  • 800g plain flour
  • 300g of softened butter
  • 4 eggs
  • 100 ml of milk
  • 2-3 spoons of gingerbread spice

  • 2 teaspoons of baking soda
  • 300g of sugar or sweetener

Method

  • First, mix honey with sugar, butter and egg yolks.
  • Then add the milk and gingerbread spice. Mix well.
  • Finally, slowly add sifted flour with baking soda and whipped egg whites.
  • It is best to work the dough with your hands, form a roll, wrap it in cling film and put it in the fridge to rest for at least 2 hours.
  • Roll out the rested dough into a 3-4 mm thin sheet and cut out the shapes using cutters.
  • Put the cut shapes on a baking sheet lined with baking paper and bake in a heated oven at 180°C for 8-10 minutes.
  • Before baking, you can brush them with egg to make them more shiny.
  • After baking, the gingerbread is soft. After they have cooled, you can start decorating.

Try these cream-filled gingerbread cookies. You can also fill with marmalade, chocolate spread or jam.

Dough ingredients

  • 600g plain flour
  • 4 eggs
  • 300g of powdered sugar
  • 150g of honey
  • 1 teaspoon of baking soda
  • 2 spoons of gingerbread spice

Cream ingredients

  • 125g of softened butter
  • 4 tablespoons of semi-coarse flour
  • 200 ml of milk
  • 1 tablespoon of powdered sugar
  • 1 teaspoon of vanilla extract
  • Rum (to taste)

Method

  • First, whip the egg whites until stiff peaks form. Gradually beat the sugar and egg yolks into the snow.
  • Then mix in the flour mixed with baking soda and gingerbread spice. Finally, add honey.
  • Knead the dough with your hands, wrap in cling film and refrigerate for at least 2 hours, preferably overnight.
  • Roll out the chilled dough into a sheet 3-4 mm thick and cut out the shapes using cutters.
  • Bake the cut shapes on a tray lined with baking paper for approx. 5-6 minutes at 250°C.
  • While baking, prepare the cream. Mix the flour with the milk and bring it to the boil, stirring constantly, to form a béchamel.
  • Then set aside and let cool. Next, thoroughly beat the softened butter, sugar and rum.
  • Then mix the butter cream with the béchamel mass and you have a ready cream.
  • Glue the cooled gingerbread with cream and then decorate them according to your imagination.

  • 2 eggs

Method

  • First, mix the flour with baking soda, sugar, gingerbread spice and cocoa in a bowl.
  • In a separate bowl, beat the butter, honey and eggs.

  • 2 tablespoons rum (optional)

Method

  • Pour flour into the bowl and make a well in it. Pour honey into the well, add sugar, melted butter, eggs, gingerbread spices, baking soda.
  • Then add milk, rum and finally ground nuts.
  • Mix everything with a wooden spoon and then work it with your hands. Wrap the resulting dough in foil and put it in the fridge for at least 2 hours, preferably overnight.

  • Place the shapes on a tray with baking paper and bake at 180°C for approx. 7-8 minutes until they are golden.
