Recipes with grits are easy to prepare and your body will thank you for this healthy cereal. Therefore, be inspired by some of our recipes.

Smoked soup with hailstones

A classic recipe with hail that will warm you up even on the coldest days. Enjoy your meal!

Ingredients

  • 750 g of smoked meat
  • 2 bay leaves
  • 5 balls of black pepper
  • 2 balls of allspice
  • 250 g of groats
  • 2 tablespoons lard
  • 1 onion, finely chopped
  • 2 large potatoes
  • 1 carrot
  • 1 parsley
  • 1 teaspoon marjoram
  • salt
  • chopped parsley

Method

  • Put the smoked meat in the pot and cover it with 2 liters of water.
  • Add bay leaf, pepper, allspice. Bring to a boil and cook for 1 hour.
  • Pour the grits into a bowl, cover with twice as much cold water and let stand for at least 45 minutes.
  • After the time has passed, cook the grits according to the instructions.
  • Wash, clean and dice the onion, potato, carrot and parsley.
  • In another pot, heat the lard and add the finely chopped onion. Let it vitrify.
  • Then add the smoked meat broth to the onions. Pour the stock through a colander.
  • Add the diced potatoes and cook for approximately 10 minutes.
  • For another 15 minutes, add carrots, celery and hail.
  • Meanwhile, cut the meat into pieces.
  • Season the soup with marjoram, salt and add the meat.
  • At the end, garnish with parsley.

Hail risotto

Nutritious risotto with spring vegetables, creamy Greek yogurt, parmesan and mustard. Serve with any grilled or fried vegetables.

Ingredients

  • 1 stalk of celery stalks
  • 1 medium onion
  • 1 tablespoon of olive oil
  • 200 g oat groats
  • 2 dcl of white wine
  • 1 liter of water
  • 130 g of Greek yogurt
  • 100 g parmesan, finely grated
  • 3 heaping teaspoons of Dijon mustard
  • a handful of fresh thyme
  • sea salt
  • freshly ground black pepper
  • any fried vegetables on top

Method

  • Pour the grits into a bowl, cover with twice as much cold water and let stand for at least 45 minutes.
  • In a large skillet, heat the olive oil over medium heat.
  • Add onion, celery and let soften, about 10 minutes.
  • Add the oatmeal and mix everything thoroughly and let it fry for at least 5 minutes.
  • Add the white wine and let the oats absorb the liquid, stirring occasionally, about 5 minutes.
  • Add the water, bring to a boil, then reduce the heat to low and cover with a lid.
  • Simmer until the hailstones are tender, about 1 hour. Stir continuously.
  • If there is too much liquid near the end of cooking and the oats are ready, remove the lid, increase the heat and boil the excess liquid, stirring constantly.
  • Turn off the heat, add the yogurt, parmesan, mustard, thyme and mix well until the ingredients are combined.
  • Cover again and let rest for at least 10 minutes.
  • In the meantime, prepare the fried vegetables of your choice, which you will eventually add to the risotto.

Buckwheat salad

A side dish to the main meal or as a main course? It’s up to you!

Ingredients

  • 1 cup oat groats
  • 3 carrots, coarsely chopped
  • 2 – 3 spring onions, chopped
  • 1/2 cup raisins
  • 2 teaspoons fresh thyme or 1 tablespoon chopped fresh dill
  • 3 tablespoons of olive oil
  • 3 tablespoons of white wine vinegar or lemon juice
  • salt, freshly ground pepper

Method

  • Place semolina in a pot, pour 2 cups of water and bring to a boil.
  • Then reduce the heat, cover the pan and cook for about 35 minutes or until the grits are soft.
  • Pour the cooked semolina into a bowl and put the pot back on the stove.
  • Pour half a liter of water into the pot and add the carrots.
  • Cook carrots for 3-5 minutes or until just tender. Then drain.
  • Add chopped spring onions, raisins, herbs, semolina to the carrots and mix everything well.
  • Drizzle with olive oil and season with salt and pepper
  • Let rest for 10-15 minutes before serving.

Grits baked with peas and broccoli

Inspired by the traditional old Czech dish kuba. But you won’t find mushrooms in this recipe. Instead, there are grits with peas and broccoli.

Ingredients

  • 300 g oat groats
  • 250 g of peas
  • broccoli
  • 1 large onion
  • 2 cloves of garlic
  • cumin, crushed and whole
  • salt pepper
  • marjoram

Method

  • Rinse the hailstones and let them swell in water for 45 minutes.
  • Then drain the water and add fresh water to the pot.
  • Bring to the boil, season with salt and cook for about half an hour until the grits are soft but still a little crunchy to the bite.
  • After the time has passed, drain the water.
  • Wash the broccoli and cut it into small florets.
  • Fry finely chopped onion in oil until soft.
  • Then add the peas and fry for approximately 5 minutes on a medium flame, stirring occasionally.
  • Season with salt and pepper.
  • Preheat the oven to 180°C.
  • You prepare a baking pan or baking dish and grease it with oil.
  • Pour the grits into the baking dish and mix with the peas and broccoli.
  • Add crushed garlic and marjoram.
  • Place the grits in the oven and bake for 30 minutes.
  • After the baking time, let the hailstones cool.
  • Serve with vegetables or a slice of meat.

Hail pancakes

They are delicious both on their own and with any garnish. How about toasted with cheese? Don’t be afraid to be creative!

Ingredients

  • 4 cups of cooked grits
  • 1 cup buckwheat flour
  • 2 tablespoons of whole cumin
  • 1 tablespoon marjoram
  • 3 cloves of garlic
  • salt
  • vegetable oil

Method

  • Preheat the oven to 180°C.
  • Mix the hailstones. It doesn’t have to be completely smooth.
  • Salt the grits, add marjoram, cumin, pressed garlic and sprinkle with flour. Mix well.
  • Use wet hands to form patties from the dough.
  • Place them on a baking sheet lined with baking paper.
  • Brush all the patties with oil.
  • Bake the pancakes for approximately 40 to 45 minutes, until golden and starting to come away from the paper.
  • Then take them out of the oven and let them cool.

Cuba recipe

Mushroom cube is a cheap and tasty dish that is usually served on Christmas Day. Prepare a traditional meal, for Christmas, but also at any other time.

Ingredients

  • 1.5 cups of groats
  • 2 handfuls of dried mushrooms
  • 150 g of bacon
  • 1 clove of garlic
  • 300 ml of broth
  • 1 tablespoon marjoram
  • salt, ground pepper
  • lard or vegetable oil

Method

  • Soak the mushrooms in water overnight.
  • Preheat the oven to 180°C.
  • Dice the bacon and onion.
  • Let the onion foam and glaze over the bacon.
  • Then add the mushrooms and simmer.
  • Boil the grits in water with a pinch of salt. When they are done, you mix them with the mushroom mixture.
  • Season with salt, pepper, marjoram and crushed garlic.
  • You add a bit of lard, water from the mushrooms, broth and let it cook for approximately 5 to 8 minutes.
  • Transfer the cooked mixture to a baking dish and bake until the surface turns golden.

While our grandmothers used barley groats quite normally like we use rice, for example, today you will find many people who do not know them at all.

Barley groats are rightly classified as healthy foods and, unlike other cereals, have a lower proportion of gluten.
