What will we need

  1. 3 tablespoons butter (divided)
  2. 2 eggs (beaten)
  3. 2 medium carrots (peeled and diced)
  4. Small onion (diced)
  5. 100 g of frozen peas
  6. 3 cloves of garlic (pressed)
  7. Salt
  8. black pepper
  9. 450 g cooked rice (preferably short-grain white rice)
  10. 3 spring onions (thinly sliced)
  11. 3-4 tablespoons of soy sauce
  12. 2 teaspoons oyster sauce (or fish sauce)
  13. ½ teaspoon of sesame oil

Method

  1. Heat ½ tablespoon of butter in a large skillet over medium-high heat until melted
  2. Add the beaten eggs and cook, stirring occasionally, until they are mixed
  3. Take the eggs out and transfer them to a separate plate
  4. Add another tablespoon of butter to the pan and heat until melted
  5. Add carrots, onions, peas and garlic and season with a generous pinch of salt and pepper
  6. Fry for about 5 minutes until the onions and carrots are soft
  7. Increase heat to high, add remaining butter and stir until melted
  8. Immediately add the cooked rice, green onions, soy sauce and oyster sauce and stir until combined
  9. Continue to sauté for another 3 minutes to toast the rice, stirring occasionally

This recipe for delicious Pad Thai Gai comes straight from Thailand. They contain stir-fried noodles with chicken in a spicy sauce along with a sprinkling of chopped nuts and basil. The noodles are sautéed until they have that classic sticky consistency. You will love the sweet and sour balance of flavors in the delicious sauce.

What will we need

  1. 220 g of rice noodles
  2. 250 g chicken breasts or thighs (boneless, diced)
  3. 2 tablespoons of vegetable oil
  4. 3 cloves of garlic (pressed)
  5. 100 g of grated carrot
  6. 100 g of chopped Chinese cabbage
  7. Egg
  8. 150 g of fresh bean sprouts
  9. 75 g crushed or roughly chopped peanuts

For the sauce

  1. 150 ml of chicken stock

  1. Cook the rice noodles until they have the right consistency, i.e. they are al-dente to the bite
  2. Drain the noodles and rinse them with cold water so they don’t stick
  3. Mix all the ingredients for the sauce together in a bowl
  4. Drizzle 2 tablespoons of the sauce over the chopped chicken pieces and mix
  5. Heat a large frying pan over medium-high heat
  6. Drizzle it over and add the garlic and fry it for about 1 minute, stirring constantly
  7. Add the chicken and fry for another 2 minutes, stirring constantly
  8. Add carrots and cabbage
  9. If the mixture is too dry, add a little sauce to the pan

This vegan fried rice recipe is perfect as a weeknight dinner! It’s full of plant-based protein, thanks to oven-baked tofu, lots of veggies, and rice! If you have leftover rice from the previous days – this is a great recipe to use up. It’s actually better if you use leftover (cooked and cooled) rice.

What will we need

  1. 400 g firm tofu
  2. 2 tablespoons oil (+ 1 teaspoon oil)
  3. 200 g of chopped carrots
  4. 200 g of green peas
  5. 150 g of chopped spring onions
  6. 2 teaspoons of minced garlic
  7. 2 teaspoons of ground ginger
  8. 500 g cooked brown rice (approx. 250 g uncooked)
  9. 3 spoons of soy sauce
  10. A spoonful of vegan mushroom sauce
  11. A teaspoon of chili powder
  12. A teaspoon of rice vinegar
  13. 2 teaspoons of sesame oil
  14. Sesame seeds (for serving)

Method

  1. Cook the rice according to the instructions on the package and set it aside to cool
  2. Heat the oven to 200 degrees
  3. Cut the tofu into slices and wrap it in a clean kitchen towel
  4. We put something heavy on it (like a cast iron pan), let it press for about 15 minutes
  5. Then cut the tofu into 2 centimeter cubes
  6. Mix it with 1 teaspoon of oil
  7. Spread it on a baking sheet lined with baking paper and season with salt
  8. Bake the tofu in the oven until golden, so that it is firm to the touch, about 30 minutes
  9. Meanwhile, heat a frying pan over medium-high heat
  10. Add 1 tablespoon of oil and add carrots, peas and half of the onion
  11. Cook everything together for about 5 minutes until the carrots are soft

Fried rice can be vegetarian or made with meat, and it’s the perfect dish to use up leftovers from the day before and turn them into something new and delicious!

Each variation on fried rice has its own ingredients and cooking styles. The most popular variants in classic Chinese cuisine are in combination with fried egg, chicken and fried vegetables.

From China, this dish spread very quickly all over the world and found its place especially in Chinese streets in America, Great Britain and India. Here they have become very popular in Asian restaurants and are served as a specialty of the local cuisine.

The history of this dish has a deep history. It’s actually an old dish that was invented as a way to use up leftover food. It is said to be a dish that originates from the Sui Dynasty in AD 589-618 and specifically from the city of Yangzhou and is known as Yangchow.

Rice is usually steamed or boiled before preparation itself. It is recommended to use older rice, which is much more dry than fresh rice, so rice that is 2-3 days old is an excellent choice.

Main ingredients
