Green bean and early potato salad

Swap your traditional potato salad with mayonnaise for this fresh and tasty dish. You will all enjoy it!

INGREDIENTS

  • 230 g fresh green beans, ends trimmed
  • 700 g of new potatoes
  • 3 tablespoons of balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove of garlic, chopped
  • 1 teaspoon of salt
  • 1/2 cup olive oil
  • 1 tablespoon chopped chives
  • 1/4 teaspoon black pepper

METHOD

  1. Fill a medium bowl with water and ice.
  2. Bring water to a boil in a large pot.
  3. Add the green beans and cook for 1-2 minutes, remove with a slotted spoon and place in a bowl of ice water to stop the cooking process.
  4. Once cool, drain in a colander.
  5. Add the potatoes to the same pot of boiling water.
  6. Cook them for 15-20 minutes or until soft.
  7. Drain them and let them cool for a few minutes.
  8. While the potatoes are cooling, mix the vinegar, mustard, garlic and salt in a bowl.
  9. Whisking constantly, slowly pour in the olive oil until the dressing thickens and emulsifies.
  10. Once the potatoes are cool enough, cut them in half lengthwise.
  11. Toss them all into the large bowl with the green beans.
  12. Add the dressing and toss to combine.
  13. Add chopped chives and black pepper, toss again and serve.

Green beans in cream

Enjoy this simple vegetarian dish made with green beans and a delicious sweet and sour cream sauce. Perfect for a light lunch or dinner!

INGREDIENTS

  • 450 g green beans, frozen
  • 1 small onion
  • 2 tablespoons of butter
  • 2 tablespoons plain flour
  • 1 cup of stock taken while blanching the beans
  • 1 cup whole milk
  • ⅓ cup whipping cream
  • 2 balls of allspice
  • 1 bay leaf
  • 2 tablespoons of apple cider vinegar
  • 1 spoon of granulated sugar
  • 1-2 teaspoons of salt

METHOD

  1. Thaw frozen beans at room temperature.
  2. Bring enough salted water to boil in a pot, about the same as for pasta.
  3. Carefully place the beans in the boiling water and cook for 3 minutes.
  4. Then take a cup of broth from them and set them aside, drain the rest.
  5. Cool the beans immediately with ice water to stop the cooking process and allow the greens to retain their beautiful fresh color.
  6. In a deep pan or pot, heat the butter on a medium-high heat and fry the onion, which you have previously chopped finely.
  7. Stir until the onions are translucent.
  8. This takes about 3-5 minutes.
  9. Turn off the heat and add the flour.
  10. Stir for a minute.
  11. Then take the pot off the heat.
  12. Gradually pour in the bean stock, stirring diligently to dissolve any lumps.
  13. This stage will take some work, but be patient; if you add the warm broth a little at a time, you will get a thick, lump-free mash, in which only the fried onion can be seen.
  14. Gradually pour in the milk and whisk.
  15. Return the pot to the stove.
  16. Increase the heat until the sauce begins to bubble.
  17. Add the bay leaf and allspice and stir in the vinegar.
  18. Reduce the heat to low, cover and let it bubble for 15 minutes on a very low heat.
  19. The stew will cook nicely, soften, bind the sauce and lose its floury taste.
  20. Finally, remove the pot from the stove and stir in the cream.
  21. If the sauce is too thick, add a little milk and whisk.
  22. Add a teaspoon of sugar and season with salt or vinegar as needed.
  23. Remove the bay leaves and allspice.
  24. If the green beans are long, cut them into smaller pieces.
  25. Put them in the sauce and let them warm up for a while.
  26. Avoid overcooking the sauce as the cream may curdle.

Beans on bacon and garlic

Luxurious green beans sautéed in olive oil and butter along with garlic and bacon are an easy and tasty way to serve this not always popular vegetable as part of a delicious holiday menu.

INGREDIENTS

  • 500 g green beans, fresh, rinsed, with the ends trimmed
  • ½ teaspoon of salt
  • 1 tablespoon of olive oil
  • 1 tablespoon of butter
  • 6 cloves of garlic, chopped
  • 6 strips of bacon, cooked, trimmed of fat, sliced

METHOD

  1. Bring water to a boil in a large pot, add green beans (water should be just above the beans) and ½ tsp salt.
  2. Cook over medium-low heat for 5 minutes, drain the beans.
  3. Heat the olive oil and butter in a large skillet over medium heat.
  4. Add the chopped garlic and stir-fry for about 30 seconds.
  5. Add the chopped cooked bacon and green beans.
  6. Fry on medium heat for about 1 minute to combine all the ingredients.
  7. Remove from stove.
  8. Taste and add salt if necessary.

Sour green bean soup

An excellent creamy green bean and potato soup will please your whole family, and you’ll have it ready once or twice!

INGREDIENTS

  • 200 g green beans, frozen or pickled
  • 3 medium potatoes
  • Bay leaf
  • water
  • 250 ml cooking cream
  • 1 tablespoon plain flour
  • salt and vinegar to taste
  • eggs (optional)

METHOD

  1. Prepare a pot in which you put chopped beans, cleaned and chopped potatoes, a bay leaf, a little salt and cover with water.
  2. If you use pickled beans, first let the potatoes boil a little and add the beans a little later so they don’t boil completely.
  3. In an extra container, mix the cooking cream with plain flour.
  4. When the potatoes and beans are soft, add the cream and plain flour mixture and cook for about 5 minutes.
  5. At the end, season with vinegar and, if necessary, salt.
  6. If you want, you can also add eggs to the soup.
  7. You can either boil them in an extra pot until hard, and then put them on a plate or you can cook them directly in the soup.
  8. Break the egg into a ladle and slowly dip it into the soup.
  9. Wait for the egg to set and cook a little on top, then tip it into the soup.
  10. Fresh bread goes well with the soup, and if you like sweet and sour tastes, you can add a little sugar to the soup at the end.

Beans in tomato sauce

Try this tasty side dish that goes great with grilled or roasted meat. However, you can also serve this dish separately as a light main course.

INGREDIENTS

  • 500 g green beans, chopped
  • 500 g of high-quality canned tomatoes
  • 1 small onion, finely chopped and/or 1 clove of garlic, finely chopped
  • salt and pepper to taste
  • olive oil
  • a few leaves of fresh basil (optional)

METHOD

  1. Saute onion and/or garlic in olive oil.
  2. Then add the canned tomatoes and let it simmer.
  3. Meanwhile, blanch the chopped green beans in well-salted water until crisp.
  4. Then drain and add them to the tomato sauce along with some of the cooking water and let them simmer in the sauce until soft.
  5. Enjoy your meal!

And how to properly prepare beans?

If it is in season, we can prepare the beans fresh. They should be fresh green and undamaged. Before preparing them, we must get rid of the long fibers along the pod and any stalks.

Then we rinse them well, cut them into diagonal strips 3-4 cm long and choose the right recipe with beans.

If they are not available fresh, frozen or sterilized beans are very good substitutes. These are already cleaned and cut, so we can use them right away. They don’t need much time for heat treatment, about 15 minutes is enough, they are still a little crispy.
