Simple cucumber salad

A very simple recipe with only a few ingredients. Their flavors then combine perfectly and make this salad a great refreshing treat.

Ingredients:

  • 2 salad cucumbers
  • 1 red onion
  • 1 cup white vinegar
  • 1/2 cup of water
  • 1/2 cup granulated sugar
  • 2 tablespoons of fresh dill
  • 1 teaspoon of salt

Method:

  1. Wash the cucumbers and cut them into thin slices.
  2. Peel the onion and also cut it into thin slices.
  3. Salt the cucumber slices in a large bowl and let them sweat for an hour.
  4. Then drain the liquid and mix the cucumbers with onion slices.
  5. Combine the sugar, vinegar, and water in a small saucepan and stir until dissolved and the liquid turns clear, about 3-5 minutes.
  6. Pour the dressing over the cucumbers and onions.
  7. Stir in the finely chopped dill.
  8. Cover the bowl with cling film and refrigerate for an hour.

Greek Cucumber Tzatziki Salad

A traditional Greek delicacy that combines the taste of cucumber, Greek yogurt and herbs. Prepare it at home too!

Ingredients:

  • 2 cups coarsely grated cucumber
  • 1 and 1/2 cups white Greek yogurt
  • 2 Tbsp extra virgin olive oil
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped fresh dill
  • 1 Tbsp fresh lemon juice
  • 1 pressed clove of garlic
  • salt

Method:

  1. Squeeze the grated cucumber between your palms or using a potato masher to remove excess moisture.
  2. Transfer the squeezed cucumber to a bowl.
  3. Add yogurt, olive oil, fresh herbs, lemon juice, crushed garlic and salt.
  4. Mix everything thoroughly.
  5. Let the mixture rest for 5 minutes to allow the flavors to meld.
  6. Taste and add more chopped fresh herbs, lemon juice or salt if needed.
  7. Serve the tzatziki immediately or let it cool in the refrigerator.

Summer salad of cucumbers, tomatoes, chickpeas and herbs

Ingredients:

  • 3 salad cucumbers
  • 300 g cherry tomatoes
  • 1 cup canned chickpeas
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh mint
  • 2 Tbsp fresh lemon juice
  • 2 tablespoons of olive oil
  • salt

Method:

  1. Wash the cucumber and tomatoes, cut the cucumber into pieces, split the cherry tomatoes.
  2. Place in a large bowl and add the rinsed chickpeas, chopped red onion, crumbled feta cheese, half the dill, parsley and mint.
  3. Mix everything and add lemon juice, olive oil and salt.
  4. Mix again.
  5. Transfer the salad to a serving plate or salad bowl, sprinkle with the remaining feta and herbs.

Cucumber salad with cream and dill

A very simple and quick salad that you will appreciate as a great side dish at a garden party.

Ingredients:

  • 3 cups peeled cucumbers, thinly sliced
  • 1 cup thinly sliced red onion
  • 1/2 cup sour cream
  • 1 tbsp white vinegar
  • 1 tbsp chopped fresh dill
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon dried minced garlic or a small amount of fresh crushed garlic

Method:

  1. In a medium bowl, combine sour cream, vinegar, dill, sugar, salt, and garlic.
  2. Add the cucumbers and red onion and stir.
  3. Cover the bowl with cling film and leave in the fridge for at least 2 hours.

  • 6-7 radishes
  • 1/4 red onion
  • salt

Dressing

  • 2-3 tablespoons of olive oil
  • 1-2 tablespoons of white vinegar
  • 1 Tbsp fresh lemon juice

Mediterranean cucumber-tomato salad

Ingredients:

  • 1 salad cucumber
  • 2 tomatoes
  • 1 small white onion
  • 1/2 cup white vinegar
  • 1/4 cup chopped fresh mint
  • 1 cup chopped fresh parsley

Method:

  1. Peel the onion and cut the onion into cubes.

Ingredients

  • 4 salad cucumbers
  • 2 cloves of garlic
  • 1-2 chili peppers
  • 1 teaspoon of sesame oil
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of salt

Method

  1. Wash the cucumbers, cut off the ends of the cucumbers.
  2. Cut the rest of the cucumbers into sticks approximately 4 centimeters long.
  3. Press the garlic, finely chop the chili peppers and add them together with the other ingredients to the bowl with the cucumber slices.
  4. Stir to coat the cucumbers in the pepper and garlic.

Why include salad cucumber in your diet?

Salad cucumber is one of the typical Czech vegetables that many of us grow in a greenhouse in the garden. Due to their unique composition, they are also a very healthy food. It contains many different health-promoting substances. It mainly stands out for its high content of group B vitamins and vitamin A, but it also contains vitamin C, PP, E and folic acid. Of the minerals, it mainly contains magnesium, iron, calcium, sodium and iodine.

Another valuable substance that is found in large quantities in cucumbers is water. More than 90% of cucumber is water, the other 5% is fiber. This is also the reason why cucumber contains only very few calories, only 15 kcal per 100 grams. Because of this, cucumbers are very often considered as part of various diets.

Salad cucumbers can be included in our menu in many different ways. In addition to recipes for cucumber salad, you can also prepare very tasty soups, spreads, smoothies or lemonades from them.
