Classic hemenex on toast

Making this breakfast is as much fun as eating it.

What will we need

  • 4 slices of toast
  • butter
  • 4 slices of ham
  • 4 eggs
  • 120 g of grated cheese
  • Salt
  • pepper
  • Chives or spring onions (chopped for garnish)

Method

  • Preheat the oven to 180 ºC.
  • Line the tray with baking paper.
  • Place the slices of toast on a baking sheet and lightly press a hole in the middle.
  • Butter the edges of the toast.
  • Place a piece of ham in the center of the toast and crack an egg.
  • Sprinkle the edges of the buttered bread liberally with grated cheese. Season with salt and pepper.
  • Bake for 15 minutes or until the egg is done to your preference.
  • Sprinkle with chopped chives/onions.

Baked hemenex omelette

This baked ham and cheese omelet is a simple dish that’s perfect for breakfast, brunch, lunch or dinner. It’s a delicious, nutritious meal along with this loaf of crusty bread , our blueberry muffins , and a fresh fruit salad .

What will we need

  • 8 large eggs
  • 250 ml of whole milk
  • ½ teaspoon of salt
  • 250g diced ham (or substitute cooked bacon or sausage)
  • 250 g of grated cheddar cheese
  • 3 tablespoons very finely chopped sweet onion

Method

  • In a large bowl, whisk together the eggs, milk, and salt.
  • Stir in the ham, cheese and onion.
  • Pour the egg mixture into a greased baking dish.
  • Bake at 180°C for 40-45 minutes or until the eggs are set and a knife inserted into the center comes out clean.

Cupcakes in the hemenex style will perfectly complement any party board, or they will be a great afternoon snack for your children. Perfect for the hand, full of necessary nutrients.

What will we need

  • 500 g of sliced ham
  • 250 g of grated cheddar cheese
  • 10 large eggs
  • 100 g cup chopped green onions
  • salt
  • pepper

Method

  • Preheat the oven to 180 degrees.
  • Spray a muffin tin with non-stick cooking spray.
  • Line each muffin cup with individual slices of ham and shape it into a cup shape.
  • Add about a tablespoon of grated cheddar cheese to the bottom of each ham cupcake.
  • Beat the eggs in a medium bowl. Stir in the chopped green onion and season with salt and pepper to taste.
  • Add a few tablespoons of the egg mixture to each of the ham cupcakes.
  • Place the muffin tray in the oven and bake for about 20-25 minutes.

Tosrtilla stuffed with ham, egg and cheese

The combination of the crispy, lightly toasted tortilla on the outside and the hemenex on the inside leaves an amazing taste and balance of flavors and textures in your mouth. You can use crispy bacon or chicken ham if you have it on hand. If you don’t eat meat at all, you can add sautéed vegetables.

What will we need

  • 5 g of butter
  • 2-3 large eggs (beaten)
  • 2 pinches of salt
  • black pepper
  • 2 slices of Mozzarella cheese
  • 2-3 slices of ham
  • 1/2 teaspoon of butter
  • 1 large tortilla

Method

  • Beat the eggs and add salt, ground black pepper and mix again.
  • Meanwhile, heat a frying pan over medium-high heat and add 5g of butter.
  • Let the butter melt.
  • Pour the beaten eggs into the pan and cook over medium-high heat.
  • Turn the omelet and cook on the other side.
  • Add the cheese in the middle and then the ham. Now start rolling the omelette. Remove and set aside.
  • Lower the heat again, then add 1/2 teaspoon of butter. Let the butter melt.
  • Place the tortilla in the pan and leave it there for 10-15 seconds, then place the finished egg tortilla on top.
  • Roll the tortilla over the egg omelet and fry for a while longer so that its crust is completely crispy.

Breakfast hemenex pizza

An easy ham and cheese breakfast? Then you have to make this protein packed breakfast pizza idea.

What will we need?

  • Finished pizza dough
  • 2 tablespoons of olive oil
  • 8 eggs
  • 80 ml of milk
  • 200 g ham (cut into cubes)
  • 250 g of grated cheese
  • salt
  • pepper

Method

  • Preheat the oven to 200 degrees.
  • Roll out the pizza dough on a baking sheet.
  • Brush the dough with olive oil and prick with a fork to prevent bubbles.
  • Bake until lightly browned, about 7-8 minutes.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  • Heat a little oil in a medium skillet over medium heat.
  • Add the egg mixture and cook until soft.
  • Transfer the egg mixture to the pizza crust, add the ham and cheese.
  • Bake for another 7 minutes until the cheese has melted.

Grilled hemenex sandwich

What will we need

  • 2 slices of toasted bread
  • 4 slices of sliced ham
  • 1 slice of Swiss cheese
  • 1 slice of American cheese
  • 2 scrambled eggs
  • 1 tablespoon butter for grilling

Method

  • Heat a pan to medium heat.
  • Spread only one side of each slice of bread with half of the butter.
  • Place one slice in the pan, buttered side down.
  • On the other side of the bread in the pan, layer the Swiss cheese, ham, scrambled eggs and American cheese, in that order. Top with another slice of ham.
  • Cover with the second slice of toasted bread.
  • Grill for about three minutes until the bread is crispy.
  • Turn and grill until the toast is browned and the cheese is melted.

How did hemenex come about?

According to a historical story, the hemenex, or ham and egg combination, was introduced to Edward Bernays by none other than Sigmund Freud. During their trips together, Freud is said to have told his nephew the value of a hearty meal to human health. When Bernays got to America many years later, he got a PR job, one of the first of its kind, for a bacon and ham company. He then asked doctors about the benefits of a hearty breakfast and “voila! ” an American tradition was born.
