During the Easter season, we don’t forget soups either. And since it is already spring here on these holidays, at least according to the calendar, we will prefer lighter soups.
And what kind of soups can we prepare?
We mainly use traditional Easter ingredients, meat, eggs and especially spring vegetables. We add quality herbs to the soups.

White Easter soup
Do you have excess eggs? Make a delicious creamy soup with simple ingredients that is full of potatoes, bacon and eggs.
Ingredients
- 2 tablespoons of butter
- 2 tablespoons plain flour
- 300 g potatoes, peeled, diced
- 4 eggs, hard boiled
- 250 ml cooking cream
- fresh dill, finely chopped
- 1/2 teaspoon ground cumin
- 2 bay leaves
- vinegar and salt
- 8 slices of English bacon, sliced, dry-fried
Method
- Fry the flour in butter until light golden.
- Pour in a liter of cold water and bring to a boil.
- Add the potatoes, salt, cumin and bay leaf and cook for 20 minutes, stirring occasionally.
- When the potatoes are soft, add cream and dill.
- We take out the bay leaf.
- Season with vinegar and salt.
- Cut the eggs into quarters.
- Divide the soup into plates, add eggs and bacon, or fresh dill.

Green Easter soup
Spring holidays definitely include soup made from the first messengers of spring, which are fresh herbs – wild garlic, nettle, spinach or chives. Then it’s time for green peas and asparagus, or young courgettes.
Ingredients
- 600 g of young zucchini
- 300 ml of vegetable broth
- 60 g shallots
- 50 g of young spinach
- a teaspoon of fresh mint, wild garlic
- salt and pepper
- 50 ml of fresh cream
- 2 tablespoons of olive oil
Method
- Wash and cut the courgettes.
- Heat the oil in a saucepan, add the chopped shallot.
- Fry until golden, add zucchini and fry slightly.
- Cover with vegetable broth and cook for 15-20 minutes.
- Towards the end of the boil, add some fresh mint, wild garlic, spinach and blend with an immersion blender.
- Add fresh cream to soften, boil.
- Season with salt and pepper.
- Served with a poached egg .

Spring vegetable soup

Ingredients
- 2 eggs
- root vegetables, cleaned, coarsely grated (1 carrot, 1 parsley and a piece of celery)
- 1 carrot, sliced
- 3 potatoes, diced
- 100 g of butter
- 2 spoons of baby semolina
- 1 tablespoon chopped parsley
- a handful of fresh peas (chopped young bean pods can also be used)
- salt, pepper to taste
- 2 liters of vegetable broth
Method
- Melt the butter in a saucepan and fry the vegetables on it.
- After about 3-5 minutes, add the semolina and fry until lightly golden.
- Add both eggs and let them curdle together with the semolina-vegetable stir-fry.
- Cover with vegetable broth, add potatoes and carrots.
- Add salt and bring to a boil.
- Turn off the flame and let the soup cook gently for about 15 minutes.
- Then add the peas (bean pods) and herbs and cook everything for another 5 minutes.
- Season with salt and pepper.
- Garnish with chopped parsley.

Easter potatoes
Did you know that fresh herbs supply the human body with a large amount of vitamins and minerals ? Different herbs work against diseases, eczema, help digestion , fight flatulence , lower cholesterol and protect against heart disease.
Ingredients
- 100 g of herbs (nettles, parsley, chives, spinach, chervil)
- 200 g of potatoes
- 50 g of dried mushrooms, pre-soaked
- 1 teaspoon of buttermilk
- 1.5 l broth (vegetable or beef)
- 4 tablespoons of cooking cream
- salt and pepper
- a pinch of crushed cumin and lovage
Method
- Boil the chopped herbs briefly in the broth with salt, cumin and pepper.
- Add peeled and diced potatoes and drained mushrooms.
- Boil everything for about 10 minutes.
- Thicken the soup with stock and cook for a while.
- Then we soften it with cream
- Season with spices, reheat.
- Each portion can be decorated with chopped herbs.

All soups go well with various tasty preserves, e.g. noodles, nocturne, drippings, and rolls, to which you can again add a lot of tasty and healthy herbs.
Easter is a holiday of feasting, creating and caroling. What is the best way to spend them? You can create various decorations with the children, paint Easter eggs or bake something good. Go for a walk together, where you can prepare a varied program for the children. Hide sweets and other Easter goodies in the forest and the children will have a great time.
