Healthy cheesecake with blueberries

Are you in the mood for something healthy, sweet and good? The delicious combination of cottage cheese, yogurt, whipped cream and blueberries together with the delicate aroma of orange will win you over. If you like to enjoy desserts with lots of cream, you have found the right one.

Ingredients:

  • 2 eggs
  • 75 g of sugar
  • pinch of salt
  • 100 g semi-coarse flour
  • juice of half an orange
  • 1 teaspoon of baking powder
  • 400 g semi-fat cottage cheese
  • 200 g of white yogurt
  • 11 gelatin slices
  • 80 g of sugar
  • 1 organic orange
  • 230 g blueberries (even frozen)
  • 350 ml whipping cream

For decoration:

  • 200 g of fresh forest fruit
  • slices of orange peel
  • crushed cookies
  • mint leaves

Method:

  • Prepare the corpus by mixing eggs, 75 g of sugar, orange juice and salt.
  • Beat this mixture for about 7-8 minutes until fluffy.
  • Then add flour with baking powder and mix.
  • Pour the finished dough into a greased and floured cake pan.
  • Bake for about 20 minutes at 175°C.
  • If the body is ready, test it with a toothpick.
  • Let it cool down.
  • Make several holes in the dough with a toothpick, mix 1 tablespoon of sugar in ½ cup of water. Drizzle the body with this sugar solution.
  • Let the gelatin slices swell in cold water according to the instructions on the package.
  • Squeeze the juice from half an orange and grate its peel.
  • Mix cottage cheese, yogurt, sugar and grated zest in a bowl.
  • Divide the cream into 2 halves.
  • Whip the whipping cream.
  • Blend the blueberries to a smooth consistency and add them to one half of the cottage cheese filling.
  • Squeeze out 6 gelatin slices and mix them with a little orange juice and blueberry filling according to the instructions on the package. Stir until the mixture begins to thicken, then add another half of the whipped cream.
  • Then layer this filling on top of the body.
  • Also squeeze out the remaining 5 gelatin slices and mix with the other half of the curd filling. Then add the remaining half of the whipped cream and mix thoroughly.
  • Spread the finished filling on the first layer of blueberry filling.
  • Finally, decorate the dessert with orange peel, mint leaves and crushed cookies.
  • Chill in the fridge for at least 3 hours.

A cake with coffee or tea is simply a part of our lives. Can you imagine a weekend without a cupcake? Catastrophe. Prepare a quick, supple and above all very good cake with your favorite cottage cheese.

INGREDIENTS

  • 1 1/2 cups semi-coarse flour
  • 6 eggs
  • 1 bag of vanilla sugar
  • 1 baking powder
  • 1 soft cottage cheese in a tub
  • 1 cup powdered sugar
  • 1 cube of softened Hera
  • 1/4 teaspoon dried lemon peel

METHOD

  1. Let’s start by making stiff snow from the egg whites, which we will put aside for now.
  2. Put softened Hera, egg yolks and sugar in another bowl, beat thoroughly and add cottage cheese, baking powder, vanilla sugar and flour.
  3. Beat well and finally mix in the egg whites. We just carefully mix with the dough with a wooden spoon so that it remains fluffy.
  4. Prepare a cake mold, it can be silicone, which does not need to be cleaned or classic, which you clean and sprinkle with flour or breadcrumbs (depending on what you prefer to use).
  5. Pour the batter and place in the oven preheated to 180°C. Bake for 45-60 minutes, depending on the type of oven. The baked cake can be sugared or sprinkled with chocolate glaze, or neither, if you prefer less sweet pastries.

TIP: If you want, you can pour only 2/3 of the dough into the mold and add a little milk or 1 egg yolk and 2 spoons of cocoa to the last third, mix and pour into the mold with the rest of the dough, where you mix it lightly with a wooden spoon to create a marble.

Cottage cheese fruit dumplings

Fruit dumplings are perfection itself. Beautifully supple, delicate and amazingly tasty. They are mostly made from yeast dough, but they are also made from potato or cottage cheese dough.

The filling is up to you, after all, some people prefer apricots, others strawberries, and still others molasses. Try making strawberry cottage cheese dumplings.

INGREDIENTS

  • 250 g of cubed soft cottage cheese
  • 250 g semi-coarse flour
  • pinch of salt
  • 3 teaspoons of powdered sugar
  • whole strawberries

For decoration: grated cottage cheese, melted butter, powdered sugar.

METHOD

  1. Pour flour into a bowl, add cottage cheese, powdered sugar, salt and work everything into a smooth dough, which we turn out onto a rolling pin.
  2. We roll out a plate with a thickness of 4 mm and divide it into squares using a rolling pin. If you don’t like it, a knife will do (the squares must be bigger than the strawberries).
  3. We always put a strawberry on each square, wrap it, shape it into a round dumpling in the palm of our hands. This is how we process all the dough with strawberries and let the water boil.
  4. As soon as the water boils, we start dropping one dumpling after another, continuously mixing with a wooden spoon, which prevents the dumplings from sticking to the bottom.
  5. Cook for about 5 to 7 minutes, until they float to the surface. Take the finished dumplings out of the water, put them in a bowl and pierce them all with a fork to release steam.
  6. It’s a good idea to brush them with melted butter, so they don’t stick together. Before serving, just stack them on a plate, sprinkle with sugar, grated hard cottage cheese and drizzle with melted butter. If you like, you can also sprinkle them with cinnamon, cocoa or your favorite Grank.

Simple cheese slices

Busy times call for simple recipes that we can pull out of our sleeves whenever we are short on time. These cheese slices are really quick and very tasty.

INGREDIENTS

  • 450 g semi-coarse flour
  • 1 bag of baking powder
  • 200 g of granulated sugar
  • 750 g of soft cottage cheese (in a tub)
  • 3 eggs
  • Juice from 1 chemically untreated lemon
  • 2 bags of vanilla sugar
  • 5 dkg of dried cranberries
  • 5 dkg raisins
  • 200 g of butter
  • pinch of salt
  • 2 – 3 spoons of milk

METHOD

  1. Prepare a bowl, pour flour, granulated sugar, salt, baking powder into it and mix. We line the baking sheet with baking paper and pour half of the loose mixture into it, which we thoroughly spread over the entire surface of the sheet. Put the tray aside for now and preheat the oven to 190°C.
  2. In another bowl, mix cottage cheese, eggs, lemon juice, vanilla sugar, cranberries, raisins and milk. Put the resulting mixture on a baking sheet and spread it with a spoon or pastry spatula in the same way as before with the dry ingredients.
  3. When we are done, we cover the curd mixture with the rest of the loose ingredients, spread again and smooth.
  4. Cut the softened butter into thin slices and gradually place them next to each other on the entire surface of the dough. Then put the tray in the preheated oven and bake for about 45 to 50 minutes. Properly baked slices have a golden surface.
  5. Let the baked slices cool first and only then cut them into individual parts. We can add sugar or put a scoop of vanilla or chocolate ice cream on the slice.

Cheesecake in a mug

Summer is the source of exotic fruit. It reminds us of the sea, the beach and warmth. This cottage cheese dessert can create this atmosphere in you even on dry days. Exoticism oozes from him, what do you think?

Ingredients:

  • 3 eggs
  • 2 tablespoons of warm water
  • ¾ cup of sugar
  • ⅔ cup semi-coarse flour
  • ¼ cup cornstarch
  • 1 teaspoon of baking powder

For the filling:

  • 10 slices of gelatin
  • ⅔ cup sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of tropical fruit juice
  • 2 cups (500 ml) whipping cream

For the frosting :

  • 2 packages of cake jelly (20 g)
  • 2 spoons of sugar
  • 1 and ½ cups of tropical fruit juice
  • ½ cup of water

Method:

  • Separate the yolks from the whites. Beat the egg whites together with warm water and when they start to stiffen, beat in the sugar a spoon at a time.
  • Once the egg whites are stiff, carefully whisk in the yolks as well.
  • Separately, mix the dry ingredients ie flour, cornstarch and baking powder.
  • Now mix them into the egg mixture.
  • Pour the finished dough into a cake mold with a diameter of approximately 26 cm, greased with butter and sprinkled with flour.
  • Bake the body at 180 °C for about 25 minutes.

Preparation of the filling:

  • Meanwhile, prepare the filling.
  • Soak the jelly slices in cold water to swell them (according to the instructions on the package).
  • Beat the cottage cheese, sugar, vanilla extract and juice.
  • Squeeze the excess water from the swollen gelatin. Heat it slowly, it will dissolve after a while, but it must not start boiling.
  • Remove the gelatin from the heat and stir in the curd mixture spoon by spoonful.

Final decoration:

  • Cut the cooled carcass in half.
  • Apply the already prepared filling to the bottom layer and cover with the second part of the body.
  • You will need the instructions on the manufacturer’s package for the jelly frosting.
  • In theory, the gelatin should be mixed with 2 tablespoons of sugar and the water and juice slowly added and brought to a boil, stirring constantly.
  • Pour the finished jelly on top of the cake.
  • Let the pudding cool in the fridge for 4-5 hours.

Chocolate pudding with cottage cheese and coffee

  • In a large bowl, mix the sugar, flour, sifted cocoa powder, baking powder, baking soda and salt.
  • Add these dry ingredients, cottage cheese and egg to the cooled butter and coffee mixture.
  • Mix everything thoroughly.
  • Grease the cake pan with butter and sprinkle with flour.
  • Pour the dough into the prepared mold and bake at 180 °C for 25-30 minutes
  • Meanwhile, grab the filling.
  • Beat softened butter with sifted sugar.
  • Then add the whipped cream and 180 g of melted dark chocolate (cooled).
  • Mix everything thoroughly.
  • After baking and cooling, cut the body into 2 parts.
  • Let the chocolate filling harden a little and divide it into 2 portions.
  • Apply the first quarter to the first layer of the corpus and cover it with the second part.
  • Spread the second layer with the second quarter of the filling and spread the rest over the whole pudding.
  • Put it in the freezer for 20 minutes.
  • After cooling, you can decorate with 200 g of melted dark cooking chocolate and sprinkle with white chocolate shavings.
  • Leave to cool and you can serve.

Apple cottage cheese pudding with crumble

  • Mix the mixture thoroughly and apply to the bottom of the cake pan.
  • Press it to the bottom with your hand.
  • Bake in a preheated oven at 180°C for about 10 minutes.
  • Meanwhile, prepare the filling. Beat the cottage cheese together with the cream cheese into a fluffy foam.
  • Then gradually beat in the sugar, flour, vanilla and salt.
  • Mix and add the egg and egg yolk (one at a time).
  • Add the whipped cream and mix thoroughly.
  • Prepare a crumb from crushed biscuits, flour, sugar and butter.
  • Mix everything together and it’s done.
  • Peel the apples and cut them into slices of your choice, layer them on top of the baked body.
  • Brush the edges of the mold with butter and pour the cream over the apples.
  • Then crumble the cream.
  • Bake in the oven like this for another 40-50 minutes (as soon as the crumb starts to turn golden).
  • Then leave the dough in the oven for 2 hours with the door ajar (put a wooden spoon between them, for example).

  • 75 g of butter
  • 300 g of sugar

  • 1 lemon
  • 4 eggs
  • 1 tablespoon of water
  • 225 g semi-coarse flour
  • ¾ teaspoon of baking powder
  • 25 g of cornstarch
  • 2 tablespoons of cocoa powder
  • 1 tablespoon of strawberry jam
  • 10 slices of gelatin
  • 650 g of whipping cream
  • 2 spoons of egg cognac
  • 2 tablespoons of lemon juice
  • 500 g of cottage cheese
  • ½ teaspoon of red food coloring
  • 4 tablespoons of grated chocolate

Method:

  • Prepare the corpus by mixing butter and 50 g of sugar, ½ spoon of vanilla sugar, zest of ½ lemon. Add the yolk of one egg, keep the white aside.
  • Add cold water, 150g flour and ½ tsp baking powder to the butter and sugar mixture.
  • Mix everything thoroughly and form a loaf.
  • Wrap it in cling film and put it in the fridge to cool for 30 minutes.
  • Preheat the oven to 175°C.
  • Mix the rest of the eggs together with one egg white for about 5 minutes to a creamy consistency.
  • Add 100 g of sugar in parts and ½ spoon of vanilla sugar and mix.
  • Mix 75 g of flour with cornstarch and 1 tablespoon of cocoa, mix and add to the eggs.
  • Fill a greased and floured cake tin with the finished dough.
  • Bake for about 20-25 minutes.
  • While the body is baking, roll out the cooled dough on a floured roll.
  • The batter should fit into a 26 cm cake pan.
  • Pierce it with a fork before baking, and after baking the first body, bake it at 200°C.
  • Bake for about 15 minutes.
  • Cut the first body into 2 horizontal halves.

  • Soak 8 slices of gelatin in cold water.
  • Mix 250 g of strawberries, 100 g of sugar and 2 tablespoons of lemon juice with a stick blender.
  • Add cottage cheese to the blended mixture and stir.
  • Squeeze out the swollen gelatin and heat it in a pot together with a few spoonfuls of the curd mixture to dissolve it.
  • Add it to the rest of the curd mixture and mix thoroughly.
  • Whip 250 g of whipping cream and add to the curd mixture along with ½ spoon of red food coloring.
  • Spread this filling over the whole pastry and put it in the fridge to chill for at least 3 hours.
  • After cooling, you can decorate with the remaining whipped cream, strawberries and chocolate shavings.
