Ingredients

  • 500 g semi-coarse flour
  • 15 g of yeast
  • 175 ml lukewarm milk (you can add more as needed)
  • 60 g of butter
  • 50 g of granulated sugar
  • 1 egg yolk
  • pinch of salt
  • 1 egg for brushing
  • butter for wiping the baking sheet
  • honey/jams

Method

  • In a small container, prepare the yeast from a small amount of lukewarm milk, flour and a teaspoon of sugar. After you have the yeast, add it to the sifted flour with sugar and a pinch of salt.
  • Then beat the butter with the egg yolk into a foam and add to the mixture. Add lukewarm milk as needed.
  • Make a smooth and non-sticky dough and let it rise in a warm place for about an hour.
  • Cut the dough into pieces, form balls, and shape them into thin rolls (about as thin as a finger), approximately 20 cm long. Then roll them into spirals or escutcheons, chicks, knots…
  • Put them on a greased tray or on a tray with baking paper, let them rise for a while, brush with a beaten egg.
  • Bake in a preheated oven at 170°C for about 15 minutes.
  • After baking, immediately brush them with warmed honey or sprinkle with powdered sugar. Alternatively, spread jams.

Easter cakes

Ingredients

  • yeast dough (from 500 g of flour), see the first recipe
  • 1 egg
  • 200 g of ground poppy seeds
  • 250 ml of milk
  • 100 g of sugar
  • 1 vanilla sugar
  • a pinch of cinnamon
  • lemon peel

Method

  • First, preheat the oven to 180°C.
  • Roll out the dough into a rectangle and cut out circles.

  • Prepare the poppy seed filling by boiling the poppy seeds with milk until thickened, then season with sugar, cinnamon and lemon zest.

Traditional Easter bun

A typical goody for the spring holidays is undoubtedly the mazanec, which could be referred to as one of the main symbols of the Czech Easter. Prepare this Easter pastry according to us.

Ingredients

  • 2 and 1/2 cups (330 g) semi-coarse flour
  • 1/2 cup (120 ml) lukewarm milk
  • 2/3 cubes of melted unsalted butter (70 g)
  • 2 egg yolks
  • 2 teaspoons of dry yeast
  • 1/3 cup (65 g) granulated sugar
  • 2 tablespoons (35 g) raisins
  • 1-2 teaspoons of vanilla essence or 1 bag of vanilla sugar
  • 2 tablespoons (35 g) blanched almonds
  • freshly grated lemon zest from 1/2 – 1 lemon
  • pinch of salt
  • rum for dipping raisins (approx. 4-5 spoons)

Finishing ingredients

  • 1 egg
  • 1-2 handfuls of peeled almonds

Method

  • The day before baking, soak the raisins in rum and cover with a plate.
  • Then sift the flour into a large bowl, make a well in the middle and add the dried yeast, a teaspoon of sugar and cover it with half of the lukewarm milk.
  • Mix gently with a little flour to make a thin dough. Then cover the bowl with a clean tea towel and let rise in a warm place for 30 minutes.
  • After rising, add lukewarm melted butter, remaining milk, sugar, egg yolks, vanilla, salt, grated lemon peel and knead a smooth, elastic dough.
  • After processing, add chopped almonds with soaked raisins to the bowl and also work them into the dough. Set the raisin rum aside.
  • Cover the finished dough and let it rise in a warm place for another 30 minutes.
  • Line a tray with baking paper and place the bun-shaped dough on the tray. Leave to rise for another hour.
  • After the last rise, make a cross on the top using a sharp knife.
  • Preheat the oven to 180°C.
  • While baking, crack the eggs, add the raisin rum and beat with a fork. Spread the spread over the entire surface, sprinkle with slivered almonds and bake for 30 minutes.
  • After baking, test with a skewer. If the dough is stuck to the stick, let it bake for another 10 minutes.
  • Then remove from the oven and let cool.
