Butter cookies for Easter
Do you like butter cookies the most? Make them honestly and at home. In addition, with a colored coating, they will look really great and will festively decorate your table.
Ingredients for cookies
- ½ cup of butter
- 1 cup of sugar
- 1 egg
- 1 teaspoon of vanilla extract (you can replace it with quality vanilla sugar)
- ½ teaspoon of baking powder
- ¼ teaspoon salt
- 2 cups plain flour
Ingredients for the frosting
- 3 cups of powdered sugar
- 2 tablespoons of dried egg whites (you can substitute 2 larger egg whites)
- ¼ cup water (if you use fresh egg whites, you don’t need water)
- ½ teaspoon of vanilla extract

Method
- Using an electric mixer, beat the butter and sugar in a large bowl until light and fluffy. Add eggs and vanilla.
- Reduce speed to low and add baking powder and salt. Gradually add the flour until the dough is thoroughly mixed.
- Form it into a ball and wrap it tightly in cling film. Refrigerate for at least an hour until firm. Ideally let it rest overnight in the cold.
- Preheat the oven to 175°C. Line the trays with baking paper.
- Remove the dough from the refrigerator and wait 5-10 minutes.
- Roll out a thin dough on a floured work surface. Use the egg-shaped cutters to make small eggs. Make a ball again from the remains, roll it out and continue cutting.
- Bake for 8-10 minutes depending on the thickness of the dough. Let cool for about a minute, then transfer the cookies to a wire rack to cool completely.
- For the frosting, mix the dried egg whites and powdered sugar. Add the water and vanilla extract and mix with a hand mixer on medium speed until the mixture is smooth. If the frosting is too thick, add water, if it is too liquid, add sugar.
- Divide the frosting into several bowls and color them with selected food coloring. Do not forget that if you use liquid coloring, it will affect the consistency of the frosting, if necessary, add sugar afterwards.
- Use a cookie cutter to apply the frosting to the cookies. If you are going to add a second layer in white or another color, wait at least an hour before decorating again, so that the already applied glaze hardens well.

Cookie eggs
If you want to give carol lovers something special, you can give them these cookies in the shape of Easter eggs, they will surely be delighted.
Ingredients for cookies
- 1 cup softened butter
- ½ cup brown sugar (squeeze it well in the cup to remove excess air)
- 1 large egg
- 1 and ½ teaspoons vanilla extract (or 2 vanilla sugars)
- 3 cups plain flour
- 1 cup oatmeal
- ¾ teaspoon of salt
Ingredients for the frosting
- 1 and ½ cups of powdered sugar
- ⅛ teaspoon of salt
- 2 and ½ spoons of cooking cream
- decorative sticks with colored glaze for decorating
Method
- In a large bowl, cream the butter with the brown sugar until the mixture is light and fluffy. Add the egg and vanilla and mix well again.
- Mix the flour, flakes and salt and then pour them into the already prepared mixture. Divide the dough into three equal portions.
- Make 12 egg-shaped cookies from each part. Place them on a tray lined with baking paper. Bake at 175°C for about 20-25 minutes. Allow to cool completely.
- Mix the frosting ingredients until completely smooth. Then spoon it onto the biscuits. After drying, you can decorate them with colorful Easter decorations.

Ingredients
- 65 g cold chopped butter
- ¼ cup powdered sugar
- ½ cup plain flour
- 2 and ½ teaspoons of cornmeal
- 2 spoons of cocoa
- 1 and ¼ yolk
- melted white chocolate for decoration
Ingredients for the filling
- 200 g of dark chocolate, cut into pieces
- ½ cup cream
Method
- Preheat the oven to 180°C. Process the butter, sugar, both flours, cocoa and egg yolks in a food processor until a soft dough forms. Wrap them in cling film and put them in the fridge for about 30 minutes.
- Roll out the dough between two sheets of baking paper to a width of approx. 3 mm. Use an egg-shaped cookie cutter, cut out small ovals from the dough and place them on a baking sheet lined with baking paper.
- Bake for approx. 8-10 minutes, or use a turner to check the bottom of the cookie.
- If it turns dark brown, you’re done. Remove the cookies from the oven and let them cool completely on the baking sheet.
- For the chocolate cream, place the chocolate and cream in a small saucepan and stir over a low heat until the chocolate has melted and the mixture is glossy.
- Let cool completely. Use the cream to always join two eggs together. You can then decorate them with melted white chocolate.

Ingredients
- 350 g plain flour
- 200 g of powdered sugar
- 130 g of softened butter
- 2 eggs

- 2 spoons of cocoa

Method
- Mix all the ingredients in a bowl to make a smooth dough.
- Wrap the dough in cling film and put it in the fridge for at least 2 hours.
- Preheat the oven to 160°C and line the trays with baking paper.
- On a floured work surface, roll out the dough to a width of approx. 4 mm.
- Use stamp cutters or cut out circles and decorate them with Easter cookie stamps.
- Transfer the cookies to a baking sheet lined with baking paper and bake for about 12 minutes.
- Remove from the oven and after about 5 minutes, transfer the cookies to a wire rack to cool completely.
