Method

  1. Wash, peel and grate the apple

What will we need

For the dough

  1. 3 egg whites
  2. 3 egg yolks
  3. 2 spoons of powdered sugar
  4. 230 g of fat or semi-fat cottage cheese
  5. 50 g plain flour
  6. 1 teaspoon of vanilla extract

For the sauce

  1. 250 g of raspberries
  2. 2 spoons of sugar

Method

  1. Beat the cottage cheese itself in a bowl
  2. Mix sugar and egg yolks in a separate bowl
  3. Beat the mixture until fluffy
  4. Gradually add cottage cheese, plain flour, vanilla
  5. Mix everything together until a liquid dough is formed
  6. Beat the egg whites in a separate bowl

For the dough

  8. Juice of ½ lemon
  9. 150 g blueberries (fresh)
  10. 2 tablespoons of melted butter

For lemon curd

  1. Juice of 2 lemons
  2. 2 eggs
  3. 1 egg yolk
  4. 125 g of sugar
  5. 50 g cold butter (cut into cubes)
  6. 1 tablespoon of heavy cream
  7. 1 teaspoon of vanilla extract
  8. Pinch of salt

Method

  1. Mix flour, sugar, baking powder, baking soda and salt in a large bowl
  2. Then add eggs, buttermilk, butter and lemon juice
  3. Mix until the dough comes together and has a smooth texture
  4. Heat a pan with butter on the stove
  5. Pour the pancake batter onto the pan and throw a few blueberries on top
  6. Bake the fritters until golden on both sides
  7. Heat the lemon juice in a small saucepan over medium heat
  8. Beat the eggs in a small bowl and add the sugar
  9. Slowly stir hot lemon juice into the egg-sugar mixture
  10. Then we return it to the pot on the stove and heat the mixture again

  7. 6-8 soup spoons of oil for frying

Method

  1. Break the hard cheese into small pieces in a large bowl
  2. Add 2 eggs and mix
  3. Mix in 125 g of flour, sugar and salt
  4. If you use raisins in the recipe, add them
  5. Mix everything until smooth
  6. The batter must be thicker, not like a classic pancake batter
  7. We form small patties from the dough, which we coat in the remaining flour (75 g)
  8. Heat 4 tablespoons of oil in a large pan
  9. Carefully place the cheesecakes in the pan
  10. Bake for 4-5 minutes on each side until golden

For the dough

  3. 220 ml of milk
  4. 250 g plain flour

  6. Pinch of salt

For apple topping

  1. 750 g of apples
  2. 1 tablespoon of lemon juice
  3. 2 tablespoons of granulated sugar
  4. 1 teaspoon of ground cinnamon
  5. 1 teaspoon of nutmeg
  6. Pinch of salt
  7. 1 teaspoon of vanilla extract
  8. 100 ml of water

Method

  1. In a large bowl, mix together all the ingredients for the dough
  2. Put the dough aside and let it rest
  3. Melt the butter in a pan
  4. Heat the hotplate with the pan to a medium temperature and then fry the fritters on both sides
  5. For the applesauce, peel the apples and remove the cores
  6. Cut the apples into medium-sized pieces
  7. Drizzle them with lemon juice
  8. Mix water, spices, salt, honey and apples in a pot
  9. Bring the mixture to a boil
  10. As soon as the mixture starts to boil, cover the pot with a lid and continue cooking on medium heat for about 10 minutes
  11. When the sauce is cooked, we take it off the stove and mix it with a hand blender, according to our preferences
