Fired Up! Fiesta Brunch

Use our fan favorite Enchilada dip and Fiesta seasoning to cook up a hearty and delicious brunch experience for you and your guests. This is not only a delicious medley of flavors but packs a generous protein and fiber punch.

  • Prep Time : 15 minutes
  • Cook Time : 20 minutes
  • Yield : 6 - 8 servings



Minimum 1 Hour Ahead of Serving : Your Enchilada Sauce
  1. Combine softened cream cheese, sour cream and Enchilada dip mix together. Beat until fully combined. Refrigerate at least 1 hour before sering
For Your Pepper & Onion Saute
  1. Chop your peppers and onions. Toss in your olive oil and fiesta seasoning. Add salt to taste
  2. Saute in a large skillet on Medium heat until soft for 5 - 7 minutes, stirring occasionally.
  3. Reduce to low and continue to saute for an additional 3 - 4 minutes until soft but slightly crisp
For Your Egg Scramble
  1. In a large bowl, crack your eggs and whisk until combined and light
  2. In a large skillet, medium heat add your butter until slightly melted and coat your pan.
  3. Pour your egg scramble into the skillet and stir to scramble your eggs.
  4. Toss salt and pepper on top once scrambled to perfection.
To Plate :
  1. plate your eggs and peppers side by side on your plate.
  2. Warm your Enchilada sauce in the microwave until slightly warm and easy to spoon onto your eggs. Spoon your Enchilada sauce onto your eggs
  3. Toss avocado slices and cheddar cheese on top of eggs
  4. Repeat with each plate and serve extra enchilada sauce on the side with sliced tomatoes and tortilla chips
