Grilled zucchini with scallions and lemon
Crunchy pine nuts and crumbled niva transform grilled zucchini into a sophisticated side dish in less than 15 minutes. Serve with grilled pork or chicken.
What you will need
- 2 tablespoons of olive oil
- 1/2 teaspoon dried rosemary
- 1 lemon
- 3 tablespoons of pine nuts
- 2 medium zucchini
- 60 g of alluvium
Method
- Set grill to medium-high heat.
- In a large bowl, combine the oil and rosemary.
- Add the zest of the whole lemon plus 2 tablespoons of the juice to the oil mixture.
- Season with salt and pepper to taste.
- Meanwhile, in a small non-stick pan, toast the pine nuts, stirring constantly, until golden.
- Remove from the stove and let cool.
- Cut the courgette into slices approx. 0.6 cm thick.
- Season with salt and pepper.
- Grill the zucchini for 2-3 minutes on each side until soft.
- Add to bowl with oil mixture and mix.
- Transfer the zucchini to a plate.
- Crumble the flour over the zucchini and sprinkle with pine nuts.

Grilled zucchini skewers
Grilled vegetables are the absolute bomb! Tender, tasty, slightly burnt…that’s how this grilled zucchini is. Plus, it’s ready in just a few minutes.
What you will need
- 2 zucchini cut into slices
- 2 lemons cut into wedges
- ¼ cup olive oil
- 1 tablespoon of dried oregano
- 2 cloves of garlic, chopped
- sea salt and freshly ground black pepper
Method
- Preheat the grill to medium heat.
- Combine olive oil, garlic, and oregano in a bowl; salt and pepper to taste.
- Thread zucchini slices and lemon wedges onto skewers.
- Coat the skewers with the olive oil dressing.
- Grill until zucchini is tender, 2 to 3 minutes per side.
- Serve!

Grilled marinated zucchini
These Marinated Grilled Zucchini Strips are one of the best Italian appetizers. Grilled zucchini slices and then marinated in a flavorful white wine vinegar dressing makes for an easy summer appetizer that everyone will love.
What you will need
For the zucchini:
- 2-3 small to medium zucchini, each weighing about 175 grams
- ¼ teaspoon salt
- 2 tablespoons of olive oil
For the marinade:
- 4 thinly sliced garlic cloves
- 2 tablespoons fresh flat-leaf parsley, chopped
- 2 tablespoons fresh basil, torn
- 2 tablespoons of white wine vinegar
- salt and pepper to taste
- fresh basil for garnish
Method
- Using a mandoline, cut the courgette lengthwise into 0.3 cm slices.
- Place these zucchini slices in a bowl and sprinkle with ¼ teaspoon salt.
- Mix and transfer to a colander placed over a bowl.
- Allow 30 minutes for the salt to draw excess moisture from the sliced zucchini.
- Place a clean kitchen towel on the worktop.
- Remove the zucchini strips from the colander and place them on a tea towel.
- Gently dry the top with another cloth.
- Transfer to a large bowl and drizzle with 2 tablespoons olive oil.
- Preheat an indoor or outdoor grill to medium heat.
- Grill the zucchini strips for 3-4 minutes on each side or until grill marks appear.
- In a small bowl, mix thinly sliced garlic cloves with chopped flat-leaf parsley, torn fresh basil and white wine vinegar.
- Place the grilled zucchini along with this simple marinade in a large, shallow glass bowl.
- Cover and leave at room temperature for at least 30 minutes.
- When ready to serve, toss gently and season with salt and pepper.
- Transfer to a serving bowl and garnish with fresh basil.

Zucchini slices on the grill with feta
Greek-inspired grilled zucchini with feta cheese is a great accompaniment to grilled meat. The luxurious dressing of fresh herbs, garlic and lemon gives it an absolutely great taste.
What you will need
- 3 small zucchini, sliced
- 2 tablespoons of olive oil
- juice of 1 lemon
- 1 clove of garlic, chopped
- 1 large handful of fresh herbs to taste
- salt and pepper to taste
- 50 g of feta cheese, crumbled
Method
- Coat the zucchini slices with a little olive oil and grill over medium-high heat until browned.
- In a small bowl, combine the remaining olive oil, lemon juice, garlic and herbs.

- Balsamic: Marinate zucchini in olive oil, pressed garlic, balsamic vinegar and thyme for 30 minutes. Finish on the grill and drizzle with a little balsamic vinegar before serving.
- Garlic and herbs: Zucchini goes well with garlic and fresh herbs. Since garlic can burn on the grill, feel free to use garlic powder.
