Turkey medallions in batter

Beer is one of the most common ingredients that are generally added to batters. But the secret of this recipe lies in adding a small amount of baking powder, thanks to which the dough will be beautifully fluffy.

Ingredients:

  • 500 g of turkey breast
  • 3/4 cup of beer
  • 1/2 cup flour
  • 2 eggs
  • 1 teaspoon of baking powder
  • oil
  • salt pepper

Method:

  1. In a bowl, beat the eggs with a fork and then gradually add beer, flour, baking powder, salt and pepper to them.
  2. Mix everything thoroughly to form a dough.
  3. Cover the bowl with the dough for a moment with a towel and let it rest.
  4. In the meantime, cut the turkey meat into medallions and then marinate them in the batter for approximately 20 minutes.
  5. Heat a small amount of oil in a pan and carefully place the individual pieces of meat wrapped in batter into it.
  6. Fry the medallions on both sides for a few minutes until golden.
  7. After frying, place the medallions on a paper towel for a while to absorb the excess oil.

You can serve turkey medallions in beer batter, for example, with fries and barbacue or tartar sauce.

Turkey medallions on cream with mushrooms

Do you like sauces? In that case, definitely try the combination of turkey meat and delicious cream sauce, made special by mushrooms and artichoke. You will love this recipe!

Ingredients

  • 800 g of turkey meat
  • 1 cup whipping cream
  • 2 cups of broth
  • 1/2 cup flour
  • 250 g of wild mushrooms or champignons
  • 150 g sterilized artichokes
  • 2 shallots
  • 3 cloves of garlic
  • 3 tablespoons of butter
  • 2 tablespoons of olive oil
  • thyme
  • salt pepper
  • parsley for garnish

Method

  1. Mix flour, salt and pepper in a bowl and then coat the turkey slices in the mixture.
  2. Heat two tablespoons of butter and one tablespoon of olive oil in a deep pan.
  3. Lightly sear the medallions on both sides in the pan, then remove and set aside.
  4. Add the remaining butter and oil and the finely chopped shallot to the pan.
  5. When the shallots become translucent, add the sliced mushrooms and sauté them for 3-4 minutes.
  6. Add crushed garlic, thyme to the mushrooms and simmer for another 2-3 minutes.
  7. Add the turkey medallions and sterilized artichoke back to the pan.
  8. Add the stock, bring to a boil, cover with a lid and cook for approximately 5 minutes until the meat is completely tender.
  9. Add the cream and stir until the sauce thickens, seasoning if necessary.
  10. Serve sprinkled with chopped fresh parsley.

Serve this dish with mashed potatoes or rice.

Turkey pieces for curry with rice

One of the most popular turkey dishes, served mainly with basmati rice.

Ingredients:

  • 4 turkey slices, cut into smaller pieces
  • 200 ml of cooking cream
  • 100 ml of water
  • 20 g of flour
  • 1/2 onion
  • 1 clove of garlic
  • 2 Tbsp curry
  • 2 tablespoons of olive oil
  • salt pepper
  • fresh parsley or coriander for decoration

Method:

  1. In a bag, mix the flour with the curry spices.
  2. Then add the turkey cut into pieces to the bag.
  3. Shake the bag until all the meat is thoroughly coated.
  4. Fry a finely chopped onion and a pressed clove of garlic in a pan with oil.
  5. Add the curry-coated turkey medallions and any remaining mixture from the bag to the pan.
  6. Lightly fry, add water, salt and pepper.
  7. Mix everything thoroughly and cook for approximately 10 minutes, stirring occasionally.
  8. Add cream to the mixture and cook for another 5 minutes.

Serve the curry turkey medallions with rice sprinkled with fresh parsley or coriander.

Turkey medallions with honey dressing

This recipe combines honey with other ingredients such as mustard and lemon juice in an original way. Therefore, you do not have to worry about the resulting taste of the dish being too sweet.

Ingredients:

  • 6 turkey medallions
  • 1/2 cup honey
  • 1/2 cup mustard
  • 2 cloves of garlic
  • 1 tablespoon of soy sauce
  • juice of half a lemon
  • oil
  • sweet pepper
  • salt pepper
  • fresh parsley

Method:

  1. Season the turkey medallions on both sides with crushed garlic, sweet paprika, salt and pepper.
  2. Then put the meat in a pan with heated oil and lightly fry it on both sides.
  3. Cover the pan with a lid and cook gently, turning occasionally.
  4. Meanwhile, mix the honey, mustard, soy sauce and lemon juice and heat the ingredients in a small pan over a low heat.
  5. Boil the mixture for 2-3 minutes, stirring constantly, at the end add finely chopped parsley.
  6. Then pour this honey sauce over the meat and let it warm together for a while.

Baked turkey cutlets with bacon

A sauce made from broth, white wine, herbs and yogurt gives this dish an irresistible taste and aroma. If you want to achieve an even more pronounced taste, replace the yogurt with sour cream.

Ingredients:

  • 400 g of turkey breast
  • 120 g of English bacon
  • 120 g of mozzarella
  • 1/3 cup white wine
  • 1/3 cup broth
  • 1/3 cup Greek yogurt or sour cream
  • oregano
  • marjoram
  • 1 PL of solamyl
  • 1 tbsp olive oil
  • salt pepper

Method:

  1. Lightly fry the turkey cut into small slices in a pan with olive oil on both sides.
  2. Then pour the broth, wine, herbs into the pan and place a slice of bacon on each medallion.
  3. Simmer for approximately 10 minutes.
  4. In the meantime, preheat the oven to 100°C.
  5. Transfer the turkey medallions with bacon to a baking dish, decorate the top with a piece of mozzarella.
  6. Place in a preheated oven for a few minutes.
  7. Add solamyl and yogurt or sour cream to the rest of the sauce in the pan.
  8. Stir until a thick sauce forms.

Serve the baked turkey slices with bacon with mashed potatoes or rice, topped with a mild sauce.

Why should we consume turkey regularly?

Turkey is getting to the Czech tables more and more often, mostly not whole, this method of preparation is still more typical for the Anglo-Saxon nations as part of the Christmas holidays or Thanksgiving Day. We most often consume turkey breast, in the form of various slices and medallions.

Compared to chicken, turkey is more flavorful, but just as tender and tender. At the same time, it is full of proteins, vitamins and minerals. On the contrary, it contains only a minimum of fats. By the way, did you know that turkey meat is as rich in protein as tuna or salmon? All the more reason to include it in the menu!
