What will we need
- 2 tablespoons of olive oil
- 6 tortillas
- 175 g of cheese, grated
- 250 g of shredded chicken
- 2 medium tomatoes, sliced
- 1 large ripe avocado
- 2 teaspoons lime or lemon juice
- a handful of chopped coriander
- 4 spoons of sour cream
Method
- Start by making a simple guacamole.
- Split, pit, peel and slice the avocado, then mash with lime or lemon juice and some spices.
- Heat a frying pan over medium heat, brush with 1 teaspoon of oil and add the tortilla.
- Sprinkle half of the tortilla with a handful of cheese, then add the chicken and a few slices of tomato. Season with a little salt and pepper.
- Bake for a while to melt the cheese, then flip and bake until the tortilla is crispy.
- Remove the tortilla from the pan and cut into quarters.
- Serve with guacamole and sour cream, sprinkled with a little cilantro.

- 3 spoons of mayonnaise

Method

- 500 g plain wheat flour (you can also use half whole wheat flour)
- 1 tablespoon of salt
- 3/4 cup olive oil
- 3/4 cup water
- 1 teaspoon of baking powder
Method
- Mix 2/3 of the flour with salt, water and olive oil in a bowl.
- We will create a smooth and elastic dough.
- Then gradually add the remaining flour and mix again into a smooth dough.
- Divide the dough into 12-16 equal parts and roll each into a very thin pancake on a lightly floured rolling pin.
- Heat a pan on the stove to a medium-high temperature and briefly fry the tortillas on it on both sides until light golden.
