Easter cookies from Linz

Traditional Linz sweets do not have to be only at the Christmas table. The popular dough is great for cutting out all kinds of shapes, so feel free to start using rabbits, eggs and chickens. Decorate them with powdered sugar with a pinch of food coloring, they will look fantastic !


  • 300 g plain flour
  • 200 g of softened butter
  • 100 g of powdered sugar
  • 2 egg yolks
  • lemon peel
  • apricot marmalade with a drop of rum to combine
  • icing sugar with a pinch of food coloring for sprinkling


  • Mix all the ingredients and make a stiff dough. Chill in the fridge for at least 2 hours.
  • Roll out the dough to a thickness of approx. 4 mm. Cut out different shapes and bake for 10-15 minutes at 160°C on a tray lined with baking paper. Allow to cool completely.
  • When finished, cover with marmalade and decorate with colored powdered sugar.

Meringue nests

It’s hard to find a cuter motif than a bird’s nest full of tiny, colorful eggs. Bake delicious meringue nests that literally melt on the tongue !


  • 2 eggs
  • ¼ teaspoon lemon juice
  • ½ cup granulated sugar
  • 120 g of softened butter 1 cup of powdered sugar
  • 1 spoon of cocoa
  • 1-2 tablespoons of milk
  • colorful mini eggs


  • Preheat the oven to 100°C.
  • Separate the yolks from the whites and place the whites in a large bowl. The bowl must be completely dry, clean and not greasy!
  • Start beating the egg whites at a moderate speed, then gradually add the granulated sugar and increase the speed.
  • Add the lemon juice and beat for 10-15 minutes until stiff peaks form.
  • Using a pastry bag fitted with a rosette tip, pipe circles of snow onto a baking sheet lined with baking paper.
  • Bake for 2 hours, then turn off the oven and let it finish baking for another few minutes. remove from oven and let cool completely.
  • Beat the butter, icing sugar, cocoa and milk for the cream.
  • Using a piping bag with a very small hole, spray the centers of the nests and place a few mini eggs in each. Leave to harden in the fridge.

Marbled eggs from hazelnut dough

Another of the traditional cookie doughs is hazelnut, so why not use it for Easter baking as well? Marbled eggs are very simple to prepare and at the same time very impressive to look at !


  • 210 g of butter
  • 280 g plain flour
  • 100 g ground walnuts
  • 70 g of powdered sugar
  • 2 egg yolks
  • powdered sugar and lemon juice for the glaze
  • liquid food coloring


  • Mix all the ingredients and make a stiff dough. Chill in the fridge for at least 2 hours.
  • Roll out the dough to a thickness of approx. 4 mm. Cut out the eggs and bake on a tray lined with baking paper for 10-15 minutes at 160°C. Allow to cool completely.
  • Mix icing sugar and a little lemon juice to a medium thickness. Brush the eggs over the entire surface.
  • Use a toothpick dipped in food coloring to draw abstract shapes in the frosting. Allow to dry completely.

Unbaked white chocolate cookies

For this recipe, you need a silicone mold in the shape of bunnies. If you don’t have it, you can also use other spring motifs – chicks, eggs or flowers.


  • White chocolate
  • lentils

  • Pour the lentils and colored decorations on the bottom of the silicone molds.
  • Melt the white chocolate in a water bath and fill the molds up to the top.
  • Allow to harden completely and peel from the molds.

  • 750 g of grated coconut
  • 130 ml of sweetened condensed milk
  • 350 g of chocolate frosting


  • In a large bowl, combine the shredded coconut and condensed milk.
  • Use spoons to form balls and place them on a tray lined with baking paper. Refrigerate for 1 hour.
  • Melt the chocolate coating in a water bath and dip the coconut balls in it. You can lightly dust with grated coconut. It doesn’t want to set completely.
