Method

  • Mix all the ingredients and make a stiff dough. Chill in the fridge for at least 2 hours.
  • Roll out the dough to a thickness of approx. 4 mm. Cut out different shapes and bake for 10-15 minutes at 160°C on a tray lined with baking paper. Allow to cool completely.
  • When finished, cover with marmalade and decorate with colored powdered sugar.

Meringue nests

It’s hard to find a cuter motif than a bird’s nest full of tiny, colorful eggs. Bake delicious meringue nests that literally melt on the tongue !

Ingredients

  • 2 eggs
  • ¼ teaspoon lemon juice
  • ½ cup granulated sugar
  • 120 g of softened butter 1 cup of powdered sugar
  • 1 spoon of cocoa
  • 1-2 tablespoons of milk
  • colorful mini eggs

Method

  • Preheat the oven to 100°C.
  • Separate the yolks from the whites and place the whites in a large bowl. The bowl must be completely dry, clean and not greasy!
  • Start beating the egg whites at a moderate speed, then gradually add the granulated sugar and increase the speed.
  • Add the lemon juice and beat for 10-15 minutes until stiff peaks form.
  • Using a pastry bag fitted with a rosette tip, pipe circles of snow onto a baking sheet lined with baking paper.
  • Bake for 2 hours, then turn off the oven and let it finish baking for another few minutes. remove from oven and let cool completely.
  • Beat the butter, icing sugar, cocoa and milk for the cream.
  • Using a piping bag with a very small hole, spray the centers of the nests and place a few mini eggs in each. Leave to harden in the fridge.

  • Use a toothpick dipped in food coloring to draw abstract shapes in the frosting. Allow to dry completely.
