Cottage cheese dumplings with strawberries
Do you follow a lifestyle and have a taste for strawberry dumplings?
Make these from tasty and healthy curd dough.
What will we need
- 500 g of soft cottage cheese
- 160 g of baby semolina
- 2 egg yolks
- 1 vanilla sugar
- pinch of salt
- 100 g of strawberries
For the sauce
- 400 g of strawberries
- lemon juice
- sugar to taste
Method
- Mix the cottage cheese with the yolks, add semolina, salt and mix.
- A stiffer, slightly sticky dough will form.
- We make small patties with our hands, into which we put the strawberry.
- Make round dumplings and dip them in boiling salted water.
- We cook for 8-10 minutes.
- Let’s prepare the sauce.
- Cut the strawberries into small pieces, mix with sugar and lemon juice.
- Cook for about 5 minutes until soft, you can blend with a stick blender.
- We serve strawberry dumplings sprinkled with sugar, we can add grated chocolate and butter, we add strawberry sauce.

Strawberry jam
What could be better than spreading fresh bread with sweet homemade strawberry jam.
What will we need
- 0.5 kg of strawberries
- 0.4 kg of granulated or crystal sugar
- juice of 1 large lemon
Method
- Wash the strawberries well.
- Put them in a bowl and cover them with half of the sugar.
- Blend with a hand mixer into a thicker slurry.
- Strain the entire mixture through a strainer into a saucepan or pan.
- We start to boil the juice in a saucepan on medium heat, after about five minutes we add the rest of the sugar.
- Stir and cook for another ten minutes.
- Sometimes we collect foam from the surface.
- Before the end of boiling, add lemon juice to the strawberry marmalade.
- Fill the marmalade into sterilized jars, close with lids, turn the jars upside down.

Summer strawberry shortcake
Strawberry cake is the best summer refreshment for a barbecue or picnic.
What will we need
- 300 g of fresh strawberries
- 1 line cake dough
- 125 g of fatty soft cottage cheese
- 1/8 butter
- 100 g of powdered sugar
- 1 Oetker gelatin
- 80 g of granulated sugar
Method
- Bake the cake body from the Line dough in the oven.
- We rub the softened butter with sugar into a smooth cream, into which we work the cottage cheese.
- Cut the strawberries in half lengthwise.
- Spread the cake body with cream and cover with strawberry halves.
- Prepare the gelatin according to the instructions on the bag.
- Spoon the still warm gelatin onto the cake in a thin layer, then evenly spread the rest of the gelatin and let it cool.
- Leave the cake in the cold for at least 2-3 hours so that the body absorbs the moisture of the cream.

Yeasted strawberry dumplings
Fruit dumplings are a typical Czech dish that can be eaten as a main course or dessert. Can be made with all types of fruit. However, strawberries are a favorite!
What will we need
- 250 g of cottage cheese
- 200-250 g semi-coarse flour
- 1 egg
- pinch of salt
- strawberries
Method
- Mix the cottage cheese, flour, eggs and salt together and make a firm elastic dough.
- Roll out the dough on a floured surface to a thickness of about 5 mm.
- Cut into squares, place a piece of fruit on top of each square and shape the dough around the fruit until it is completely covered and shaped like a ball.
- When you are done with the first batch, gather the remaining dough into a ball and roll again.
- Meanwhile, bring a large pot of water to a boil (it should be about two-thirds full).
- When it starts to boil, put in the fruit dumplings – not too many at once, as they need to breathe a little.
- Bring back to a boil.
- When they float to the top, continue cooking for about 3-5 minutes.
- Scoop out with a slotted spoon and serve with your favorite toppings.

Strawberry bubble wrap
Loaded with fresh strawberries, this strawberry bubblegum is one of the easiest and tastiest desserts you’ll ever make.
What will we need
- 180 g plain flour
- 1½ teaspoons baking powder
- ½ teaspoon of salt
- 6 tablespoons of unsalted butter, softened
- 120 g of sugar
- 1 large egg
- 1 teaspoon of vanilla extract

Method
- Preheat the oven to 180 degrees and grease the mold with butter.

- Gradually add the flour mixture alternately with the milk and beat on low speed until smooth.
- Transfer the dough to the prepared form and smooth it with a spatula. Stack the strawberries cut side down on top so that they completely cover the dough
- Sprinkle the strawberries with 2 tablespoons of sugar.
- Bake for ten minutes, then reduce the temperature to 160 degrees and bake until the cake is lightly golden and a skewer comes out clean, about an hour.
- Leave the cake to cool in the tray.

No-bake strawberry shortcake
Don’t you love heavy butter cakes on warm days? You will like a chilled unbaked strawberry cake full of fresh strawberries.
What will we need
On the corpus
- 2 packs of cocoa BeBe cookies
- 130 g of butter
For filling
- 1 whipping cream
- 250 g of mascarpone
- 250 g of fatty soft cottage cheese
- powdered sugar to taste
- strawberries
- clear gelatin
Method
- Combine the crushed biscuits with the melted butter, mix, and press the resulting mass into the bottom of the cake tin.
- Whip the cream with sugar, add the mascarpone and cottage cheese, and mix everything together.
- Apply the resulting cream to the body.
- Cut the washed strawberries in half, place them on top of the cake and cover with clear cake gelatin.
- Let it sit in the fridge until the next day.

Cheesecake with strawberries
This strawberry cheesecake recipe is amazing! This creamy and light classic cheesecake recipe is finished with a sweet strawberry frosting.
What will we need
On the corpus
- 200 g crushed graham crackers
- 50 g granulated sugar
- 6 tablespoons of unsalted butter, melted
For filling
- 900 g of cream cheese
- 260 g of granulated sugar
- 230 g sour cream
- 1 tablespoon of vanilla extract
- ¼ teaspoon salt
- 4 large eggs, lightly beaten
For the sauce
- 400 g of whole strawberries, cut into cubes
- 2 tablespoons of cornstarch
- 200 g of granulated sugar
- 2 teaspoons of vanilla extract
- ⅛ teaspoon of salt
- 330 g of finely chopped strawberries
Method
- Preheat the oven to 180 degrees.
- Wrap the outer bottom of the mold tightly in aluminum foil.
- Mix the graham crackers, sugar and melted butter. Press the crumb mixture and bake for 10 minutes.
- Reduce the oven temperature to 130 degrees.
- In a large bowl, beat cream cheese until smooth and creamy.
- Add sugar and sour cream, beat until well combined.
- Add vanilla and salt, beat on low speed until smooth.
- Gently fold in the eggs until combined. Pour the batter onto the prepared crust.
- Fill a baking pan with a few inches of boiling water and place the cheesecake in the center.
- Bake for 1 hour or until edges are set and center jiggles lightly.
- Turn off the oven, leave the cheesecake in the water bath in the oven for another hour.
- Remove the cheesecake from the water bath and place on a wire rack. Run a small knife around the outside edge of the cheesecake to release it from the pan and let it cool at room temperature for about 1 ½ hours.
- Cover and refrigerate for at least 4 hours or overnight.
If we want to prepare some other goodies from fresh strawberries, then we can use them in cups, various strawberry desserts, or make strawberry mousse or strawberry cocktail from them.

Homemade strawberry syrup
Fresh strawberry syrup is one of the best pancake toppings!
What will we need
- 1 kg of fresh strawberries, peeled and cut into small cubes
- 1 tablespoon fresh lemon juice
- 80 g of granulated sugar
- 60 ml of water
- 10 g of cornstarch
Method
- In a medium saucepan, bring the strawberries, lemon juice, sugar, and 2 tablespoons water to a boil over medium-high heat, stirring frequently.
- Reduce heat slightly and simmer until juices are released and strawberries are tender, about 5-6 minutes, stirring occasionally.
- In a small bowl, whisk together the remaining 2 tablespoons water and cornstarch until smooth.
- Pour the cornstarch mixture into the strawberry mixture and cook, stirring constantly, for 1 minute.
- Remove from the heat and let cool slightly.
- Store in an airtight container in the refrigerator for up to 3 days.

Why eat strawberries?
The most abundant vitamins and minerals in strawberries are:
Vitamin C – strawberries are an excellent source of vitamin C, an antioxidant essential for immunity and skin health.
Manganese – This trace element, often found in large amounts in whole grains, legumes, fruits and vegetables, is important for many processes in your body.
Folate (vitamin B9) – is important for normal tissue growth and cell function – and essential for pregnant women and the elderly.
Potassium – involved in many basic body functions such as blood pressure regulation.
To a lesser extent, they also contain iron, copper, magnesium, phosphorus and vitamins B6, K and E.
Strawberries contain high amounts of beneficial plant compounds and antioxidants such as pelargonidin, ellagic acid, ellagitannins and procyanidins.
