You will need:


  • 110 grams of plain flour
  • pinch of salt
  • 60 grams of softened butter
  • 1 egg yolk
  • 25 grams of granulated sugar
  • 1 teaspoon of water
  • round baking dish with a diameter of 22 centimeters


  • 110 grams of soft cottage cheese
  • 1 egg
  • 50 grams of powdered sugar
  • 1 tablespoon cornstarch
  • zest and juice of one lemon
  • 3 tablespoons of heavy cream

Preparation process:

  • Mix the sifted flour and salt in a bowl.
  • Make a well and add the butter, egg yolk, sugar and water and slowly mix the ingredients with a fork.
  • Finally, you connect the dough and let it rest for a quarter of an hour.
  • Roll the rested dough into a round shape, then transfer it to a greased round pan – the edges should be at least 1.5 centimeters high.
  • To prevent the dough from puffing up during baking, place a piece of baking paper on it and sprinkle beans or chickpeas on it, for example.
  • Put the mold with the dough in the oven and bake at a temperature of 200 degrees for about 15 minutes.
  • Separate the baking paper with the load and reduce the temperature to 170 degrees.
  • In a bowl, mix the cottage cheese, egg yolk, sugar, cornstarch, lemon zest, juice and cream.
  • Pour the mixture over the pre-baked cake.
  • Beat the remaining egg white until stiff, which you carefully apply as the last layer on the cake and cover with plums.
  • Place the mold in the oven and bake for another 40-45 minutes – you need to watch the cheesecake so that the snow on the surface does not burn.

Cheesecake with rhubarb

You will need:


  • 250 grams of plain flour

  • 150 grams of coarse flour
  • 100 grams of butter
  • 100 grams of granulated sugar

Preparation process:

  • Peel the rhubarb and cut into pieces – about 1 centimeter.
  • Sauté the rhubarb pieces in butter for 5 minutes.

  • Bake for about 35-40 minutes at 180 degrees.

Gluten-free cheesecake with almonds

You will need:

  • 250 grams of orange puree
  • 200 grams of soft cottage cheese
  • 50 grams of fine rice flour
  • 250 grams of almond flour

Preparation process:

  • First, prepare the orange puree.
  • Put two washed oranges in cold water and stew them for one hour.

  • Adjust the edges with a fork and pierce the dough several times with a fork – this will prevent it from puffing up.
  • Bake in a preheated oven at 150 degrees for about half an hour.

You will need:

  • 1 ¼ cup sugar
  • ½ cup of oil
  • 200 grams of soft cottage cheese
