The combination of sour currant and soft cottage cheese is an ideal combination for holidays and weekdays.
You will need:
On the corpus:
- 2 eggs
- ¼ cup sugar
- 60 g of flour
- pinch of salt
- 20 g cornstarch
Filling:
- 6 slices of gelatin
- 6 tablespoons of water
- half a kilo of cottage cheese
- ½ cup of sugar
- 1 teaspoon of vanilla paste
- 650 g of 30% cream
- 1 packet of whipping cream stiffener
- 1 spoon of sugar
Decoration:
- 750 g of fresh currants
- 1 packet of red or colorless jelly
- 3 spoons of sugar
- 10 dkg almonds – slices
Preparation process:
- Preheat the oven to 190°C. Line the baking form with baking paper, which you can also wipe with coconut oil to be sure.
- Beat egg whites and salt in a bowl until stiff peaks form. Gradually add sugar while mixing.
- In another bowl, prepare the egg yolks, which you beat thoroughly.
- Add the yolks to the whites very slowly, preferably using a kitchen spatula. Be careful not to “blow” the snow.
- Mix the flour with the cornstarch and gently fold into the mixture.
- Pour the prepared mixture into the baking dish and bake for about 20 minutes.
- After baking, allow the pie dough to cool slowly.
- Place the gelatin slices in a bowl along with the cold water.
- In another bowl, mix the cottage cheese with sugar and vanilla paste. It is best to beat the mixture with a mixer.
- In another bowl, prepare 600 g of cream, which you whip at low speed together with the cream thickener and sugar.
- Pour the remaining 50 g of cream into a small saucepan and heat. Add gelatin slices soaked in water and stir until dissolved. Remove from heat and add 1-2 tablespoons of curd mixture. Then add it all to the curd mixture. Mix slowly and thoroughly.
- Slowly stir in the whipped cream.
- Pour the curd layer over the pie dough and smooth it to the edges. Store overnight in the refrigerator.
- Wash the currants and let them dry. Remove the stalks from the currants and spread evenly on the cheese layer.
- Mix the gelatin with sugar and water and let it boil until the gelatin hardens.
- Pour the gelatin evenly over the currants.
- Leave to cool.
- After removing from the baking dish, sprinkle the edge of the cake with sliced almonds.
- Serve this dessert chilled.

Preparation process:
- Preheat the oven to 180°C.
- Grease a cake tin with butter and sprinkle with coarse flour.
- First, prepare the dough for the cake body: rub the whole egg with sugar until it changes color to light yellow. Knead the dough for at least 5 minutes.
- Using a whisk, slowly mix a spoonful of custard powder, flour and baking soda into the base of the dough.
- When the mixture is blended, add the lukewarm milk and oil.
- Pour the cake batter into the mold and bake for less than 15 minutes.
- In a clean bowl, beat the egg whites with a pinch of salt and sugar until stiff peaks form.
- Mix the snow with the currants very carefully.
- Remove the cake from the oven and spread the currant snow on it.

- Then cover them with baking paper and use beans or other legumes to weigh down so that the dough does not run out too much. Bake for a quarter of an hour.
- Prepare the crumb: mix all the ingredients well by hand until you have a crumbly mixture. Keep it ready for sprinkling later.
- Prepare the filling: mix sugar, flour and ground cinnamon. Add a teaspoon of lemon juice and mix again. Finally, pour in the washed and dried currants and mix briefly.
- Pour the currant mixture over the cooled cake base.

You will need:
- puff pastry
- ¼ cup softened butter
- 3 cups of currants
- ⅓ cup sugar
- 2 tablespoons of cornstarch
- ½ teaspoon of cinnamon
- a pinch of nutmeg
- juice of 1 orange
- finely grated peel from one orange
- 1 beaten egg
Preparation process:
- Roll out the puff pastry and divide into two halves.
