Ingredients:

  • 1 large eggplant
  • ¼ cup butter
  • 1 teaspoon of olive oil
  • ¾ teaspoon of Italian seasoning mix
  • ½ teaspoon of dried garlic
  • ¼ teaspoon black pepper
  • salt and pepper

Method:

  • Cut the eggplant into thin slices (approx. 0.5 cm wide) and salt on both sides.
  • Mix the butter with the spices.
  • Preheat the grill and brush lightly with olive oil.
  • Spread the herb butter on top of each eggplant slice and place that side of the eggplant on the grill.
  • Grill for 5 minutes, brush the eggplants from the top, turn and grill for another 5 minutes.

Stuffed eggplant on the grill

Ingredients:

  • 1 large eggplant
  • 1 cup ricotta cheese
  • 100 g of creamy fresh cheese
  • 1 tablespoon of olive oil
  • ½ cup grated parmesan type cheese
  • ¼ teaspoon red pepper flakes
  • ¼ cup chopped fresh basil
  • salt and pepper

Method:

  • Cut the eggplant into narrow longitudinal slices, salt them, put them in a sieve and let them sweat for about an hour.
  • Meanwhile, prepare the filling for the rolls by mixing the ricotta, fresh cheese, olive oil, grated cheese, red pepper, chopped basil, salt and pepper.
  • Dry the sweaty eggplants with napkins and grill for about 3 minutes on each side until soft.

Ingredients:

  • 1 large eggplant
  • 2 tablespoons of olive oil
  • 1 tablespoon balsamic vinegar

  • ¼ teaspoon black pepper

Method:

  • Preheat the oven to 230 °C and the grill program.
  • Wash the aubergine and cut it into rounds about 1 cm thick.
  • Mix olive oil, vinegar, salt, pepper and garlic.
  • Coat each round of eggplant with this mixture on both sides.
  • Grill the eggplants for 10 minutes on each side until golden on a grid lined with foil.

Ingredients:

  • 500 g eggplant
  • 2 tablespoons of olive oil

Method:

  • Grill on both sides for about 5-8 minutes.
