Salad on sandwiches with eggplant and mushrooms

Do you want to surprise your guests? Try making this eggplant and mushroom salad for them. You will create a masterpiece that will have everyone licking their lips!


  • 2 eggplants
  • 5 boiled eggs
  • 1 large onion
  • 1 spoon of sugar
  • 2 spoons of homemade mayonnaise
  • 2 tablespoons of vinegar
  • salt – to taste
  • sunflower oil
  • 5 mushrooms of any kind (champignons are excellent, for example)


  • Wash and dry the eggplant.
  • Do the same with the mushrooms.
  • Cut the eggplant and mushrooms into rounds 3-5 ml thick, and then into thicker noodles.
  • Transfer the eggplant to a deep bowl, sprinkle with salt and mix.
  • After 20 minutes, remove the juice that it releases.
  • Cut the onion into thin slices and put them in a separate bowl.
  • Add one tablespoon of sugar, one tablespoon of salt and add vinegar.
  • Pour one glass of boiling water, mix and let the water cool completely.
  • Rinse the eggplant with cold water and let it drain.
  • Pour a small amount of vegetable oil into the pan and heat.
  • Spread the mushrooms in the heated oil: not all at once, but in two or three batches.
  • Fry until soft, then place on a plate covered with paper towels.
  • Do the same with the eggplant.
  • Boil the eggs and cut them into slices.
  • In a large bowl, combine the cooled eggplant, mushrooms, eggs and pickled onions.
  • Add a little salt, homemade mayonnaise and mix everything.
  • You can serve!

Parisian salad

Paris salad with fresh bread is a good old retro delicacy that few people despise even today. The recipe is for 0.5 kg of salad. But the salad is so good that it disappears from your plates right away, so maybe make a little more of it right away.


  • 200 g of Paris salami
  • 90 g of sweet and sour cucumbers
  • 30 g of sterilized peas
  • 13 g onion
  • 150 g of mayonnaise
  • 5 g granulated sugar
  • 5 g of salt
  • 10 g of full-fat mustard
  • 2.5 g of vinegar (one teaspoon)
  • 4 g of Worcestershire sauce
  • ground black pepper (0.25=on the tip of a knife)


  1. Cut the salami and cucumbers into thin strips.
  2. Dice the onion as small as possible.
  3. So that it is not pungent and bitter, put it in a strainer and pour boiling water over it.
  4. Put the chopped ingredients and peas in a bowl.
  5. Add mayonnaise, spices and salt, vinegar, sugar, mustard, Worcester and mix well.
  6. Store the finished Parisian salad in the refrigerator.
  7. Let it rest for a few hours.
  8. Serve the Parisian salad with rolls or whole grain baguettes.

Fish salad with potatoes

Try our recipe for a delicious fish, potato and mayonnaise salad. It is easy to prepare and is great spread on pastries or you can use it on sandwiches.


  • 250 g of fish
  • 1 bay leaf
  • 200 g of potatoes
  • 100 g of sterilized vegetables
  • 1 onion
  • 200 g of mayonnaise
  • lemon juice, salt, vinegar, ground pepper to taste


  • Clean the fish and place it in hot, salted water.
  • Add vinegar, pepper and bay leaf.
  • Cook until soft and let cool.
  • Bone the cooled fish and cut it into cubes.
  • Peel the potatoes cooked in their skins and cut them into cubes.
  • Add to the fish and also add the chopped vegetables and mix everything.
  • Pour lemon juice, pepper, salt, add mayonnaise and mix.

Delicious potato salad

Who doesn’t love potato salad sandwiches! Try to prepare it according to our simple recipe and you will fall in love!


  • 1 kg of potatoes boiled in their skins
  • 1 can of corn
  • 250 g of frozen vegetables (peas and carrots)
  • 1 onion
  • 3 tablespoons of vinegar
  • 500 ml of water
  • 4 hard-boiled eggs
  • 5 pickles
  • 200 ml of sour cream
  • 200 ml of mayonnaise
  • a pinch of ground pepper and red pepper
  • salt


  • Put water in a pot, add pepper and ground red pepper.
  • Bring the water to a boil and add three tablespoons of vinegar and finely chopped onion.
  • Cook for about three minutes.
  • Leave to cool.
  • Dice the boiled potatoes and place in a bowl.
  • Pour a mixture of sour cream and mayonnaise on them.
  • Cook the frozen vegetables in boiling water and when they cool, add them to the potatoes.
  • Next, add corn, finely chopped eggs and pickles.
  • Mix everything together and finally season with vinegar and onion pickle.
  • Add salt to taste.

Eggplant salad

Eggplant salad can be served with bread, for example, for dinner. Or you can use it to make coated sandwiches, decorated stuffed eggs. The recipe is for about 0.5 kg of salad.


  • 175 g potatoes (boiled the day before)
  • 114 g of ham salami
  • 45 g of sterilized cucumbers
  • 10 g of peas sterilized without pickle
  • 16 g of celery root
  • 24 g of carrots
  • 10 g of full-fat mustard
  • 0.25 g of ground pepper (0.25=on the tip of a knife)
  • 3 teaspoons of vinegar 15 g
  • 2.5 g Worcester
  • 100 g of mayonnaise
  • 5 g of granulated sugar
  • 5 g of salt


  1. Cut potatoes, carrots, celery and cucumbers into smaller cubes.
  2. Cut the salami into thin strips.
  3. Put the chopped ingredients and peas in a bowl.
  4. Add mayonnaise, spices and salt, vinegar, sugar, mustard, worcester and mix well.
  5. Store the finished salad in the refrigerator.
  6. Let it rest for a few hours.
  7. Serve!
