Grilled eggplant with herb butter
This recipe is a quick and proven variant. Whether you choose it as a side dish, garnish or main dish, it will delight.
Ingredients:
- 1 large eggplant
- ¼ cup butter
- 1 teaspoon of olive oil
- ¾ teaspoon of Italian seasoning mix
- ½ teaspoon of dried garlic
- ¼ teaspoon black pepper
- salt and pepper
Method:
- Cut the eggplant into thin slices (approx. 0.5 cm wide) and salt on both sides.
- Mix the butter with the spices.
- Preheat the grill and brush lightly with olive oil.
- Spread the herb butter on top of each eggplant slice and place that side of the eggplant on the grill.
- Grill for 5 minutes, brush the eggplants from the top, turn and grill for another 5 minutes.

Stuffed eggplant on the grill

- 1 large eggplant
- 1 cup ricotta cheese
- 100 g of creamy fresh cheese
- 1 tablespoon of olive oil
- ½ cup grated parmesan type cheese
- ¼ teaspoon red pepper flakes
- ¼ cup chopped fresh basil
- salt and pepper
Method:
- Cut the eggplant into narrow longitudinal slices, salt them, put them in a sieve and let them sweat for about an hour.
- Meanwhile, prepare the filling for the rolls by mixing the ricotta, fresh cheese, olive oil, grated cheese, red pepper, chopped basil, salt and pepper.
- Dry the sweaty eggplants with napkins and grill for about 3 minutes on each side until soft.
- Place a spoonful of the cheese mixture in each slice and roll up.

Don’t have a home grill and would still like to prepare grilled eggplant? Does not matter? Try making it in the oven.
Ingredients:
- 1 large eggplant
- 2 tablespoons of olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon of salt
- ¼ teaspoon black pepper
- ½ teaspoon of dried garlic
Method:
- Preheat the oven to 230 °C and the grill program.
- Wash the aubergine and cut it into rounds about 1 cm thick.
- Mix olive oil, vinegar, salt, pepper and garlic.
- Coat each round of eggplant with this mixture on both sides.
- Grill the eggplants for 10 minutes on each side until golden on a grid lined with foil.

Pickled Grilled Eggplant

Ingredients:
- 500 g eggplant
- 2 tablespoons of olive oil
- 1 teaspoon of oregano
- ½ teaspoon of dried garlic
- 1 tablespoon lime juice
- 1 tablespoon fresh coriander (chopped)

- pepper
Method:
- Cut the eggplants into lengthwise slices.
- Mix the oil, pepper, garlic and oregano.
- Soak the eggplants in this mixture and let them marinate for 30-60 minutes.
- Then grill until golden on both sides.
- Mix lime with cilantro and drizzle this mixture over grilled eggplant.

Grilled eggplant sandwiches
Our next tip is gluten-free sandwiches. And how to prepare them? You don’t even need gluten-free flour. Eggplant is enough.
Ingredients:
- 2 cloves of garlic
- ½ teaspoon of salt
- ¼ cup olive oil
- 1 tablespoon of fresh thyme and oregano

- 1 cup cherry tomatoes
Method:
