Eggplant tartare (vegan) with garlic

Ingredients:
- 2 eggplants
- olive oil
- salt
- pepper
- a teaspoon of finely chopped shallot
- 1 clove of garlic (pressed)
- 1 teaspoon of chopped basil leaves
- 1 teaspoon fresh chopped parsley
- 1 teaspoon chopped chives
Method:
- Cut the eggplants lengthwise, scoop out the insides, mix with olive oil, salt and pepper and put the mixture back into the eggplants.
- Put the baking in a preheated oven at 195 °C.
- Bake for about 30 minutes, then scrape out all the insides and discard the skin.
- Stir in shallots, garlic, herbs and you can serve.

Vegetarian eggplant and beetroot tartare
This recipe can charm everyone who likes hot food. The mixture of aubergine, beetroot, herbs and hot peppers will spin the taste buds to the maximum.
Ingredients:
- 2 red beets
- 2 eggplants
- 20 g of pressed garlic
- 10 g finely chopped shallots
- 80 g hot peppers
- 80 g of feta cheese
- 1 dl of olive oil
- 60 g of balsamic vinegar
- salt and pepper
- watercress
Method:
- Cut the eggplants lengthwise into 4 parts, wash the beets and cut off the roots.
- Make the marinade by mixing half of the olive oil, salt, garlic and pepper.
- Soak eggplant and beet in this mixture. Wrap the beets in aluminum foil.
- Bake in a preheated oven at 200°C.
- Take the eggplant out of the oven after 20 minutes, let the beets bake for another 30-40 minutes.
- Scoop out the inside of the eggplant from the skin and blend.
- Once the beets are soft, peel them and put them in a blender.
- Season with balsamic vinegar, salt and pepper, add the shallot and soften with the rest of the olive oil.
- Serve the mixture garnished with chopped hot peppers, pieces of feta cheese and watercress.

Eggplant and tomato spread
Tomato and eggplant make a great pair. Prepare these two ingredients in the form of a spread or eggplant tartare and enchant your loved ones. Serve it on a piece of crispy toast smeared with oil and garlic.
Ingredients:
- 1 medium-sized eggplant
- 1 large tomato

Ingredients:
- 1 eggplant
- 1 bunch of thyme
- 1 bay leaf
- 3 tablespoons of capers
- salt
Tapenade:
- 1 tablespoon capers
- 1 shallot
- 4 tablespoons of olive oil
- 4 tablespoons of black olives
- salt
To serve:
- 4 capers
- dried tomatoes
Method:
- Wash the eggplant and cut it into cubes.
- Cook in boiling water for 1 minute, along with a bunch of thyme and a bay leaf.
- Remove the boiled eggplant from the pot with a slotted ladle and put it in cold water to cool.
- Fry the chopped capers in the deep fryer for 2 minutes at 180°C.
Tapenade:
- Cut the shallot into slices and place in a blender with all the ingredients and blend.
- Mix 1 tablespoon of tapenade with the eggplant and stir.
- Serve the eggplant tartare on a plate, using a mold to form a lump, garnish with capers, dried tomatoes and the rest of the tapenade.
