  • 200 g grated hard cheese

Method

  • Cut the eggplants in half lengthwise, salt them and let them sweat.
  • We squeeze out the excess water.
  • Preheat the oven to 180°C.
  • We scoop out the pulp.
  • Mix yogurt, cream, pulp and mushrooms.
  • Season with garlic, salt, pepper and basil.
  • Brush the hollowed eggplants with olive oil and fill with the mixture.

Baked eggplant with garlic

  • 2 eggplants
  • 6 tomatoes
  • 30 dkg of ham or sausages
  • 2 tablespoons of butter

Method

  • Cut the eggplant lengthwise and blanch in boiling water.

Eggplant with minced meat

This recipe with eggplant and minced pork, spicy garlic sauce is a humble and popular dish in Chinese cuisine.

What will we need

  • 2 long eggplants
  • pinch of salt
  • 60 g of minced pork
  • 1 teaspoon of ground ginger
  • ½ tablespoon of white wine
  • 3 tablespoons of oil
  • 2 cloves of garlic, sliced
  • 5 cm ginger, sliced
  • 2 spring onions, white half and green half split
  • 1 tablespoon of soy sauce
  • a pinch of sugar
  • ½ teaspoon of sesame oil

Method

  • Remove the ends from the eggplant and then cut it into small pieces.
  • Transfer them to a large pot filled with water, add a pinch of salt and leave to infuse for 10 minutes.
  • Allow to drain completely.
  • Marinate the ground pork with ground ginger, a pinch of salt and white wine.
  • Heat 2 tablespoons of oil in a wok or pan and fry the aubergines for 6-9 minutes, until the aubergines are soft and wilted.
  • Remove the eggplants and leave in the oil.
  • Add the marinated pork and stir-fry.

Ajvar from roasted eggplant and peppers

Ajvar is a Serbian eggplant mixture with roasted sweet peppers, sometimes referred to as vegetarian caviar. Its smoky flavor goes well with grilled or roasted meats, especially lamb.

What will we need

  • 2 large eggplants
  • 6 large red peppers
  • Salt
  • Freshly ground black pepper
  • 1 clove of garlic, finely chopped
  • lemon juice from 1 lemon
  • 60 ml of quality olive oil
  • 1 tablespoon finely chopped parsley

Method

  • Heat the oven to 200 degrees.
  • Pierce the eggplant along its entire length with a fork.
  • Place the washed eggplants and peppers on a baking sheet lined with baking paper and roast until their skins turn black, about 30 minutes.
  • Place the roasted vegetables in a heatproof bowl.
  • Cover them with plastic wrap and let them steam for 10 minutes.
  • Peel and discard the blackened skins, stems and seeds.
  • In a large bowl, mash or chop the vegetables, depending on how smooth or coarse you like your ajvar.
  • Season with salt and pepper.

This is a cheesy and easy to make eggplant recipe with an Italian twist. It is an excellent alternative to pasta.

  • 1 eggplant
  • 2 tablespoons plain flour
  • 1 tablespoon of oil

What will we need

  • 600 g eggplant
  • 125 ml extra virgin olive oil
  • A handful of parsley leaves n
  • 3 tablespoons of tarragon leaves
  • 2 tablespoons of lemon thyme leaves
  • 40 ml of apple cider vinegar and extra virgin olive oil
  • Salt and pepper to taste
  • Lemon pieces for decoration

Method

  • Preheat a large non-stick skillet over high heat.
  • Cut the eggplant crosswise into 1.5 cm thick pieces.
  • Add 3 tablespoons of olive oil to the pan and once hot, add the eggplant slices, being careful not to overcrowd the pan.
