Classic ducat buns

Delicious mini yeasted buns covered in an excellent custard sauce, which is called shodó and is loved by almost everyone. We don’t allow them here, while they also have their place in foreign kitchens.

Classic shodó was made from wine and eggs, but after a while it was replaced by milk with pudding, so that this dish could be served in school canteens. Thanks to this, it has become a popular dish especially among children.

After all, there are other dishes that our children love. Let’s recall, for example , recipes for sweet buns .


  • 500 g semi-coarse flour
  • 300 ml of milk
  • 1/2 cube of yeast
  • 1 egg
  • 40 g of granulated sugar
  • Pinch of salt
  • Vanilla pudding
  • 100 ml of vegetable oil


  • Put 50 ml of milk in a small saucepan and heat until the milk is lukewarm.
  • Set aside and add yeast and 1 teaspoon of sugar. Mix gently and set aside for 5 minutes.
  • In a large bowl, mix flour, eggs, sugar, remaining milk, oil and prepared yeast.
  • We make the dough, which we then cover with a kitchen towel and leave in a warm place for about 40 minutes.
  • Meanwhile, prepare a baking tray and line it with baking paper. If we don’t have it, we wipe the baking sheet with vegetable oil.
  • Turn the dough out of the bowl and divide it into 8-12 equal parts.
  • Roll each part into a long roll, place on a baking sheet and brush with oil. We continue like this with all the parts until we completely fill the tray.
  • Using a sharp knife, cut into pieces/cubes of approx. 2-3 cm size. Cover with a towel and let rest for another 5-8 minutes.
  • Meanwhile, preheat the oven to 175 degrees.
  • Uncover the baking sheet, place in the preheated oven and bake for about 20-25 minutes until golden.

Ducat buns with vanilla cream

When we feel like a typically Czech delicacy, we don’t have to go to a restaurant. On the contrary, we can prepare it ourselves at home and it is so great that we will lick our heads.


For the buns:

  • 1 teaspoon dry yeast (or 15 g fresh)
  • 1/2 cup granulated sugar
  • 2/3 cup lukewarm milk
  • 1/2 cube of unsalted butter
  • 2 1/2 cups semi-coarse flour
  • 1 egg yolk
  • Pinch of salt

For the vanilla sauce:

  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 2 cups whipping cream
  • 1 spoon of vanilla essence

To finish:

  • 2 tablespoons of melted butter
  • 1 tablespoon of rum


  • Pour/crumble the yeast into a bowl, add 1 teaspoon of sugar, 2 tablespoons of lukewarm milk and let it work for 10 minutes at room temperature.
  • Pour the remaining milk into a small saucepan, add the butter and let it heat up together.
  • Sift the flour into a bowl, add a pinch of salt, the rest of the sugar, eggs, milk with melted butter and yeast.
  • We knead until we have a smooth dough, which we put in a bowl and leave to rise in a warm place for 1 hour.
  • Then preheat the oven to 160 degrees and grease the baking sheet with oil or melted lard.
  • Turn the dough onto a floured surface and roll it into a long cylinder with a diameter of 2.5 to 3 cm. Cut into pieces of the same size and shape into balls by hand.
  • Place them next to each other in a greased baking dish, while brushing with melted butter so that it also gets between the buns. Place in the oven and bake for 20 minutes until golden brown.
  • Then take the baked buns out of the oven and brush them with hot melted butter and rum.
  • For the sauce, put the egg yolks in a bowl, add sugar and vanilla and beat thoroughly. Heat the whipping cream in a saucepan and slowly pour it into the egg mixture, stirring constantly.
  • We then pour the whole mixture back into the pot from the cream and heat it over a low heat until the sauce hardens.
  • Then strain into a clean bowl and leave to cool. Stir occasionally while cooling.
  • Divide the buns onto plates, pour over the sauce and serve.

Fluffy bun dough with vanilla sauce

Everyone has their favorite recipe for ducat buns, but it doesn’t hurt to try a slightly different one from time to time and find out how it will taste and how it differs from ours.


For the dough:

  • 400 g plain flour
  • 30 g of fresh yeast
  • 50 g of sugar
  • 200 ml of lukewarm milk
  • 80 g of butter
  • 3 egg yolks
  • Pinch of salt
  • 1 tablespoon of grated lemon peel
  • 2 spoons of powdered sugar

For the sauce:

  • 2 egg yolks
  • 4 spoons of natural sugar
  • 1-2 tablespoons of vanilla essence
  • 500 ml of milk
  • 1 tablespoon of cornstarch


  • Sift the flour into a large bowl and make a well in the middle. Crumble the yeast into it, add 1 teaspoon of sugar and a third of lukewarm milk. Mix a little, cover with a towel and let rise in a warm place for about 15 minutes.
  • In the meantime, heat the remaining milk and dissolve the butter and sugar in it (it does not have to be boiled). Set aside and add egg yolks, lemon zest, salt and mix thoroughly.
  • Pour the resulting mixture into the bowl with the flour and yeast and make a smooth dough that should easily separate from the walls of the bowl and bubbles should form on it.
  • Then cover with a kitchen towel and leave to rise for 20 minutes. Grease the baking pan with butter and set aside for now.
  • Turn the dough out onto a rolling pin, knead it again and roll it into a long cylinder about 3 cm thick.
  • We cut off pieces of dough and place them next to each other in a baking dish. Cover with a towel and let it rest for another 20 minutes.
  • Preheat the oven to 200 degrees and brush the surface of the buns with the remaining melted butter.
  • Place in the oven on the lowest rack and bake for approx. 35 minutes until golden brown.
  • While the buns are baking, put the egg yolks, sugar and cream in a bowl and beat until foamy.
  • Add vanilla essence and mix everything again. Pour milk into the pot, add starch, pour in the egg mixture and mix thoroughly.
  • Heat slowly over low heat, stirring constantly to make the sauce creamy. It must not start to boil, otherwise it will curdle.

Luxury buns with egg cognac shodó

Ducat buns are a popular sweet treat that has its fans among children and adult gourmands. We can prepare them not only in the oven, but also steamed. This recipe is a bit unconventional because the buns are filled with filling.


For the buns:

  • 1 cube of yeast
  • 1 kg semi-coarse flour
  • 750 ml of milk
  • 125 g of butter
  • 1 egg
  • 5 spoons of sugar
  • Pinch of salt
  • Jar of marmalade (preferably spicier)

For the sauce:

  • 1 liter of milk
  • 2 bags of vanilla pudding
  • 100 ml of egg cognac
  • 1 spoon of vanilla essence
  • 1 bag of vanilla sugar
  • 2 spoons of powdered sugar


  • Dissolve 1 tablespoon of sugar in warm milk and add crushed yeast. Let the yeast rise.
  • Sift the flour into a bowl, add the other ingredients, and finally the prepared yeast. Knead until a smooth dough is formed.
  • Cover with a clean kitchen towel and leave to rise in a warm place for about 1 hour.
  • Turn out the risen dough onto a floured roll or work surface, knead and roll out a sheet approx. 2 cm thick, from which we cut squares of the same size.
  • We put a little marmalade in the middle of each of them, which we like, turn it over, close it and shape it like a bun.
  • We put it in a baking dish, which we grease with butter and let it rest for 10 minutes.
  • Meanwhile, preheat the oven to 200 degrees. Put the baking pan with the buns in the oven and bake for about 25-30 minutes until golden.
  • While we are baking the buns, we will prepare the sauce.
  • Heat the milk over medium heat, mix both puddings in it and cook for about 3 minutes until the milk starts to thicken.
  • Sprinkle powdered sugar and vanilla sugar, mix and let it cook for another 30 seconds.
  • Then turn off the stove and pour in the vanilla essence with egg cognac while stirring constantly.
  • Stir until the mixture is nice and smooth and all the ingredients are combined.
  • Then just take the buns out of the oven and serve topped with vanilla sauce.

Delicious sourdough buns with custard sauce

Choosing the best ducat bun recipe is not easy, because everyone tastes different. This version is a bit reminiscent of sweet rolls, but when you cover the finished buns with pudding, you will see how good it is.


For the dough:

  • 1/2 cup lukewarm water
  • 2 cups of lukewarm milk
  • 3 tablespoons of softened butter
  • 4 spoons of sugar
  • 1 teaspoon of salt
  • 2 1/2 tablespoons dry yeast
  • 6 1/2 cups plain flour

For spreading:

  • 2 tablespoons of butter
  • 2 bags of vanilla sugar

For the sauce:

  • 1 cup of milk
  • 1 cup whipping cream
  • 1 spoon of vanilla essence
  • 3 tablespoons of cane sugar
  • 4 large egg yolks (ideally L-sized eggs)


  • Mix water, milk, butter, sugar, salt and yeast in a bowl. Let it rest for about 8 minutes until the yeast starts to foam.
  • Pour flour into the bowl of the food processor, add the liquid mixture and start kneading the dough with the hook.
  • Let it rise for about 5 minutes, until a soft and beautifully smooth ball of dough begins to form. It should be flexible and slightly sticky to the touch.
  • Grease or spray the bowl with oil and put the finished dough into it. Spray the surface of the dough with oil, cover with a plastic cover and leave to rise for 20 minutes at room temperature.
  • Turn the risen dough out onto the work surface, knead it a little and then gently stretch it into a rectangle with your hands. We cut it into 4 long strips, which we roll a little and cut 6 equal pieces of dough from each.
  • Form all 24 pieces of dough into a ball, while spraying your hands with oil so that the dough does not stick.
  • Place them in a baking tray lined with baking paper, cover with plastic again and leave to rise in a warm place for 25 minutes.
  • Then we preheat the oven to 180 degrees, put in a baking tray with buns and bake for 25 minutes until golden brown.
  • Brush the baked buns with melted butter and sprinkle with vanilla sugar.
  • Put the milk and cream for the sauce in a saucepan and bring to a boil over a low heat, then set aside.
  • Mix egg yolks with sugar in a bowl. While stirring constantly, start pouring milk and cream into the yolks. We have to do it really slowly and in parts, otherwise the yolks will cook and the sauce will start to clump.
  • When everything is mixed, pour the sauce back into the saucepan and heat over low heat for about 5 minutes until the sauce thickens.
  • Set aside and let cool. Finally, add vanilla, mix and serve. The sauce is great both warm and chilled.

Sweet mini buns with vanilla sauce

Dukat buns with šodó are a traditional delicacy in the Czech Republic and Slovakia, but we can also come across them abroad. Šodó was made from wine and eggs, but gradually the foam was replaced by vanilla pudding with milk.

  • 100 ml of water
  • 20 g of fresh yeast
  • 1 egg
  • 40 g of granulated sugar
  • Pinch of salt
  • Grated rind from 1 chemically untreated lemon
  • 100 ml of sunflower oil


  • Heat 50 ml of milk in a small pot so that it is lukewarm. Crumble the yeast into it and sprinkle with 1 teaspoon of sugar. Set aside for 5 minutes.
  • Mix flour, eggs, sugar, remaining milk, water, lemon zest, oil and prepared yeast in a large bowl.
  • We process the dough for 5 minutes. Cover the finished dough in a bowl with a kitchen towel and let it rise for 40 minutes in a warm place.
  • Grease a baking sheet with vegetable oil or use baking paper.
  • Put the dough on the work surface and cut it into about 8 – 12 smaller pieces. Roll each piece of dough into a long roll, place on a baking sheet and brush with oil.
  • This is how we process all the pieces of dough and then cut them with a sharp knife into equal-sized pieces (balls).
  • Let the dough rest on the baking sheet for 5 minutes and in the meantime preheat the oven to 175 degrees.
  • Bake for 20-25 minutes until they have a golden surface.
  • Served with your favorite sauce to your taste, ideally vanilla sauce.

Small buns with sugar and sauce

This is basically a miniature version of classic buns. Sugar sprinkling and vanilla sauce only enhance their great taste, which you will not forget.



  • 1/4 cup warm water
  • 2 and 1/4 teaspoons of dry yeast
  • 3/4 cup warm milk
  • 1 large egg
  • 1/4 cup softened unsalted butter
  • 1/4 cup sugar
  • 1 teaspoon of salt
  • 3 and 3/4 cup plain flour

For sprinkling and spreading:

  • 1 egg
  • 1/2 cup powdered sugar
  • 1/2 cup milk powder


  • Put warm water in a small bowl and dissolve the yeast in it. Let stand for about 5 minutes until bubbles form on the surface.
  • Prepare a large bowl and put milk, butter, eggs, sugar and salt into it and mix thoroughly.
  • Stir in the prepared yeast and add the flour in parts. We process the dough to form a ball.
  • Turn the finished dough out onto a floured work surface and knead for about 10 minutes. It must be soft, elastic and smooth.
  • We put it in a glass bowl, cover it with a plastic cover and let it rise for 1 and 1/2 hours.
  • Then we divide the dough with a knife into smaller pieces of about 2 x 3 cm and shape them into balls.
  • We stack them in an oiled baking dish, without them being close to each other. Cover again with a plastic lid so they can rest for another hour.
  • Preheat the oven to 180 degrees, beat the eggs and mix the powdered milk with sugar.
  • Brush the surface of the buns with beaten egg and sprinkle with half of the dry mixture.
  • Place in the preheated oven and bake for approx. 17-20 minutes. The buns must acquire a golden hue.
  • Take the finished buns out of the oven, wait for them to cool a little, and then spread the rest of the dry mixture of milk and sugar on them.
  • Finally, we serve with our favorite sauce, which we make as we usually do.
