Ingredients

  • 1 pc whole chicken
  • 6 pcs of older rolls
  • 2 eggs
  • 200 ml of milk
  • 100 g of butter
  • salt and pepper
  • a pinch of grated nutmeg
  • 2-3 tablespoons of fresh chopped parsley

Method

  1. Wash, salt and prepare the chicken in a baking dish or baking dish.
  2. Cut the rolls into cubes and let them soak in milk.
  3. Meanwhile, rub the butter with a little salt, spices and egg yolk.
  4. Make thick snow from egg whites.
  5. Mix the squeezed rolls (not completely dry) and egg whites into the melted butter.
  6. Fill the inside of the chicken with the stuffing.
  7. If we have leftover stuffing, we put it in the baking dish next to the chicken and bake it together.

Easter roast chicken with garlic and rosemary

Don’t feel like chicken with stuffing , do you prefer something lighter ? Baked chicken with garlic and rosemary will be the right choice for you, its preparation is completely undemanding.

Ingredients

  • 1 chicken in total
  • 2 sprigs of fresh rosemary
  • 1 head of garlic, cut in half
  • 3 cloves of garlic, wiped
  • 2 lemons (untreated), cut in half
  • 1 lemon, cut into slices
  • 2 teaspoons of grated lemon peel
  • 4 tablespoons of butter
  • 200 ml of white wine
  • 2 onions, quartered
  • sea salt
  • crushed pepper

Method

  1. Mix butter with chopped rosemary, 3 cloves of garlic, salt, pepper and lemon zest.
  2. Stuff the mixture under the skin of the chicken, especially under the breast.
  3. Put part of the mixture inside the chicken, add 2-3 onions, 1/2 garlic, lemon slices and rosemary sprigs.
  4. Put the chicken in the baking dish, add the rest of the lemon, onion, garlic and herbs.
  5. Add wine and a little water, bake at 180 °C for about 1.5 – 2 hours until golden.
  6. Remove the onion and spices from the baked chicken.
  7. Baked Easter chicken can be served with potatoes stewed in their own juice or baked mashed potatoes.

It is a great choice for a holiday lunch. Filled with spring stuffing, i.e. roll stuffing flavored with, for example, young nettle leaves or spinach with other herbs, it tastes twice as good.

Ingredients

  • 1 piece of chicken in total

Stuffing ingredients

  • 2 rolls
  • 2 eggs
  • 1 onion
  • 100 ml of milk
  • 150 g of bacon
  • a handful of chopped parsley
  • 1 handful of chopped young nettle or spinach
  • nutmeg
  • salt and pepper

Method

  1. Cut the rolls into cubes, put them in a large bowl and cover them with milk
  2. Finely chop the onion and bacon and fry in butter. When the mixture is golden brown, put it in the bowl for the rolls.
  3. Add eggs, finely chopped fresh herbs and season with nutmeg, salt and pepper.
  4. Rinse the chicken and fill it with the prepared stuffing.
  5. Season both sides with pepper, salt well and place in a roasting pan, place pieces of butter on top of the meat, which can also be carefully placed under the skin, so the chicken remains juicy.
  6. Bake in a preheated oven for approx. 1.5 to 2 hours at 180 °C.
  7. We can serve it with boiled potatoes, mashed potatoes or Provençal potatoes.

Turkey roulade stuffed with liver

Do not be afraid of combining turkey meat with liver, on the contrary, it is directly encouraged.

Liver is not the most popular delicacy for many people, but it contains a large amount of important substances for the body and helps, for example, the proper functioning of the nervous system.

Ingredients

  • 1 larger cruel breast
  • 1 package of chicken liver (350 g)
  • 2 eggs
  • 2 onions
  • salt and pepper
  • mustard
  • herbs to taste – chives, parsley

Method

  1. Cut the raw meat in half and cut into the sides and roll out until a sheet of approximately the same thickness is formed.
  2. Gently tap the meat slice.
  3. Salt, pepper and anoint with mustard.
  4. Glaze finely chopped onion in a pan.
  5. Wash the thawed chicken liver and cut it into smaller pieces.
  6. Season with pepper, add to the pan with the onions and simmer them gently.
  7. Then mix the eggs in them, wait for them to curdle.
  8. Salt the mixture and spread it on the meat.
  9. Carefully roll up and wrap with thread.
  10. Transfer the roulade to a baking tray, add salt and cover with water.
  11. Bake at 200°C for less than an hour.
  12. During baking, baste the roll with baking powder.
  13. We can serve with mashed potatoes or potato patties.
