- 6 cups plain flour
- 1/4 cup butter
- 2 cups of sugar
- 3 eggs
- 1 cup of honey
- 3/4 teaspoon salt
- 5 and 1/2 teaspoons of baking soda
- 2 and 1/2 teaspoons cloves
- 2 and 1/2 teaspoons of cinnamon
- 2 teaspoons of ginger
Method:
- Mix all ingredients in a food processor.
- Form the dough.
- Wrap the dough in cling film and place in the fridge for 30 minutes.
- Then form balls from the dough and roll them in granulated sugar.
- Place the ball on a sheet of baking paper and use the bottom of the cup to flatten it.
- Bake in an oven preheated to 170°C for approximately 8-10 minutes.
- After baking, decorate with the topping of your choice.

Ginger cookies with orange glaze
Tasty soft candy with an interesting combination of flavors.
Ingredients:
- 1 and 3/4 cup plain flour
- 1/2 cup butter
- 3/4 cup sugar
- 2 tablespoons of honey
- 1 egg
- 1/2 teaspoon of pure vanilla extract
- 1 and 1/2 teaspoons of ground ginger
- 2 teaspoons of baking powder
- 1/8 teaspoon salt
- 1/2 teaspoon ground cinnamon

Glaze
- 2 cups powdered sugar
- 1 teaspoon of pure vanilla extract
- 3 tablespoons of milk

Method:
- Preheat the oven to 200°C.
- Cream the butter, sugar and honey in a large bowl.
- Add eggs, vanilla and beat.
- In a separate bowl, combine the remaining dry ingredients, then carefully fold them into the wet mixture until well combined.
- Roll the dough into balls with your hands and place them on baking sheets lined with baking paper.
- Bake the ginger cookies for 8-10 minutes or until the surface is firm and begins to crack.
- Allow cookies to cool completely before frosting.
- Mix the ingredients for the glaze in a bowl and then dip each piece of candy upside down into the bowl with the glaze or brush it with a thin layer of the glaze using a pastry brush.
- Let the icing harden.

Method:
- Preheat the oven to 170°C and line the trays with baking paper.

- Using a hand mixer, cream together the butter and brown sugar.
- Add the egg and then beat in the orange zest and vanilla extract as well.
- Reduce the mixer speed to low and gradually add the flour mixture to the wet mixture until well combined.
- Place the resulting dough in a cookie press and select the desired shape.
- Press the dough onto the prepared trays.
- If using decorative sugar, sprinkle a small amount of sugar over the ginger cookies before placing them in the oven.
- Bake for approximately 10-12 minutes.

Unbaked cookies made of ginger, nuts, coconut and dates
A hearty and energy-packed cookie that will be ready in just a few minutes.
Ingredients:
- 10 dates
- 3/4 cup raw cashews
- 1 cup shredded coconut
- 3 cm of ginger root
- 2 lemons
- 1/2 teaspoon of salt
- 1/2 teaspoon of vanilla extract
- 1/4 cup oatmeal
Method:
- Toast the cashews either in the oven for about 10 minutes or in a pan.
- In the same pan, roast half a cup of grated coconut and mix well.
- Remove the pits from the dates.
- Place the cashews, dates and coconut in a food processor.
- Grate the zest of one lemon and add to the mixture.
- Cut the lemon in half and squeeze some juice over the mixture as well.
- Finely grate a piece of ginger and add it to the mixture.
- Finally, add salt, vanilla extract and oatmeal.
- Pulse a few times, then let the food processor run for 30 seconds or a little longer.
- The mixture should start to hold together, but small bits of nuts should still be visible.
- Taste the mixture and adjust the seasoning if necessary. Add more ginger or lemon zest for a stronger flavor. If the mixture is too dry, add more juice.
- Shape the mixture into balls with your hands.
- Mix the rest of the grated coconut with the lemon peel from the second lemon and coat each ball in their mixture.

- 2 and 3/4 cups plain flour
- 1/4 cup

- Use the cutters to cut out the gingerbread men.
- Do the same with the other half of the dough.
- Bake the ginger cookies for approximately 8-10 minutes.

Ginger Christmas stars
Do you have a weakness for candied ginger? With this recipe, you can easily add it to cookies.
Ingredients:
- 75 g of butter
- 1 tbsp of honey
- 70 g of sugar
- grated zest of 1/2 lemon
- 1 teaspoon of ground ginger
- 30 g of candied ginger
- 130 g spelled flour
- 4 tablespoons of milk
- 1 egg white
Method:
- Combine the butter, honey, sugar, grated lemon zest and ground ginger in a bowl and mix or whisk vigorously until a foamy mixture forms.
- Gradually add flour, milk and chopped candied ginger.
- Wrap the dough in foil and let it cool in the fridge for 2 hours.
- Preheat the oven to 180°C.
- Take the dough out of the fridge and roll it out with a rolling pin.
- Use cutters to cut out stars or other shapes from it.
- Place on a tray lined with baking paper.
- Before placing in the oven, brush the ginger cookies with egg white so that they shine beautifully after baking.
- Bake for approximately 15 minutes.

Ingredients:
- 150 g oat flakes
- 50 g of almonds
- 4 tbsp spelled flour
