Horseradish sauce with smoked meat and dumpling
An incredibly simple and tasty horseradish and cream sauce, served with smoked meat and bread dumpling. A classic that never gets tired!
What you will need
- ½ cup plain flour
- ½ cup oil
- ½ cup of milk
- ½ cup cream
- water as needed
- salt to taste
- 100 g of horseradish in a jar
- 1 tablespoon of lemon or vinegar to taste
- smoked meat and bread dumpling to serve
Method
- Start by preparing the roux by frying the flour in oil (or butter).
- Add milk and cream.
- Then add salt and one tablespoon of lemon juice or vinegar.
- Add water as needed.
- Continue stirring and bring to a boil.
- Then turn off the heat and add 100 g of horseradish.
- Serve with smoked meat and bread dumpling.

Smoked meat with horseradish-almond sauce
Have you ever tried adding almonds to horseradish sauce? If not, you should correct this mistake because it will take the sauce to another level!
What you will need
- 500 g of cooked smoked meat
- 1 and ½ cups of meat broth
- 1 cup sour cream
- ¼ cup slivered almonds
- 3 tablespoons of butter
- 3 tablespoons plain flour
- 1 cup grated horseradish
- salt and sugar to taste
Method
- Heat the butter in a saucepan and mix it with plain flour to make a light batter.
- Add the meat stock.
- Add salt and cook for 20 minutes until the sauce thickens.
- Then add the sour cream.
- Add sugar, grated horseradish and sliced almonds.
- Bring to a boil and turn off the flame.
- Put the slices of hot smoked meat on a plate and pour the sauce over them.
- Serve with dumplings or gnocchi.

Horseradish sauce with smoked pork tongue
If you haven’t given smoked tongue a chance yet, it’s time to change that! This cream sauce with horseradish complements it perfectly and together creates an absolute delicacy that it would be a shame to miss out on.
What you will need
- 40 g of granulated sugar
- 150 g of butter
- 100 g plain flour
- 10 g of whole black pepper
- 10 g bay leaf
- 30 ml of beef broth
- 250 g of horseradish
- 500 ml of cooking cream
- 1.5 kg of smoked pork tongue
- 10 g of fresh spices
- water as needed
Method
- Cook the smoked tongue together with the bay leaf, new spices and pepper for about 90 minutes.
- Place the boiled tongue in ice water and peel off the skin after cooling.
- Keep the broth aside.
- Keep the tongue warm over steam.
- Prepare a sauce from butter, plain flour and boiled tongue broth (use approx. 1.5 litres), add beef broth, cream, grated horseradish and sugar.
- Allow the sauce to simmer for a while and then serve with the sliced tongue.
- Serve, for example, with dumplings.
