Pumpkin soup with ginger and coconut milk
This Pumpkin Ginger Coconut Milk Soup is delicious and super nutritious. A slice of fresh ginger adds a lovely twist to the sweet coconut and pumpkin base. Enjoy it!
INGREDIENTS
- 1 kg of pumpkin
- 500 ml of chicken or vegetable broth
- 250 ml of coconut milk
- 20 grams of fresh ginger
- 1 teaspoon of ground cumin
- 1/2 teaspoon ground cinnamon
- 2 tablespoons of extra virgin olive oil
- salt and pepper to taste
METHOD
- Preheat the oven to 180 degrees Celsius and line a large tray with baking paper.
- Peel the pumpkin and cut it into pieces of the same size.
- Place on a tray, drizzle with olive oil and mix with your hands so that it is well coated in the oil.
- Bake the pumpkin in the oven for approximately 45 minutes, or until it is very soft and starting to caramelize around the edges.
- While the pumpkin is baking, peel the ginger and prepare the rest of the ingredients.
- Place the baked pumpkin, stock, coconut milk, ginger, cumin and cinnamon in a blender.
- Blend until the mixture is super smooth.
- Season with salt and pepper to taste.

Ginger tea

INGREDIENTS
- 1 ginger root about 5 cm long
- 1 liter of water
- 4 spoons of honey
- 1/2 lemon
- a handful of mint
METHOD
- Peel the root and grate it.
- Pour the grated ginger into the pot, cover with water and cook for 10 minutes.
- Strain the tea and adjust the taste with honey, lemon and mint.
- Serve warm.

Beef with ginger
You could easily serve this dish in a fancy restaurant and it will definitely become your favorite. Crispy fried beef in a delicious sweet-spicy soy sauce with fresh ginger, garlic and chili your whole family will love!
INGREDIENTS
For the dough:
- 1 cup cornstarch
- ¼ cup plain flour
- 1 teaspoon of white pepper
- ¾ cup of water
- 1 large egg
For meat:
- 500 g flank steak, cut into thin strips
- vegetable oil, as needed
For the sauce:
- 1/3 cup soy sauce
- 1/3 cup cane sugar
- 1/4 cup water
- 2 tablespoons of dark soy sauce
- 2 tablespoons of rice vinegar
- 1 teaspoon red chili flakes
For frying:
- 1 tablespoon of sesame oil
- 5 cloves of garlic, pressed
- 1 tablespoon of freshly grated ginger
- 1 tablespoon of sesame seeds
- 2 spring onions, thinly sliced
METHOD
- In a large bowl, whisk together the cornstarch, flour and white pepper.
- Add water and eggs and beat until the dough is smooth.
- Mix the beef noodles with the batter until they are completely coated.
- Fill a large pan with 5 cm of oil.
- Heat the oil to 177 degrees Celsius.
- Add the beef noodles to the hot oil in batches.
- Mix with a fork and break up the noodles during cooking.
- Fry the beef noodles for 3 to 4 minutes, or until golden brown.
- Remove the beef noodles with a slotted spoon and let them drain on a tray lined with paper towels.
- In a medium bowl, whisk together soy sauce, water, dark soy sauce, vinegar, cane sugar and chili.
- Set the sauce aside.
- Heat the sesame oil in a large pan over medium-high heat.
- Add the garlic and ginger and sauté for 1 minute or until fragrant.
- Pour the sauce into the pan and cook, stirring constantly, for 1 to 2 minutes until it thickens slightly.
- Add the fried beef noodles to the pan and stir to coat them in the sauce.
- Cook the beef and sauce for 1 to 2 minutes, until the sauce has thickened and completely covers each strip of beef.
- Garnish the meat with sesame seeds and spring onions.

Homemade candied ginger
Make your own homemade candied ginger! Its taste is many times better than from the store, fresher and more lively. It’s great on its own as a snack or you can add it to various pastries. And as a bonus, you’ll be left with a great syrup that’s absolutely phenomenal in drinks!
INGREDIENTS
- 500g peeled ginger, thinly sliced (by hand or using a mandoline – it’s much easier)
- pinch of salt
- 2 cups white granulated sugar
- extra sugar for coating
METHOD
- Put the chopped ginger in a medium saucepan and cover with water.
- Bring to a boil and cook for 30 minutes.
- Reserve 1/2 cup of the ginger water and then drain the ginger slices.
- Put the chopped ginger back into the pot with the reserved ginger water, sugar and a pinch of salt.
- Bring to a boil, reduce heat to medium and cook, uncovered, for 35-40 minutes or until a thermometer reads 107 degrees Celsius.
- Strain the ginger in a colander over a bowl to catch the syrup, which we can keep in the drinks.
- We spread the ginger slices on a cooling rack, which we put on a baking sheet and separate the slices as best as possible.
- Leave to cool for 2 hours.
- Put the ginger slices in a bowl with sugar so that they are completely coated.
- Then place the ginger back on the cooling rack to rest overnight.
- Store in an airtight container in a dark and cool place.
- It lasts for several months.

Ginger lemonade
Enjoy this refreshing ginger lemonade, perfect for hot summer days.
INGREDIENTS
- 200 g of sugar
- 1 liter of water
- 1 liter of sparkling water
- 5 cm ginger root
- 3 lemons
- a handful of fresh mint
- 1 lemon/lime for garnish
METHOD
- Peel and grate the root in the same way as for tea.
- However, after cooking, pour the sugar directly into the pot and stir until it dissolves.
- Wait for the boiled syrup to cool down and top it up with sparkling water and the juice of 3 lemons.
- Served with mint leaves and a lemon or lime wedge.
