.
  • Cover the bowl with a kitchen towel and put it in a warm place to allow the dough to double in volume. This should take approximately 45-60 minutes.
  • In the meantime, prepare the filling that you will use.
  • Mix the cottage cheese and egg yolks in a bowl. Pour the cream so that the mixture is not too stiff, but be careful that it is not too liquid.
  • Add the rest of the ingredients and mix.
  • Preheat the oven to 180 degrees. Grease the baking sheet with butter.
  • Once the dough has doubled in size, cut off about half of it. Place on a floured surface and roll out to a thickness of about 1 cm.
  • Cut out squares approx. 5×5 cm. Place a full teaspoon of filling in the center of the square.
  • Wrap the dough around the filling to form a ball.
  • Place it on a baking sheet. Continue folding, leaving a small space between the balls on the baking sheet, they will continue to rise in the oven.
  • When done, let the dough rise on the baking sheet for 15 minutes before putting it in the oven.
  • After 15 minutes, thoroughly butter the buns.
  • Place the tray in the oven and bake for 30 minutes until golden.

The easiest recipe for a bun with cottage cheese – without weight.

What will we need

  • 1 cup plain flour
  • 1/2 cup of oil
  • 1/2 cup sugar
  • 1/2 cup cottage cheese
  • 2 teaspoons of cocoa powder
  • 1 teaspoon of coffee
  • 1/2 teaspoon of vanilla essence
  • 1/2 teaspoon of baking soda
  • 2 tablespoons of milk
  • roasted almonds ground into a coarse powder

Method

  • Add oil, cottage cheese and sugar to the bowl.
  • Sift the flour, cocoa powder, coffee and baking soda.
  • Add the dry ingredients to the curd mixture and stir.
  • Add essence. Mix well. If the mixture is too thick, add milk.
  • Pour the mixture into the greased mold.
  • Preheat the oven and bake for 35 minutes at 180°C.

  • 300 g of low-fat cottage cheese
  • 90 g of sugar
  • 2 large egg whites
  • 40 ml rapeseed oil
  • 1 large egg
  • 4 teaspoons vanilla extract, divided
  • 360 g plain flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 tablespoon breadcrumbs
  • 40 g cane sugar
  • 40 g chopped walnuts
  • 40 g of raisins
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 90 g granulated sugar
  • 2 to 3 teaspoons of skimmed milk

Method

  • In a large bowl, beat the zucchini, cottage cheese, sugar, egg whites, oil, egg, and 3 teaspoons vanilla until well combined.
  • In a small bowl, whisk together the flour, baking powder, baking soda, and salt; gradually stir into the zucchini mixture until everything is combined.
  • Grease the bun mold with butter and sprinkle with breadcrumbs.

Apple bun with cottage cheese and vanilla

This apple and vanilla cheesecake bun tastes great. What is more important is that this dessert is very low in calories and therefore suitable for people who are watching their figure.

What will we need

  • 200 g of cottage cheese
  • 4 eggs
  • sugar, to taste
  • salt
  • ½ teaspoon of vanilla extract
  • 3 spoons of rice flour
  • 1 teaspoon of baking powder
  • 2-3 apples

Method

  • Preheat the oven to 170°C.
  • Place eggs, sugar, salt and vanilla extract in a bowl.
  • Beat with a mixer until light and fluffy.
  • Sift the rice flour and mix it with the baking powder.
  • Add to the eggs and mix gently.
  • Mix the egg mixture with the cottage cheese until the mixture is smooth.
  • Put the dough in the mold, smooth it with a spatula.
  • Cut the apples into thin slices and place them on the dough.
  • Bake the cottage cheese bun for 40-45 minutes until golden.

What will we need

  • 450 g plain flour

  • 5 egg whites

  • 220 g of powdered sugar

  • 250 g of butter

Method

  • Put flour and cocoa in a bowl and mix with baking powder. Add the softened butter. Knead the dough.
  • Add cream and knead again.
  • Put the dough in a cool place for half an hour.
  • Beat egg whites and a pinch of salt until stiff. Add sugar.
  • Put cream cheese, egg yolks, sugar and milk in a bowl.
  • Mix well and add the egg whites.
  • Divide the dough into 2 halves.

  • Place the bowl over a water bath and cook, whisking frequently, until thickened, about 10 minutes.
  • Remove from the heat and beat in the butter, stirring until fully incorporated and cool.
  • Preheat the oven to 180 degrees and grease the mold.
  • For the carrot cake, beat the eggs with both sugars, olive oil, applesauce, vanilla and orange zest until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, cardamom, ginger, nutmeg, and salt until well combined.
  • Add the dry ingredients to the wet ingredients and mix until combined.
  • Stir in the grated carrot and chopped pistachios.
  • Pour the dough into the mold.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Leave the bun to cool for 25 minutes, turn it out of the pan and let it cool completely.
  • For the frosting, beat the butter with the cream cheese until well combined. Add the powdered sugar and vanilla and beat until well combined.
  • Cut the bun in half and spread the frosting around the edges so that there is a place in the middle where you will then add the orange curd.
