Duck broth with dumplings

Broth and dumplings never disappoint, and this is doubly true in this duck soup. See for yourself.

Ingredients

  • 2 tablespoons of oil
  • 1 duck skeleton
  • 1 onion
  • 2 bay leaves
  • 20 g of dried mushrooms
  • 1 carrot
  • 2 cloves of garlic
  • 1 stalk of celery stalks
  • water
  • 1 egg
  • 1 cup flour
  • salt pepper

Method

  1. First we will make the dough for the dumplings. Mix eggs, water and salt and pour this mixture into the flour. Knead the dough for about 5 minutes.
  2. Make a patty out of the dough and leave it aside to dry.
  3. Cut the duck carcass into pieces, put it in cold water and keep the temperature just below the boiling point.
  4. Heat the oil in a pan, fry the finely chopped onion in it until it is caramelized.
  5. As soon as the dough dries a little, we grate it on a coarse grater. Leave the dumplings prepared in this way to dry on a towel.
  6. Add bay leaf, pepper and dried mushrooms to the broth and cook on a low flame for 90 minutes.
  7. Remove the duck meat and put it back into the soup.

Vietnamese soup with duck meat

You certainly know this great duck soup from Vietnamese restaurants, and now you can cook it at home.

Ingredients

  • 4 duck legs
  • 30 g of ginger – for the duck and in the soup
  • ¼ cup rice wine
  • ½ teaspoon five-spice spice
  • 1 tablespoon of soy sauce
  • 1 tablespoon shallots per duck
  • 2 cloves of garlic
  • 8 dried shiitake mushrooms
  • 4 star anise
  • 8 dates
  • 1.5 teaspoons of goji
  • ½ teaspoon coriander seeds
  • 4 tablespoons of soy sauce
  • ½ tablespoon oyster sauce
  • 5 cloves of garlic
  • 3 shallots for soup
  • 1 onion
  • 1 spoon of sugar
  • 200g egg noodles
  • 1 then choi

Method

  • Let’s prepare the duck legs first. Mix half of the grated ginger, rice wine, soy sauce, five-spice, shallots and pressed garlic in a bowl.
  • Rub the thighs with this mixture and marinate for 20 minutes.
  • Heat the oven and bake briskly for about 10 minutes so that the skin turns golden.
  • While we are preparing the duck meat, soak the shiitake mushrooms, goji mushrooms and dates in lukewarm water for about 10 minutes. Then we rinse.
  • Pour water into the pot and add goji, dates, shiitake mushrooms, anise, coriander seeds, soy sauce, oyster sauce, ginger, garlic, shallots and onions.
  • As soon as the water starts to boil, add the duck legs and cook on a low flame for about 90 minutes.
  • During cooking, we remove the foam and if there is a lot of duck fat on the surface, we can also remove it.
  • In the meantime, cook the noodles according to the instructions and leave them aside for now. Serve the soup with the noodles.
  • A few minutes before the end of cooking, add pak choi to the soup and season with sugar.
  • We serve the soup with noodles.

Duck bone broth

The combination of mushrooms, vegetables and duck meat is absolutely amazing. Try to prepare it at home and see for yourself.

Ingredients

  • 1 duck skeleton
  • 5 stalks of celery stalks
  • 1 onion
  • 6 cloves of garlic
  • 8 bay leaves
  • 2 carrots
  • ¼ cup grits
  • 150 g of mushrooms
  • salt pepper

Method

  • Heat the oven to 190C and bake the duck skeleton for about an hour.
  • Take the duck carcass out of the oven, pour 3 tablespoons of the batter into the pot. Fry the chopped celery and onions on it for about 3 minutes.
  • Add pressed garlic, water and duck skeleton.
  • Cook on low heat for about 2-2.5 hours.
  • In the meantime, prepare the grits according to the instructions.
  • Remove the meat from the skeleton and put it back into the soup. Cut carrots and mushrooms and cook for 10 minutes.
  • Then add hailstones to the soup and cook for another 10 minutes.
  • Season with salt and pepper and serve.

Kaldoun with duck and bacon

This duck soup not only tastes great but also fills you up and is therefore an ideal snack.

Ingredients

  • 10 slices of bacon
  • 2 tablespoons of butter
  • 2 cups finely chopped onion
  • 2 cups celery
  • 2 cups carrots
  • 2 cloves of garlic
  • ½ cup flour
  • chicken broth
  • 4 cups of potatoes
  • 4 cups cooked duck meat
  • 1 teaspoon ground paprika
  • 1 cup cooking cream
  • salt pepper

Method

  • Cut the bacon into cubes and fry until crispy and set aside.
  • Fry onions, celery, carrots, garlic and ground pepper in bacon fat.
  • Dust with flour and cook for two minutes, stirring constantly.
  • Pour in the broth, season with salt and pepper and bring to a boil.
  • Add the potatoes and cook for about 15 minutes until the potatoes are soft.
  • Add cream, duck meat and cook together for 10 minutes.
  • Served with fried bacon.

Chinese duck soup

Do you have leftover duck meat from dinner? So you can use it in this excellent duck soup.

Ingredients

  • 100 noodles
  • 400 ml of chicken stock
  • 3 slices of ginger
  • 200 g of roasted/boiled duck meat
  • 200 g of cabbage
  • 150g bean sprouts
  • 1 tablespoon hoisin sauce
  • 1 tablespoon of soy sauce
  • 1 teaspoon lime juice
  • salt and chili to taste

Method

  • Cut the duck meat into strips and fry in a pan in a little oil.
  • Add the pressed garlic and saute for another 2 minutes.
  • In the meantime, cook the bean sprouts. We put them in a bowl, cover them with hot water and let them stand for half a minute, then drain the water.
  • Cook the noodles according to the instructions and set aside.
  • As soon as the duck has a golden color, add hoisin sauce, soy sauce and cover with a little broth.
  • Pour the remaining broth, water and cabbage cut into strips with ginger into the pot. Bring to a boil.
  • After two minutes, add the duck meat, bean sprouts, noodles and season with lime juice and serve.
