What will we need

  1. 250 g of fatty cottage cheese in a tub
  2. 2 tablespoons of cream
  3. 2 eggs
  4. 1 large apple
  5. Juice of half a lemon
  6. 1 cup plain flour
  7. 1 cup of whole wheat flour
  8. 2 teaspoons of baking powder
  9. 1 teaspoon of baking soda
  10. 4 tablespoons of sugar
  11. 2 tablespoons of oil
  12. 2 tablespoons of melted butter for frying


  1. Wash, peel and grate the apple
  2. Mix sugar into the grated apple and add lemon juice
  3. Add cottage cheese, cream and oil to the mixture
  4. Mix everything together
  5. Next, add eggs to the mixture and mix again
  6. Next, mix all the dry ingredients in a bowl. That means plain and wholemeal flour, baking soda and baking powder
  7. Mix everything in a bowl
  8. Slowly add the dry ingredients to the wet ingredients
  9. Mix everything together into a smooth mixture
  10. When the dough is ready, melt the butter in a hot pan

There is strength in simplicity and that is exactly the case with this recipe. It only takes a few steps to create fluffy cottage cheese fritters, and it also takes a few steps to cook a delicious sauce that complements the whole meal beautifully.

What will we need

For the dough

  1. 3 egg whites
  2. 3 egg yolks
  3. 2 spoons of powdered sugar
  4. 230 g of fat or semi-fat cottage cheese
  5. 50 g plain flour
  6. 1 teaspoon of vanilla extract

For the sauce

  1. 250 g of raspberries
  2. 2 spoons of sugar


  1. Beat the cottage cheese itself in a bowl
  2. Mix sugar and egg yolks in a separate bowl
  3. Beat the mixture until fluffy
  4. Gradually add cottage cheese, plain flour, vanilla
  5. Mix everything together until a liquid dough is formed
  6. Beat the egg whites in a separate bowl
  7. We carefully mix it into the pancake batter
  8. Then fry the fritters on both sides in a heated pan with a little oil
  9. In a small pot, cook the sauce for the fritters
  10. Add raspberries and sugar to the pot
  11. Heat the mixture until the sugar dissolves and the raspberries start to soften

Attention lovers of intense lemon flavors, this is a recipe made just for you. The classic pancake dough, supplemented with the sour taste of lemon, will not leave you cold and you will cook this sauce all the time.

What will we need

For the dough

  1. 250 g plain flour
  2. egg
  3. 1 teaspoon of baking powder
  4. 1 teaspoon of baking soda
  5. ½ teaspoon of salt
  6. 1 tablespoon granulated sugar
  7. 125 ml buttermilk
  8. Juice of ½ lemon
  9. 150 g blueberries (fresh)
  10. 2 tablespoons of melted butter

For lemon curd

  1. Juice of 2 lemons
  2. 2 eggs
  3. 1 egg yolk
  4. 125 g of sugar
  5. 50 g cold butter (cut into cubes)
  6. 1 tablespoon of heavy cream
  7. 1 teaspoon of vanilla extract
  8. Pinch of salt


  1. Mix flour, sugar, baking powder, baking soda and salt in a large bowl
  2. Then add eggs, buttermilk, butter and lemon juice
  3. Mix until the dough comes together and has a smooth texture
  4. Heat a pan with butter on the stove
  5. Pour the pancake batter onto the pan and throw a few blueberries on top
  6. Bake the fritters until golden on both sides
  7. Heat the lemon juice in a small saucepan over medium heat
  8. Beat the eggs in a small bowl and add the sugar
  9. Slowly stir hot lemon juice into the egg-sugar mixture
  10. Then we return it to the pot on the stove and heat the mixture again
  11. The mixture should be heated to 80 degrees and thick enough to stick to a spoon
  12. When the sauce has the right thickness, remove it from the stove
  13. We throw cold butter into it
  14. Mix until the butter is incorporated
  15. Then mix in the cream, vanilla and salt
  16. Mix until everything is combined and then pour the soaked lemon curd into a bowl
  17. The lemon curd must be thoroughly cooled before serving

Classic Ukrainian sulphides

A recipe taken from Ukrainian culinary culture. The dough is denser and denser than our familiar cottage cheese fritters. Bites are a joy to bite into, especially when served warm with sour cream, sugar and maple syrup.

What will we need

  1. 500 g of hard cottage cheese
  2. 2 eggs
  3. 125 g + 75 g plain flour (separately)
  4. 25 g of sugar
  5. ½ teaspoon of salt
  6. Raisins (optional)
  7. 6-8 soup spoons of oil for frying


  1. Break the hard cheese into small pieces in a large bowl
  2. Add 2 eggs and mix
  3. Mix in 125 g of flour, sugar and salt
  4. If you use raisins in the recipe, add them
  5. Mix everything until smooth
  6. The batter must be thicker, not like a classic pancake batter
  7. We form small patties from the dough, which we coat in the remaining flour (75 g)
  8. Heat 4 tablespoons of oil in a large pan
  9. Carefully place the cheesecakes in the pan
  10. Bake for 4-5 minutes on each side until golden

Decorate the plate with icing sugar, drizzle with maple syrup, honey and whipped cream. Or try sulphurets in the traditional Russian way – with sour cream and popular forest fruits.

Cottage cheese pancakes with apples

This time, the apple is not inside the pancake batter, but drips like syrup over its surface. The topping, scented with cinnamon and nutmeg, is ideal for breakfast on a crisp autumn morning.

What will we need

For the dough

  1. 500 g of cottage cheese
  2. 4 eggs
  3. 220 ml of milk
  4. 250 g plain flour
  5. 2 tablespoons of honey or maple syrup
  6. Pinch of salt
  7. Butter or oil for frying

For apple topping

  1. 750 g of apples
  2. 1 tablespoon of lemon juice
  3. 2 tablespoons of granulated sugar
  4. 1 teaspoon of ground cinnamon
  5. 1 teaspoon of nutmeg
  6. Pinch of salt
  7. 1 teaspoon of vanilla extract
  8. 100 ml of water


  1. In a large bowl, mix together all the ingredients for the dough
  2. Put the dough aside and let it rest
  3. Melt the butter in a pan
  4. Heat the hotplate with the pan to a medium temperature and then fry the fritters on both sides
  5. For the applesauce, peel the apples and remove the cores
  6. Cut the apples into medium-sized pieces
  7. Drizzle them with lemon juice
  8. Mix water, spices, salt, honey and apples in a pot
  9. Bring the mixture to a boil
  10. As soon as the mixture starts to boil, cover the pot with a lid and continue cooking on medium heat for about 10 minutes
  11. When the sauce is cooked, we take it off the stove and mix it with a hand blender, according to our preferences
  12. Add vanilla to the sauce and mix
