- 1 cup toasted quinoa flour
- ½ cup sorghum flour
- ½ cup nutritional yeast
- ½ teaspoon of salt
- ½ cup finely chopped cabbage
- 2 tablespoons of olive oil
- ⅔ cup cold water
Method:
- Preheat the oven to 230°C.
- Toast the quinoa flour in a dry pan.
- Let it cool for 5 minutes.
- Add it to the blender along with the sorghum flour, cabbage, yeast and salt.
- While blending, add water and blend for another 30 seconds.
- Make a loaf out of the dough and let it rest for a few minutes.
- Divide the dough into 4 pieces.
- Roll each piece on a piece of baking paper into a thin pancake.
- Bake for 5-6 minutes.
- Then leave to dry in the switched off oven.

Gluten free pizza
Do you love this Italian delicacy and despair that you cannot indulge in it? Come and prepare it in a gluten-free version. You can choose the filling according to your own tastes.
Ingredients:
- 1 and ⅔ quinoa flour
- 2 teaspoons of psyllium powder
- ½ teaspoon of baking powder
- ¼ teaspoon salt and pepper
- 1 cup warm water
- olive oil
- clove of garlic
- ingredients on top of the pizza as desired
Method:
- Preheat the oven to 205°C.
- Mix the dry ingredients, then add the water and form a slightly sticky dough.
- Put the dough on an oiled baking sheet and spread it thinly with wet hands.
- Decorate it according to your own imagination and taste.
- Bake for about 20 minutes.
- Finally, brush with olive oil mixed with pressed garlic.

Ingredients:
- ¾ cup warm water
- 1 packet of instant yeast
- 1 and ½ cup millet flour
- 1 cup tapioca starch
- 2 spoons of sugar
- 2 tablespoons xanthan gum
- 1 teaspoon of salt
- ½ baking powder
- 3 large eggs (beaten)
- 2 tablespoons of olive or other vegetable oil
- 1 teaspoon of apple cider vinegar
Method:
- Mix the yeast with the water and let it sit for 5 minutes.
- Pour the millet flour, starch, sugar, gum, salt, baking powder into the blender and blend.
- Then pour the mixture into the robot, add water with yeast, eggs, oil, vinegar and knead everything thoroughly.
- Put the loaf in a baking pan (greased with oil) about 20x10x10 cm in size.
- Cover with cling film and leave to rise until doubled in size.
- Preheat the oven to 180°C.
- Bake for about 45 minutes.

Sweet gluten-free blueberry muffins
Gluten-free recipes sweet… Almond flour can do the same job as wheat flour.
Ingredients:
Dry:
- 2 cups almond flour
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- ½ teaspoon of salt
Wet:
- 3 large eggs
- ⅔ cup maple syrup
- ¼ cup vegetable oil
For the filling:
- 1 cup fresh or frozen blueberries
- lemon peel
- 3 tablespoons of almond slices
Method:
- Preheat the oven to 165°C.
- Mix the dry ingredients.
- In the second bowl, mix the liquid ingredients, then mix them with the dry ones.
- Add blueberries and lemon zest.
- Pour into greased muffin tins.
- Sprinkle with almonds and bake for 30-35 minutes.
