Chocolate topping

What will we need
- 2 cooking chocolates
- 50 g of solidified fat
Method
- Fill a larger pot with water and let it boil
- Place a smaller pot on top of it so that the bottom is at least partially submerged in water
- Put the chocolate with a little solidified fat into a small pot
- Stir until the chocolate melts and then pour over the prepared cake

What will we need
- 300 g of powdered sugar
- 2 tablespoons of lemon juice
- 2 tablespoons of hot water
Method
- Mix water with lemon juice
- Sieve the icing sugar through a sieve
- Gradually add sugar to the bowl with water and juice
- Beat with a whisk until the frosting thickens

Frosting for gingerbread cookies
What would Christmas be without the smell of homemade gingerbread, but how to decorate it? It won’t work without a thick and firm frosting for decorating the gingerbread.
What will we need
- 2 large egg whites at room temperature
- 250 g of powdered sugar
- ½ teaspoon of guar gum
Method
- In a bowl, whisk the egg whites until foamy, then add the guar gum.
- Continue mixing for 30 seconds.
- Add powdered sugar a little at a time and mix well.
- Once the icing sugar is mixed in, turn the mixer on high and continue beating until the frosting thickens and the frosting holds its shape (about 3-5 minutes).

Egg yolk topping

What will we need
- 60 g butter, softened
- Pinch of salt
- 480 g of confectioners’ sugar
- 2 egg yolks
- 1 teaspoon of vanilla extract
- 2 tablespoons of milk
Method
- Beat the butter until soft.
- Gradually add the salt and part of the sugar, mixing after each addition.
- Then add the egg yolks and vanilla; mix well.
- Add the remaining sugar, alternating with the milk, until you reach the consistency you want.

Caramel frosting
There are few things better than homemade caramel frosting.
What will we need
- 40 g of brown sugar
- 1 tablespoon plain flour
- 300 g of white sugar
- 120 ml of milk
- 90 g of butter
- 1 teaspoon of vanilla extract
Method
- Pour 40g of brown sugar into a saucepan and heat over medium heat, stirring constantly, for 3 minutes, or until the sugar has dissolved and the syrup is a light golden brown.
- Remove from heat.
- Mix together 1 tablespoon of flour and 300g of sugar in a large saucepan.
- Add the milk and bring to a boil over medium-high heat, stirring constantly.
- Gradually pour about one quarter of the hot milk mixture into the caramelized sugar, stirring constantly.
- Gradually stir in remaining hot milk mixture until smooth. (Mixture will clump, but keep mixing until smooth.)
- Cover and cook on low heat for 2 minutes.
- Increase the heat, cover and cook without stirring, about 10 minutes.
- Add butter, stir until combined.
- Remove from heat and let stand without stirring for about 1 hour.
- Pour into the bowl of a high-powered electric stand mixer.
- Add vanilla and beat on medium speed until desired consistency, about 20 minutes.

Rum topping with coconut
Bake a fluffy gingerbread and top it with this perfect rum and coconut topping.
What will we need
- 150 g of butter
- 150 g of granulated sugar
- 4 spoons of milk
- 4 tablespoons of rum
- 2 heaping spoons of cocoa
- 150 g of coconut flour
Method
- Heat the butter
- Add sugar, milk with rum, cocoa and coconut flour to it
- We mix a creamy mass, which can be diluted with milk or thickened with a little coconut as needed
