Baked stuffed eggplant with mushrooms

What will we need

  • 2 eggplants
  • 100 g of yogurt
  • 100 g sour cream
  • 200 g grated hard cheese
  • 100 g of pickled mushrooms
  • olive oil
  • 2 pressed garlic cloves
  • salt
  • pepper
  • basil


  • Cut the eggplants in half lengthwise, salt them and let them sweat.
  • We squeeze out the excess water.
  • Preheat the oven to 180°C.
  • We scoop out the pulp.
  • Mix yogurt, cream, pulp and mushrooms.
  • Season with garlic, salt, pepper and basil.
  • Brush the hollowed eggplants with olive oil and fill with the mixture.
  • Bake for approximately 50 minutes.
  • We serve.

Baked eggplant with garlic

You can never have enough garlic, and that also applies to this eggplant recipe.

What will we need

  • 2 eggplants
  • 6 tomatoes
  • 30 dkg of ham or sausages
  • 2 tablespoons of butter
  • bulb
  • 3 cloves of garlic
  • salt pepper
  • basil
  • 4 slices of cheese


  • Cut the eggplant lengthwise and blanch in boiling water.
  • Then carefully remove the pulp with a spoon so as not to break the skin. Add the hollowed out pulp to the stuffing.
  • Heat the stuffing in advance, because the eggplant will only take about 15 to 20 minutes to bake.
  • Fry tomato cubes, chopped onion, garlic, eggplant cubes and ham or sausages in butter.
  • After 10 minutes of continuous mixing, remove and place in a bowl, season with soy sauce, salt, pepper, and basil.
  • Fill the eggplant halves with the prepared filling and bake for about 5 minutes, then cover the filling with a slice of cheese and bake until golden.

Eggplant with minced meat

This recipe with eggplant and minced pork, spicy garlic sauce is a humble and popular dish in Chinese cuisine.

What will we need

  • 2 long eggplants
  • pinch of salt
  • 60 g of minced pork
  • 1 teaspoon of ground ginger
  • ½ tablespoon of white wine
  • 3 tablespoons of oil
  • 2 cloves of garlic, sliced
  • 5 cm ginger, sliced
  • 2 spring onions, white half and green half split
  • 1 tablespoon of soy sauce
  • a pinch of sugar
  • ½ teaspoon of sesame oil


  • Remove the ends from the eggplant and then cut it into small pieces.
  • Transfer them to a large pot filled with water, add a pinch of salt and leave to infuse for 10 minutes.
  • Allow to drain completely.
  • Marinate the ground pork with ground ginger, a pinch of salt and white wine.
  • Heat 2 tablespoons of oil in a wok or pan and fry the aubergines for 6-9 minutes, until the aubergines are soft and wilted.
  • Remove the eggplants and leave in the oil.
  • Add the marinated pork and stir-fry.
  • Remove the meat
  • Reheat about 1 tablespoon of cooking oil in a wok and fry the white parts of the green onion, garlic, ginger until fragrant.
  • Return the eggplants to the pan along with the fried ground pork, soy sauce, sugar and sesame oil and mix well.
  • Garnish with chopped onion (green part) and serve with steamed rice.

Ajvar from roasted eggplant and peppers

Ajvar is a Serbian eggplant mixture with roasted sweet peppers, sometimes referred to as vegetarian caviar. Its smoky flavor goes well with grilled or roasted meats, especially lamb.

What will we need

  • 2 large eggplants
  • 6 large red peppers
  • Salt
  • Freshly ground black pepper
  • 1 clove of garlic, finely chopped
  • lemon juice from 1 lemon
  • 60 ml of quality olive oil
  • 1 tablespoon finely chopped parsley


  • Heat the oven to 200 degrees.
  • Pierce the eggplant along its entire length with a fork.
  • Place the washed eggplants and peppers on a baking sheet lined with baking paper and roast until their skins turn black, about 30 minutes.
  • Place the roasted vegetables in a heatproof bowl.
  • Cover them with plastic wrap and let them steam for 10 minutes.
  • Peel and discard the blackened skins, stems and seeds.
  • In a large bowl, mash or chop the vegetables, depending on how smooth or coarse you like your ajvar.
  • Season with salt and pepper.
  • Add the garlic and lemon juice and drizzle in the oil while stirring.
  • Garnish with chopped parsley for garnish and serve.

Add chopped red chillies and onions and replace the lemon juice with red wine or red wine vinegar.

Baked eggplant with cheese and tomatoes

This is a cheesy and easy to make eggplant recipe with an Italian twist. It is an excellent alternative to pasta.

What will we need

  • 1 eggplant
  • 2 tablespoons plain flour
  • 1 tablespoon of oil
  • 2 tomatoes
  • salt pepper
  • chive
  • 10 dkg sliced ham
  • 10 dkg chopped edamame


  1. Cut the eggplant into crosswise slices, coat in flour and fry in oil on both sides.
  2. Place the slices on a baking sheet and place a tomato round on each circle, season.
  3. Bake for 10 minutes, then add a slice of ham and a slice of cheese and bake until golden.
  4. Serve sprinkled with chives.

  • 2 eggplants
  • 6 tomatoes

  1. Cut the eggplant crosswise into slices 1 to 2 cm thick.
  2. We soak the slices in a salt water solution and let them soak for 30 minutes.
  3. Heat up the grill so that you can only hold your hand over it for about 5 seconds.
  4. Grill the tomatoes for 5 minutes on each side, then set aside under the lid.
  5. Grill the eggplant on each side for about 8 minutes, arrange on a tray with tomatoes.
  6. Dressing: mix oil, mustard, salt, half the amount of mint leaves.
  7. Pour the dressing over the grilled vegetables.
  8. Serve with a sprig of the remaining mint.

Eggplant spread

This recipe for eggplant spread gets its unique taste thanks to garlic and thyme.

What will we need

  • 1 eggplant
  • salt
  • pepper
  • 1 tablespoon (olive) oil

  1. Bake unpeeled cleaned eggplants in the oven until soft.

Eggplant with herbs

Simple, quick and delicious!

What will we need

  • 600 g eggplant
  • 125 ml extra virgin olive oil
  • A handful of parsley leaves n
  • 3 tablespoons of tarragon leaves
  • 2 tablespoons of lemon thyme leaves
  • 40 ml of apple cider vinegar and extra virgin olive oil
  • Salt and pepper to taste
  • Lemon pieces for decoration


  • Preheat a large non-stick skillet over high heat.
  • Cut the eggplant crosswise into 1.5 cm thick pieces.
  • Add 3 tablespoons of olive oil to the pan and once hot, add the eggplant slices, being careful not to overcrowd the pan.
  • Fry for 5 minutes on each side or until dark golden brown, then remove and place on a plate.
  • Repeat this process with the remaining eggplant.
  • Sprinkle the eggplant with herbs and drizzle with vinegar.
  • Season with salt and pepper and mix gently.
  • Put the eggplant mixture on a plate and drizzle with the remaining olive oil.
  • Serve with lemon.
