What will we need
- 500 g of curly hair
- A spoonful of Sriracha sauce
- 2 spring onions
- 4 eggs
- A spoonful of soy sauce
- A spoonful of roasted sesame oil
- ½ teaspoon of salt
- 200 g plain flour
- Yolk
- 200 ml of vegetable oil
- 2 tablespoons of lemon juice
- ½ spoon of mustard
- Salt
- Tablespoon of vegetable oil (for frying)
Method
- Using a grater, grate the curly hair into thin strips
- Cut the spring onion into small pieces
- Whisk eggs, soy sauce, sesame oil and salt in a bowl
- Stir the flour into the egg mixture, then stir in the chopped cabbage and spring onion
- Beat the egg yolk on top of the creamy sriracha mayonnaise and, stirring constantly, pour in the vegetable oil and mix until a smooth mixture is formed
- Add lemon juice, mustard, salt and sriracha to the bowl and mix to combine the ingredients
- Add a little vegetable oil to the pan
- Using a ladle, pour the curly mixture into the pan to form patties
- Fry them until crispy on both sides
- Then transfer the patties to a paper towel to absorb excess oil
- Serve the cabbage fritters with sriracha mayonnaise.

Steamed curlew with salmon
Vegetables don’t have to be boring! Try this recipe for Sauteed Cabbage with Bacon as a healthy and tasty side dish for salmon.
What will we need
- 15 g of butter
- 2 small red onions (sliced)
- 4 slices bacon (thinly sliced)
- Olive oil
- 4 x 170 g salmon steaks
- Salt
- Ground black pepper
- Small curlew (coarsely chopped)
For the dressing
- 2 tablespoons of mustard
- Juice of ½ lemon
- A teaspoon of chopped parsley
- A spoonful of white wine vinegar
Method
- Heat the butter in a large pan, add the onion and lightly fry for five minutes
- Brush each side of the salmon with olive oil
- Heat a non-stick pan, add the salmon after it has warmed up and let it fry in the pan
- We turn it halfway through baking
- Add the chopped cabbage to the bacon and onion and mix
- Cover the pan with a lid and continue cooking for 10 minutes, stirring occasionally
- This will ensure that the cabbage absorbs the butter and retains moisture
- Mix all the ingredients for the dressing to combine thoroughly
- Season the kale salad and then serve it in a large bowl and place the salmon on top, which is drizzled with the dressing.

Homemade vegetable soup made from curlew
A soup that will warm you up not only in cold winter weather, but any time you feel any ailment! It is boiled once, twice and that is its power!
What will we need
- Onion
- Carrot
- Celery
- 2 cloves of garlic
- A spoonful of olive oil
- 550 g potatoes (peeled and cut into small cubes)
- 1000 ml of chicken or vegetable stock
- 8 slices of bacon
- 200 g of curly hair
Method
- Cut the onion, carrot, celery and garlic into small pieces
- Heat the oil in a large pot and add the vegetables and potatoes
- Season everything well, then reduce the heat and cover the pot
- Cook gently for about 5 minutes until the vegetables begin to soften
- Then add the broth, increase the temperature and bring the mixture to a boil in the pot
- Cook for another 5 minutes until all the vegetables are soft
- While the soup is cooking, fry the bacon until crispy and then cut it into strips
- Let’s cut the curls
- Using a hand blender, blend the soup until smooth and add the cabbage
- We continue cooking for a few minutes until the cabbage is soft, then season to taste and serve the soup with curly bacon sprinkled with bacon

Salad with kale, apples and nuts
There is strength in simplicity, and that’s exactly what this light salad of cabbage, apples and roasted nuts is.
What will we need
- 80 ml of olive oil
- 80 ml of apple cider vinegar
- 3 spoons of honey
- 2 pinches of salt
- Freshly ground black pepper
- 65 g of walnuts
- Savoy cabbage
- 2 apples
- Pecorino Romano (or Parmesan)
Method
- For the dressing, mix olive oil, apple cider vinegar, honey, kosher salt and freshly ground black pepper
- Dry roast the walnuts in a pan, stirring frequently
- Fry them until they are lightly browned and fragrant
- Immediately remove them from the heat and put them in a bowl
- Cut the cabbage into thin slices
- Core the apples and chop them
- Grate Parmesan or Pecorino Romano
- To serve, we start with the sliced curlew, then add the apples, walnuts, cheese and dressing

Traditional stuffed cabbage rolls with minced meat
What will we need
- A big curler
- 60 g bread (or toasted bread)
- 400 g minced meat (a mixture of beef and pork)
- A small onion
- 2 teaspoons of mustard
- A pinch of ground sweet pepper
- 2 tablespoons of vegetable oil
- 500 ml of beef or chicken stock
- 250 ml of milk
- 2 tablespoons of cornstarch
- Salt
- Pepper
- Potatoes (as a side dish)
Method
- Bring a large pot of water to a boil
- In the meantime, remove the wilted outer leaves from the curling iron and carefully
- The recipe makes 8 rolls, but you will need 2-3 leaves per roll
- When the water is boiling, add a little salt and blanch the leaves for about 2-3 minutes until they wilt
- Drain them well
- Before filling, we dry them with a kitchen paper towel
- For the filling, soak the bread in a little warm water
- Cut the onion into very small pieces
- Put the minced meat, onion, mustard, sweet pepper, salt and pepper in a bowl and mix well
- Squeeze the excess water from the bread and add it to the meat mixture
- Mix everything together very well
- Place one large sheet of curling iron on the work surface
- If the leaves are too small or broken, we use 2 or 3 leaves
- Divide the filling into 8 portions
- Place a little filling in the center and below the leaf
- Fold the right and left sides over the filling and roll up the package
- We place the thread with the seam down on the plate
- We repeat the procedure until we have 8 filled rolls from the curling iron
- Heat the oil in a large pot for the oven
- Fry the rolls on all sides, they should be golden brown
- Pour the broth into the pot, cover it and bring it to a boil
- Reduce the heat to a minimum and cook the cabbage rolls in this way for about 25 minutes
- Meanwhile, cook the potatoes in salted water
- When the cabbage rolls are cooked, carefully remove them from the pot
- Place them on a plate and keep warm
- For the sauce, add milk to the liquid that was left after cooking the rolls
- We bring it to a boil
- Meanwhile, mix the cornstarch with a little water to form a paste
- While constantly whisking, slowly pour the starch into the pot
- Allow to bubble slightly and add a little nutmeg and season with salt and pepper

Can’t you imagine a Saturday night at the movies without something to munch on? Make this great curly kale recipe and crunch on some delicious healthy crisps!
What will we need
- 10 sheets of curling iron
- 100 g of cashews
- Juice of 1 lemon
- 2 cloves of garlic
- 2-3 tablespoons of dry yeast
- A spoonful of olive oil
- Salt
- Pepper
Method
- Preheat the oven to 180 degrees
- Line two large trays with baking paper
- Peel the leaves from the curling iron (they must be completely dry)
- Mix cashew nuts with lemon juice, garlic, yeast, oil and spices
- We mix everything until smooth
- Add the kale leaves to a large bowl
- Stir in the dressing until all the leaves are coated
- Spread the curly leaves on the prepared baking sheets
- Place in the oven and bake for 12-15 minutes
- Let the chips cool for a few minutes before serving

Vegetarian pasta with parmesan
This creamy pasta dish with crunchy almonds and two types of cheese is a great idea for a quick dinner that is ready in less than half an hour, which is sure to be appreciated during a busy work week.
What will we need
- 300 g of tagliatelle
- 200 g of curling iron (cut into thin slices)
- 40 g whole almonds (roasted and roughly chopped)
- 4 cloves of garlic (pressed)
- 25 g parsley (finely chopped)
- 2 tablespoons of olive oil
- 90 g of cream cheese
- Zest and juice of ½ lemon
- 50 g Parmigiano Reggiano (finely grated)
Method
- Cook the pasta according to the instructions on the package, for the last 3 minutes add chopped curly
- Take 50 ml of water from the pasta
- Drain everything together and pour into a pot
- Mix the almonds with half the garlic and half the parsley and set aside
- Meanwhile, heat the oil in a pan, add the remaining garlic and fry for 2 minutes until softened
- Mix the cream cheese, lemon zest and juice, half of the Parmesan cheese, pasta water, the rest of the parsley into the pot with the pasta and the parsley and season with salt and pepper
- Mix everything together and serve the pasta with curly hair sprinkled with the remaining cheese, nut mixture and a drop of olive oil

How to grow curly hair
Growing a curly plant is not as complicated as one might think. It is important to follow the correct procedure and then everything will go smoothly.
This type of plant is frost-resistant , so it doesn’t matter if it is planted even at low spring temperatures. Make sure the curly hair has time to mature before the summer heat.
We plant the seeds 4 weeks before the last frost, at the latest after the last frost.
In autumn, we plant the seeds at the end of July and we have until mid-September.
Regardless of when you plant, always choose a place where the sunlight goes and we plant the seedlings so that they are at least 30 – 45 centimeters apart.
Curly will do best in full sun with watering once a week .
The big problem is the pests it is susceptible to. The worst solution is to change the planting every year.
Curly can be harvested 70-110 days after planting , but it depends on the variety. Therefore, check the package from which you sow the seeds to know the approximate harvest time.
To harvest a curly plant, simply cut it at the stem close to the ground. Remove wilted and damaged leaves.
