How to fry donuts

There must be enough fat so that the fried shapes can float freely and are half submerged in the fat. That’s the secret to the white stripe on donuts.

We put them in hot fat, but we control the temperature so that everything is fried well.

First, fry them covered, this will puff up the dough balls, then turn them over, uncover them and finish frying them.

We only turn with a spatula, never poke into any piece , because the dough would fall.

Wrap the fried donuts:

  • in sugar
  • in sugar with cinnamon
  • cocoa
  • grated coconut

The most popular donut fillings

We fill the donuts:

  • thicker jam
  • thickened jam
  • thickened cottage cheese
  • thick boiled pudding
  • Nutella filling
  • chocolate spread

Marmalade is most often used:

  • apricot
  • strawberry
  • sour cherry

But the less common ones are also suitable:

  • lemon
  • orange
  • rosehip

The density of the filling is important so that the filling does not leak and burn during frying. A larger and disproportionate amount of filling can cause the pastry to be too heavy and not puff up enough when fried and thus lack fluffiness.

Final tip:

If you are afraid that the dough will not rise, add a little rum to it, which makes the dough lighter when it rises and reduces the amount of fat that the dough absorbs during frying.
