What you will need

  • 10 large fresh prawns
  • 2-3 cloves of garlic, pressed
  • 2 stalks lemongrass (white part only, thinly sliced)
  • a handful of coriander stalks, chopped
  • 1 red chili pepper, finely chopped
  • 3 teaspoons of tom yum paste
  • 1 teaspoon of fish sauce
  • 1 lime (camphor) leaf, thinly sliced, plus extra for garnish
  • 1 tablespoon of raw sugar
  • 1 tablespoon of water
  • oil (for grilling)
  • lime, for garnish

Method

  • Cut the whiskers and legs off the shrimp.
  • Wash and dry the shrimp.
  • Use scissors to cut the center of the shrimp shell to the tail.
  • Then cut the shrimp flesh so that the shrimp opens up properly.
  • Put them aside.
  • Heat a pan with 1 tablespoon of oil and sauté the chopped garlic for 1 minute, then add the chopped lemon grass and fry for another minute.
  • Add chopped coriander stalks and chopped chillies and fry for 30 seconds.
  • Add the yum paste to it and mix well.
  • Add the fish sauce, saute for a few seconds and add the chopped lime leaf.
  • Mix and add sugar.
  • Continue mixing and add a tablespoon of water.
  • Mix until everything is combined.
  • Set aside.
  • Scoop up the fried paste and spread it on the prepared shrimp.
  • Heat a grill pan with a tablespoon of oil and grill the shrimp, shell side down, until the flesh turns pink.
  • You can cover the grill pan for even circulation.
  • Serve the shrimp garnished with thin slices of lime leaf and sliced lime.

Spicy grilled skewers with shrimp and pineapple

Tired of turning the same dishes over and over again at your summer barbecues? Try this delicious pineapple grilled shrimp recipe! It’s simple, quick to prepare and sooo good! You’ll just love it.

What you will need

  • 500 g of jumbo shrimp, peeled (don’t forget to get rid of the guts of the shrimp, which is located in the inner part of the entire length of the body – it is best to dissect them by cutting the outer part of the body, where you come across a dark, long, thin line)
  • ½ fresh pineapple, cored, halved and thinly sliced
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon fresh coriander, chopped
  • 2 cloves of garlic, chopped
  • ½ teaspoon of coarse salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon chili powder
  • a pinch of red chili flakes

Method

  • Preheat the outdoor grill.
  • Prepare the marinade.
  • In a large bowl or large ziplock bag, add the shrimp, olive oil, lime juice, cilantro, garlic, salt, pepper, paprika, chili powder, and chili flakes.
  • Mix everything thoroughly.
  • Seal bag/cover bowl and refrigerate for 30 minutes.
  • While cooling, soak about 8 skewers in water for 30 minutes.
  • Remove shrimp from marinade and shake off excess liquid, reserving marinade.
  • Thread shrimp and pineapple onto skewers as desired.
  • Place the skewers on the grill and brush with some of the reserved marinade.
  • Cover and grill for 2-3 minutes.
  • Turn the skewers and brush with the remaining marinade.
  • Cover and grill for another 2-3 minutes, until the shrimp turn pink.

Grilled shrimp with cheese

Have you ever had shrimp and cheese? It’s a delicacy! Try our combination with mozzarella and creamy cheese sauce, the whole family will enjoy it.

What you will need

For the shrimp:

  • 16 large prawns in shell
  • 1 cup shredded mozzarella
  • freshly ground black pepper
  • chopped parsley

For the cheese sauce:

  • 1 cup of milk
  • 1/2 cup cheddar cheese, grated
  • 2 tablespoons of butter
  • 2 tablespoons plain flour
  • pinch of salt
  • a pinch of cayenne pepper
  • a pinch of dried mustard

Method

  • Melt the butter in a saucepan over low heat, add the flour, salt, cayenne pepper and dried mustard.
  • Mix well.
  • Gradually add the milk, stirring constantly, and cook until thickened.
  • Add the cheddar and continue to cook until the cheese has melted and you have a smooth sauce.
  • Set aside.
  • Cut the shrimp with the shell on, remove the veins and place them on a baking sheet.
  • Pour the cheese sauce over them, leaving the heads uncovered.
  • Sprinkle with mozzarella and season with freshly ground black pepper.
  • Place the tray in the upper part of the oven preheated to 230 °C.
  • Turn on the grill function and broil the shrimp in the oven for 5-8 minutes (depending on the size of the shrimp) or until the shrimp are done and the cheese is golden brown.
  • Remove from the oven, garnish with chopped parsley and serve hot.

Grilled shrimp in a honey-garlic marinade

We have the easiest grilled shrimp recipe ever! The shrimp are marinated in a four-ingredient marinade for just 30 minutes and then flash-grilled. It’s super tasty and incredibly easy to make! So enough talk and let’s get down to it.

What you will need

  • 1/2 cup honey
  • 6 spoons of soy sauce
  • 2 tablespoons olive oil plus extra
  • 4 cloves of garlic, chopped
  • 1/4 – 1/2 teaspoon red chili flakes (optional)
  • 36 extra large prawns, peeled and gutted
  • chopped spring onion or parsley, for garnish (optional)

Method

  • In a bowl, whisk together the honey, soy sauce, olive oil, garlic and red chili, if using.
  • Place the shrimp in a large resealable bag or shallow bowl.
  • Pour the marinade over the shrimp, close the bag and remove the excess air.
  • Rub the prawns in the marinade thoroughly, transfer the bag to the fridge and leave to marinate for 30-60 minutes.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning.
  • Preheat the grill to about 200 degrees Celsius.
  • Thread the shrimp onto skewers.
  • Clean the grill grates and coat them with oil.
  • Place the shrimp skewers on the grill and grill for about 2 minutes on each side.
  • Sprinkle with spring onion or parsley as desired and serve.

Grilled tiger prawns with chimichurri sauce

If you manage to get hold of huge tiger prawns, prepare them according to our recipe! Even the most demanding guests will enjoy it.

What you will need

For the chimichurri:

  • 4 cloves of garlic, finely chopped
  • 2 shallots, finely chopped
  • 1 red chili pepper, seeded and finely chopped, to taste
  • 3 tablespoons of red wine vinegar
  • 2 tablespoons of fresh oregano
  • a handful of coriander, finely chopped
  • a handful of flat-leaf parsley, finely chopped
  • 4 tablespoons of olive oil
  • sea salt and black pepper

For the shrimp:

  • 15-20 large whole raw tiger prawns
  • olive oil
  • sea salt and black pepper

Method

  • Mix all the ingredients for the chimichurri with enough chili, salt and pepper to taste.
  • Rinse the shrimp under cold water.
  • Heat the grill to the highest possible temperature.
  • With a sharp knife, cut the prawns lengthwise and place them on an oiled baking sheet.
  • Drizzle with oil.
  • Place on grill and grill until shrimp are done.
  • Be careful not to burn them.
  • Once done, season with salt and pepper, transfer to a serving plate and serve with chimichurri.

Tips for the best grilled shrimp
