Greek Pasta Salad

Tangy feta and crunchy vegetables give extra body from your pasta of choice in this classic Greek-inspired cold pasta salad. Easy to make, best served chilled for a couple hours to allow the delicious Greek flavors to combine. Fresh and Summery!
- Prep Time : 20 minutes
- Yield : 3 1/2 cups of Salad
Ingredients
- Pasta of Choice (Penne or Rotini) - 2 cups, cooked
- Red Wine Vinegar - 1/4 cup
- Salt and Pepper - to taste
- Cherry Tomatoes - 10 (halved)
- Red Onion - 1 Small (diced finely)
- Red and Green Bell Peppers - 1 each (chopped finely)
- Cucumber - 1/2 (sliced)
- Black Olives - 1/2 cup (sliced thin)
- It's All GREEK to Me Seasoning Blend - 2 Tablespoons
- Extra Virgin Olive Oil - 2/3 Cup
- Feta Cheese - 1/2 cup (crumbled)
Instructions
- Cook your pasta according to your package directions to an al dente (firm with a slight bite). Drain and rinse with cold water.
- Whisk together the vinegar, Do You Bake? It's all GREEK to Me Seasoning Blend, olive oil, salt and pepper. Set Aside
- Combine the Pasta, vegetables and olives. Pour Vinaigrette (to taste) over the pasta and mix together. Carefully fold in your feta cheese.
- Cover and Chill for 2 -3 hours before serving
