Baked carp with onion

Ingredients
- 1 small carp
- 1 kg onion, chopped
- salt and freshly ground pepper to taste
- 2 teaspoons of sweet paprika
- 4 tablespoons of oil
- 1 teaspoon plain flour
- juice of ½ lemon
Method
- Chop the onion and put it in a pan with hot oil.
- Sauté the onion for about 10-15 minutes over medium heat until soft and translucent, but not browned.
- Add salt, paprika and pepper.
- Wipe a deep baking dish with oil and transfer the onion to it.
- Place the cleaned fish on top of the onion.
- In a small bowl, mix ½ cup water with flour and lemon juice and pour this mixture over the carp.
- Bake for about an hour in an oven preheated to 180°C.
- If the onions start to dry out, add a few tablespoons of water.
- Serve with fresh bread and red wine or beer.

Baked carp in honey
Enjoy this Easter caper with honey.
Ingredients
- 1 small carp
- 8 spoons of honey
- 4 onions
- a teaspoon of ground pepper
- 1/2 teaspoon salt
- 1 teaspoon coriander
- 50 g of butter
Method
- Make X-shaped slits on the fish. Season with salt, pepper and coriander.
- Cut the onion, heat the butter in a pan and fry the onion until brown. Add a little oil and honey. Mix well, bring to a boil and let cool.
- Pour a few spoonfuls of honey sauce into the baking dish. Add the carp and pour the sauce over again. Cover with foil.
- Bake in an oven preheated to 180°C for about 30 minutes. Then remove the foil and grill at 220°C for another 5 minutes.

Stuffed carp with mushrooms
During Holy Week, you can also prepare carp with fragrant mushrooms.
Ingredients
- 1 small carp
- salt
- freshly ground pepper
- 1 tablespoon of olive oil
- 1 tablespoon of lemon juice
- 100 g of bacon
- 100 g of mushrooms
- 1 bunch of parsley
Method
- Cut the bacon into small strips. Clean the mushrooms and cut them into small cubes with a diameter of 0.5 mm.
- Fry the bacon in a pan until it releases the fat. Add the mushrooms and continue to fry until all the liquid has evaporated.
- Wash the parsley, dry it and finely chop the leaves. Add half the parsley to the mushrooms.
- Wash the carp, dry it and cut it several times on both sides up to the spine. Season the fish with salt and pepper and sprinkle with lemon juice. Brush the outside with oil.
- Fill the carp with the mushroom mixture. Cover the fish with the remaining parsley and wrap in foil.
- Grill on low heat for about 20 minutes, turning occasionally. Serve the carp with your favorite side dish.

Ingredients
- 1 small carp
- salt
- freshly ground pepper
- 1 fresh lemon
- 1 bunch of parsley
- 2 sprigs of lemon thyme
- 1 bunch of soup vegetables (eg carrots, celery, onions, leeks or parsley)
- 1 onion
- 400 g waxy potatoes
- 2 large tomatoes
- 40 g of butter
- ¼ l of dry white wine
- 130 ml of fish stock
- chopped fresh herbs for garnish (parsley or basil)
Method
- Wash and clean the carp and dry it. Salt and pepper the fish and drizzle lemon juice on the outside and inside. Place parsley and thyme in the abdominal cavity. Preheat the oven to 180°C.
- Wash and clean the vegetables and cut them into small pieces. Peel and slice the potatoes. Boil the tomatoes briefly, peel the skin and cut out the core and cut the tomato into cubes.
- Heat the butter and vegetables together with about two spoons of onion in a hot baking pan. Fry the potatoes briefly. Season with salt and pepper and add wine and fish stock. Add the tomatoes and carp, brush with the remaining butter.
- Bake in the preheated oven for about 45 minutes, basting the fish regularly. If the carp will brown quickly, cover the pan with foil.
- Season the tomato sauce with salt and pepper and serve the carp sprinkled with herbs.

Is carp suitable for Easter?
Of course, carp is suitable for the Easter table. According to Christian tradition, it should then be eaten on Friday.
