Dutch aka ground steak is perhaps fondly associated with Holland.

On the other hand, the recipe belongs to us, it is a purely Czech matter.

So why is this schnitzel called Dutch?

Most likely because of the well-known ingredient – edamame cheese.

Recipe for Dutch ground steak with cheese

Dutch schnitzel tastes best served with ground pork. It is best to choose thicker pieces of pork, so the cutlets will be juicier.


  • 300 g of pork flank
  • 300 g pork shoulder
  • 15 g of salt
  • 50 ml of milk
  • 1 egg
  • 150 g of Gouda or Eidam cheese

For wrapping:

  • 250 ml of milk
  • 100 g plain flour
  • 1 egg
  • 100 g breadcrumbs
  • frying oil


  • Wash both meats, dry them and cut them into cubes.
  • We then grind the meat, add salt and pepper, add milk and eggs and mix.
  • We also add coarsely grated cheese, mix again and put the meat in the fridge overnight (or at least for 2 hours).
  • Mix eggs with milk, salt and flour.
  • Put breadcrumbs in the second bowl.
  • We shape the meat mixture into cutlets, which we coat in a mixture of milk, flour and egg and then coat in breadcrumbs.
  • Fry in hot oil for about 6-8 minutes on each side.

Minced steak with cheese from the oven

Minced meat cutlets similar to the classic Dutch can also be baked in the oven. Here we have one of the recipes for example.


  • 250 g ground pork shoulder
  • 250 g of ground beef
  • 1 onion
  • 150 g edamame
  • 1 egg
  • 1 dry roll
  • milk
  • salt
  • black pepper
  • chive
  • frying oil


  • Cut the roll into small cubes, sprinkle them with milk and let them sit.
  • Then add both meats to the roll and mix with salt, pepper, chopped chives, egg and finely chopped onion.
  • Mix everything thoroughly, add a spoonful of breadcrumbs and thicken.
  • Grate the cheese coarsely and mix it in as well.
  • We form cutlets from the finished mixture, which we coat in breadcrumbs.
  • Grease the baking sheet with oil.
  • Put the cutlets on it, cover with aluminum foil (do not tighten) and bake at 220 °C.
  • After 15 minutes, add hot water to the steaks and continue baking for another 35 minutes.
  • Finally, remove the foil and bake for another 10 minutes until crispy.

Pohlreich’s true Dutch schnitzel

There have been many recipes for Dutch schnitzel since its “creation”. But which one is the right one? This corresponds to the original recipe.


  • 1 kg of pork belly
  • 1 large egg
  • 125 g of milk
  • 250 g of edam cheese
  • pepper
  • salt
  • parsley

For wrapping:

  • 2 large eggs
  • 125 g breadcrumbs
  • 125 g plain flour
  • 125 g of milk
  • frying oil


  • Wash the belly, dry it and cut it into cubes.
  • We then grind it, salt it, pepper it, add chopped parsley, coarsely grated cheese and milk mixed with an egg.
  • Make the dough and put it in the fridge for at least an hour.
  • Then we shape the cutlets, which we gradually coat in flour, salted eggs with milk and breadcrumbs.
  • Fry in hot oil for about 6-8 minutes on each side.

Diet Hollandaise Schnitzels from the oven

  • 500 g pork leg
  • 1 egg
  • 90 g of edamame
  • salt
  • pepper
  • parsley or chives
  • corn cereal for coating
  • oil


  • Wash the pork, dry it, cut it into cubes and grind it.
  • Add eggs, salt, chives or parsley, pepper and grated cheese to it.
  • We work the dough thoroughly, shape the cutlets, which we wrap in mashed cereals.
  • Place the cutlets on a tray lined with baking paper and drizzle or spray with oil.
  • Bake at 200 °C.
  • After 15 minutes, reduce the temperature to 175 °C and bake for approximately another 20 minutes.

Dutch pork belly steak

Who would say that ground pork chops in the Dutch style are simply the tastiest. And we can’t deny it.


  • 750 g of pork belly (shoulder can also be used for a more diet version)
  • 375 ml of milk
  • 300 g of edamame
  • parsley
  • pepper
  • salt

For wrapping:

  • egg
  • breadcrumbs
  • frying oil


  • We grind the meat, add salt and pepper, add milk, chopped parsley and grated cheese.
  • Let it sit in the fridge ideally until the next day.
  • The next day, we shape the cutlets, which we coat in salted egg and breadcrumbs
  • Fry in hot oil on both sides for 6-8 minutes.

We don’t need to add too many ingredients to Dutch schnitzels. To some, this procedure may seem poorer, but as they say, sometimes less really is more. Just choose the right meat. In this case, we choose thicker pieces of meat. The steak will be beautifully juicy.

But if you don’t want, can’t, or don’t like so much fat, you can replace half of the meat with leaner meat. In this case, choose, for example, belly with leg or shoulder with leg. The thigh is not that fat, but it is not very juicy on its own.

You can also replace the pork with beef, although in this case we will be talking about minced steak.

Nothing should go wrong with this dish. However, the biggest trick is the frying time. Make sure that the cutlets are fried properly. The certainty is about 8 minutes on each side. Better choose a moderate flame, so that after a while you don’t get black ones. Frying under the lid can also help.

And finally, we can talk about ideal side dishes. Mashed potatoes are an absolute classic, but light versions in the form of potato-celery puree or puree in combination with other types of root vegetables will also please you.

We can also add vegetables, stewed mushrooms, cold cuts or cheese to the minced meat cutlets. The vegetables should already be cooked and minced.

But it is more appropriate to use vegetables as garnish. Then we can also recommend a fresh spring salad .
