Ingredients

  • 300 g English bacon cut into strips
  • 200 g of young spinach or torn young nettles
  • 250 g plain flour
  • 1 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 80 g mature cheddar (coarsely grated)
  • 2 eggs
  • 75 g of melted and cooled butter
  • 250 ml of buttermilk
  • chives – small bunch chopped

Method

  • Mix the flour, salt, baking powder, baking soda and most of the cheese in a bowl.
  • In the second bowl, beat the eggs, melted butter and buttermilk. Add to the dry ingredients and mix briefly just to combine.
  • Mix in the cooled fried bacon, coarsely chopped boiled (squeezed) spinach and finely chopped chives.
  • We put the dough in a muffin mold (one large spoon) lined with a square of baking paper.
  • Sprinkle with the remaining cheese and bake in a heated oven at 180-200 °C for 20 minutes until golden, until a skewer inserted into the center comes out clean.
  • After baking, you can brush the muffins with oil to make them shine beautifully.

  • 2.5 cups plain flour
  • less than 1 cup of sugar
  • 1 vanilla sugar
  • 2 tablespoons of cocoa

  • 1 teaspoon of salt
  • 1.5 – 1.75 cups of buttermilk (+ about 1 tablespoon for the cocoa dough)

  • 1/2 cup melted butter
  • 100 g dark chocolate cut into pieces
  • marmalade to taste

Method

  • Preheat the oven to 200°C.
  • In a bowl, mix the flour, a cup of sugar, baking powder and baking soda and salt.
  • In the second, buttermilk, eggs and butter (all at room temperature, otherwise the butter will start to solidify and form lumps – in this case, I recommend heating the mixture for a while, e.g. over steam) and finally add vanilla sugar. Gradually add the loose mixture.
  • If the dough is too stiff, you can add a little buttermilk, but it should be a bit thicker in consistency.
  • Divide the dough in half and add cocoa to one part. The mixture may still thicken, so add a spoonful of buttermilk (or milk).
  • In the prepared form lined with paper cups, put a spoonful of cocoa dough at the bottom, about a teaspoon of marmalade on top and cover it with a spoonful of vanilla dough, which we then sprinkle with pieces of chocolate and bake for 20-25 minutes.
  • I put the light up mainly for aesthetic reasons, that chocolate stands out better on a light surface than on a cocoa surface.

Buttermilk Muffins for Easter

Try this recipe for fun Easter Bunny Muffins. You can decorate them as you wish, there are no limits to your imagination.

Dough ingredients

  • 2.8 a cup of plain flour
  • 0.5 a teaspoon of salt
  • 0.5 teaspoon of baking soda
  • 225 g butter
  • 2 a cup of sugar
  • 2 teaspoon vanilla extract
  • 4 per egg, use large eggs at room temperature
  • 1 a mug of buttermilk

Ingredients for cream and decoration

  • 450 g room temperature cream cheese
  • 225 g room temperature butter
  • 1.8 teaspoon vanilla extract
  • 1 pinch of salt
  • 6 cups powdered sugar
  • white and pink marzipan

Method

  • Preheat the oven to 180°C. Line a muffin tin with paper cups and grease the top of the tin with butter so that the tops of the cups don’t stick. In a medium bowl, whisk together the flour, salt, and baking soda and set aside.
  • In another medium bowl, beat the butter with the sugar, add the vanilla and eggs and beat until light and fluffy. Gradually mix in the flour and buttermilk mixture alternately. Mix until the dough comes together nicely.
  • Use a spoon to fill the muffin tin almost to the brim. Bake for about 20-25 minutes until the muffins are golden brown. You can test with a skewer to see if they are ready. Leave to cool in the tin for about 15 minutes.
  • Before the muffins cool, prepare the cream for decoration. Mix the cream cheese, butter, vanilla and salt in a bowl. Whisk until the mixture is completely combined. Then add the sifted powdered sugar. Continue beating until the mixture is fluffy.
  • When the muffins are cool, decorate them with cream, using a butter knife or spatula. Shape ears and a nose from the marzipan on top of the cream and decorate the muffins with them.

Ingredients

  • 3 egg
  • 1/2 a cup of crystal sugar
  • 100 g of butter
  • 1.25 a cup of plain flour
  • 1 baking powder
  • 4 spoon of cocoa
  • 2 apples
  • 12 a teaspoon of yams
  • chocolate frosting (for decoration)

Method

  • Brush the whole egg with sugar. Melt the butter and slowly mix it into the eggs.
  • Then add sifted flour mixed with cocoa and baking powder. Finely grate the apples and mix them into the dough.
  • Place the cups in the muffin tin. Put about 2 tablespoons of dough into each cup. Then put a teaspoon of jam in the center and fill 2/3 of the cup with dough.
  • Bake in an oven heated to 180 °C for approx. 20-25 minutes. Let it cool and then decorate with icing and sprinkles according to your imagination.
