  • Salt

A slightly spicy, but absolutely fantastic curd spread dyed a beautiful pink color with beetroot.

What will we need

  • 2 medium beets (cleaned and sliced)
  • 2 tablespoons of extra virgin olive oil
  • 45 grams of walnuts
  • 1 very large garlic clove (chopped)
  • 3 grams of salt
  • 250 g of cottage cheese
  • 2 tablespoons of lemon juice
  • 2 teaspoons of chopped dill
  • 1½ teaspoons horseradish

Method

  • To bake the beets, heat the oven to 180 degrees.
  • Place the beetroot in a small baking dish and drizzle with olive oil.
  • Add 3 tablespoons of water to the bottom of the bowl and cover tightly with foil.
  • Bake until tender, about 1 to 1½ hours, turning the beets after 45 minutes.
  • Let it cool, then peel it.
  • Using a food processor, grind the walnuts, garlic and salt.
  • Add the peeled beetroot, oil, cottage cheese, lemon juice, dill and horseradish and mash until the spread is smooth.
