Method

  1. Grind red or black currants in a kitchen blender. Then let the mixture drip through the cloth.
  2. To cook the marmalade, take 1 kg of juice (a little less than a liter) into a pot, add a bag of icing sugar and 2 tablespoons of granulated sugar and mix well while cold. After mixing, bring to a boil.
  3. Boil slowly for about 10 minutes, stirring constantly, and remove the foam.
  4. After cooking, immediately pour into prepared glasses, close and turn upside down for about 5 minutes.
  5. Then we turn it back again so that the marmalade does not remain on the lid.
  6. We serve it on morning bread, in white yogurt or in cottage cheese.

Currant crumb cake

In cakes, currants are excellent and popular for their spicy taste.

What will we need

  • 250 g semi-coarse flour
  • a cup or two of currants
  • 160 g of granulated sugar
  • 1 packet of baking powder
  • 3 eggs

Method

  1. Mix flour, baking powder and sugar.

Vegan cake with currants

This delicious vegan and gluten-free redcurrant cake can be one of the many creations of this redcurrant summer.

What will we need

On the crust

  • 200 g of rice flour
  • 60 g of cashew butter
  • 60 ml of dark maple syrup
  • 2 teaspoons of vanilla extract

For filling

  • 200 g of red currants
  • 3 tablespoons of dark maple syrup
  • 1 tablespoon of tapioca starch
  • juice of half a lemon
  • ½ teaspoon of cinnamon

Method

  • Preheat the oven to 180 degrees.
  • Grease the cake pan.
  • Process all the pie crust ingredients in a food processor until combined into a batter.
  • Knead the dough lightly into a ball.
  • Divide the dough in half and roll each into a ball.
  • Take one of the balls and flatten it into a pancake with your hands.
  • Place in the prepared cake tin and press it into the tin with your hands.

Currant syrup

The recipe for redcurrant syrup is easy to prepare and can make a delicious refreshing drink. Learn how to make this delicious syrup at home with minimal ingredients and effort.

What will we need

  • 3 kg of currants
  • 3.5 kg of sugar
  • 10-15 g of citric acid
  • kitchen thermometer

Method

  1. Stem the currants, wash them, mash them with a fork and immerse them in water in a large container. Let it sit until the next day.
  2. Strain through cheesecloth or cheesecloth and squeeze.

Currant juice

Making currant juice is as simple as it gets. Peel the currants, boil them, sweeten them and pour them into bottles.

What will we need

  • 3-4 kg of red currants
  • 2.2 liters of water
  • 250 g of sugar, stevia or erythritol

Method

  • Place the currant berries in a large pot.
  • Pour water into the pot so that the berries are covered.
  • Add a sweetener, use erythritol for a sugar-free version. Honey or regular sugar also works well.
  • Cook the mixture for about 5-10 minutes to soften the berries.
  • Taste the juice and add more sweetener if desired.
  • Let the mixture cool.
