Excellent recipes for barbecued poultry meat in one place

Grilled meat is one of the favorite summer delicacies.

Poultry meat is ready faster, more tender, softer and absorbs the flavor of the spices well.

Grilled chicken breast

Just a few ingredients, easy preparation and you have one of the best chicken dishes ever!


  • 500 g of chicken breast
  • 2 tablespoons of oil
  • 2 spoons of soy sauce
  • 3 spoons of honey
  • 1 teaspoon chili
  • 2 cloves of garlic
  • 1 teaspoon grated ginger
  • a pinch of salt and pepper
  • 1 teaspoon ground paprika


  1. Mix soybeans, oil and honey, salt and pepper.
  2. Coat the chicken with a thick marinade and store in a closed container in the refrigerator for 2 hours.
  3. Grill on a hot grill until golden brown on both sides.
  4. Serve with a lemon drizzle, herbs and grilled vegetables.

Grilled turkey breast glazed with spicy mango salsa

This tender grilled turkey breast glazed with a sweet and spicy mango chili salsa will be a hit at your summer barbecues!


  • 1 teaspoon of salt
  • 1/2 tsp pepper
  • 1 tablespoon of chili powder
  • 1 and 1/2 spoons of cane sugar
  • 1/2 cup salsa see below
  • 1/2 cup peach jam
  • 1 kg turkey breast with skin

For salsa:

  • 2 mangoes, peeled and diced
  • 1 red pepper, chopped
  • 1/2 red onion, diced
  • 2 seedless jalapeños, diced
  • 1 or 2 habanero peppers, seeded and diced
  • 1/4 cup cilantro, chopped
  • juice of 1 lime


  • First, prepare the salsa.
  • Mix the first 6 ingredients together in a medium bowl.
  • Squeeze lime juice over them and refrigerate.
  • Mix the salt, pepper, chili powder, and cane sugar in a small bowl, then set aside until you’re ready to season the turkey.
  • Mix mango salsa and peach jam in a bowl.
  • Set aside until you are ready to glaze the turkey breast.
  • Heat one side of a gas grill to medium or place coals on one side of a charcoal grill and heat until the coals are ash white.
  • Rub the turkey breast generously with a mixture of spices and cane sugar.
  • Place the seasoned turkey breast on the opposite side of the grill from the hot coals and grill for 1 hour 45 minutes to 2 hours, turning every 15 minutes.
  • After grilling for an hour, brush the breasts with the salsa and peach jam mixture, basting every 15 minutes until the breasts are done.
  • When the breasts are done and their internal temperature reaches 74 degrees Celsius, remove them from the grill and serve.
  • Enjoy your meal!

BBQ chicken drumsticks

These grilled BBQ chicken drumsticks are out of this world! They are easy to prepare, full of flavor and perfectly juicy!


  • 1 kg of chicken drumsticks
  • 1/2 cup barbecue sauce
  • 2 tablespoons of olive oil
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon of salt
  • 1/2 tsp pepper
  • 1/2 teaspoon dried garlic
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dried onion
  • 1/4 teaspoon cayenne pepper (optional)


  • Measure out the salt, pepper, smoked paprika, dried garlic, dried onion, chili powder, and cayenne pepper (if using) and add everything to a small bowl.
  • Mix it up.
  • Dry the chicken drumsticks with paper towels.
  • Drizzle the drumsticks with oil and season with a mixture of spices.
  • Mix well to coat each piece of chicken thoroughly.
  • Preheat your gas grill to a medium-high temperature (about 200°C).
  • Add chicken drumsticks to clean, well-oiled grates and grill.
  • Turn each piece after a few minutes until the skin is browned and nicely crispy on all sides.
  • Reduce the heat to medium-low (about 150°C) and close the grill.
  • Grill for about 25 minutes, turning the drumstick halfway through.
  • If you will be using a charcoal grill, create two heat zones (one medium-high and one medium-low) by moving most of the coals to one side of the grill.
  • Place the chicken pieces directly over the heat source and turn them every few minutes.
  • Once the skin is browned and crispy, move the chicken away from the heat source and into the indirect (medium-low) heat zone.
  • Cover and grill for another 25 minutes or so, turning the drumstick halfway through.
  • Finally, brush each drumstick with bbq sauce.
  • Check the internal temperature to make sure the drumsticks are grilled to 74°C.
  • Serve immediately!

Grilled duck breast

Meat from duck breast, which is soft and juicy, is especially suitable for grilling. Be inspired by the following recipe, where you will find a tip on how to make a great marinade from soy sauce and ginger.


  • 1 boneless duck breast
  • 3 cloves of garlic
  • 3 onions
  • 1 teaspoon of salt
  • a pinch of pepper
  • chili
  • 1 teaspoon grated ginger
  • 2 tablespoons of oil
  • 2 spoons of soy sauce


  1. Mix the soy sauce and oil.
  2. Finely chop the onion and garlic and add to the mixture.
  3. Grate the ginger and also sprinkle into the marinade.
  4. Salt and pepper.
  5. Brush the duck meat with the marinade, into which you can also gently cut a grid on the sides.
  6. Store in a container in the refrigerator for 2 hours or more.
  7. Grill until golden on both sides.
  8. We serve it with any side dish, most often with potatoes.

Grilled chicken wings in Mediterranean style

This is guaranteed to be the best chicken wing recipe you’ve ever tried! An amazing Mediterranean-style marinade gives the chicken maximum flavor in every bite. Serve with cold tzatziki or your favorite dip.


For the marinade:

  • 1 large red onion, quartered
  • 8 cloves of garlic
  • ½ cup extra virgin olive oil
  • juice of 2 lemons
  • 1 teaspoon sweet paprika
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • ½ teaspoon red chili flakes
  • ½ teaspoon of turmeric
  • ½ teaspoon of nutmeg

For the wings:

  • 1 kg of chicken wings
  • salt
  • 2 lemons, halved


  • In the bowl of a large food processor fitted with the blade, combine the onion, garlic, olive oil, lemon juice and spices.
  • Pulse until everything is well combined into a thick marinade.
  • Season the chicken wings with salt and place them in a zip lock bag.
  • Pour the marinade over them and close the bag.
  • Massage the bag a little to spread the marinade.
  • Place the bag of wings flat on a large plate or tray.
  • Put in the fridge for 2 to 4 hours and turn the bags halfway through.
  • Heat the gas grill to 220 degrees Celsius and lightly oil the grates.
  • Shake off excess marinade, then place wings over direct heat.
  • Cover grill and grill wings for 15 to 20 minutes, turning every 5 minutes, until cooked through.
  • Grill the lemons flesh side down.
  • Serve the wings immediately with grilled lemons.
  • Serve with your favorite dip.

Marinades for barbecued poultry

It is worth adding a little freshly squeezed lemon or lime juice to the marinade. Citrus juices not only add flavor, but in warm weather they work against the reproduction of bacteria.

Marinades for grilling must be thicker , so we only use a few spoons of oil or other liquid in the base. They can be both soft and sharp. For their basic preparation, we primarily use:

  • good oil: oil that can withstand higher temperatures, olive or peanut oil is suitable
  • Yoghurt: goes especially well with chicken and we supplement it mainly with herbs
  • white wine : suitable for all types of poultry
  • beer: together with spices, light beer goes well with all types of meat
  • citrus juices: suitable for chicken and turkey
  • honey: we mainly combine it with citrus juices

We then add the marinades:

  • spices
  • ketchup
  • mustard
  • seasoning sauces
  • herbs

Put the meat in the marinade for at least a few hours . Before grilling, wipe off the marinade and during grilling, you can rub the rest of the marinade over the meat, so it dries out less.

Since meat juice leaches into the marinade, we cannot use it without heat treatment as the basis of a cold sauce.
