Bean soup
This bean soup is inspired by a prestigious restaurant that has topped the list of the world’s 50 best restaurants year after year. But don’t worry! You can handle her left rear!
What will we need
- 1 tablespoon of extra virgin olive oil
- 1 clove of garlic, minced
- 180 g onion, finely chopped
- 1/4 teaspoon fresh thyme, chopped
- 1/4 teaspoon fresh rosemary, chopped
- 1 bay leaf
- 80 ml pureed tomatoes
- 4 x 400g tins of beans, drained
- 750 ml of vegetable broth,
For picada (sauce for seasoning)
- 20 g of fresh parsley, roughly chopped
- 1 clove of garlic, chopped
- 2 tablespoons of olive oil
- 30 g of whole hazelnuts
- 1/2 teaspoon of salt
Method
- In a large heavy pot, heat the oil over medium heat.
- Add the garlic, onion, herbs and cook, stirring occasionally, for 8 minutes, until the onion is dark golden brown and sweet.
- Add the tomatoes and cook on a low heat for another 8 minutes, until the tomatoes have thickened.
- Stir in the beans, then the vegetable broth.
- Adjust the heat so that the soup is bubbling very gently and cook for 15 minutes with the lid on.
- Transfer 150ml of the soup to a glass and blend until smooth, then stir it back into the soup to thicken the stock.
- For the picada, preheat a small frying pan over medium heat.
- Add the hazelnuts and toast until fragrant.
- Remove the skin from them using a tea towel.
- Coarsely chop the hazelnuts, then add the rest of the ingredients and blend until smooth with a stick blender.
- Just before serving, stir in 2 tablespoons of the picada.
- Add 1 teaspoon of the remaining picada to each soup plate and pour over the bean soup.
Bean and Sausage Soup
Heat the oil in a pan and add the sausage cut into rounds. Fry until crispy. Remove from the pan and set aside. Add the sausage to the finished soup at the end.

We will prepare root vegetables with onions, which we will put in cold water together with the smoked knee. Bring the whole mixture to a boil and cook for about 30 minutes. Then drain everything, put the knee in clean boiling water together with chopped vegetables and cook until soft.

What will we need
- 1 tablespoon of butter
- 1 spoon of ketchup
- 200 g of Slovak salami
- 2 onions
- 1/2 liter of broth
- 1 tomato
- 2 peppers
- 2 spoons of soy sauce
- 2 cloves of garlic
- marjoram
- ground paprika
- goulash spice
- salt
- 2 cans of beans in brine (white + red)
Method
- Fry finely chopped onion and garlic in butter, add peppers and tomatoes.
- Salt, pepper and season. Add salami cut into rounds or cubes.
- Pour in the broth and add the beans. Cover with soy sauce and stir in ketchup.
- Boil for 10 minutes and serve with pastries.

Pickled green beans
Pickled beans are a popular side dish with our neighbors in Germany. They can be served with sausage, chicken cutlets or smoked meat.
What will we need
- 250 ml of red wine vinegar
- 2 spoons of sugar
- 1 tablespoon of butter
- 500 g green beans, chopped
- salt and ground pepper
Method
- Bring the vinegar and sugar to a boil in a small saucepan.
- Reduce heat and simmer, stirring occasionally, until liquid is reduced to 2 tablespoons, 5 to 10 minutes.
- Add butter and stir until melted.
- Cook the beans in a pot of boiling salted water until tender, about 6 minutes.
- Drain well.
- Finally, mix the beans with the vinegar mixture and season with salt and pepper. Serve immediately.
Balkan beans with feta cheese or cowboy beans with onions and garlic are a little more demanding in terms of preparation time, but they are also excellent.

Mexican style beans

What will we need
- 2 teaspoons of olive oil
- 1 medium red onion, finely chopped
- 2 cloves of garlic, crushed
- 1 large red pepper, finely chopped
- 2 teaspoons of chili powder
- 2 tablespoons of tomato puree
- 2 x 400g tins of chopped tomatoes
- 2 x 400g cans of red beans, drained, rinsed
- 125 g of corn
- 1 teaspoon of powdered sugar
- 2 tablespoons of finely chopped parsley
- Basmati rice, to serve
- Avocado slices, to serve
Method
- Heat the oil in a large pot over medium heat.
- Add onion and garlic.
- Cook for 3 to 4 minutes until softened.
- Add capsicum and chili powder.
- Cook for 2 to 3 minutes or until the capsicum softens.
- Add the tomato paste, tomatoes, beans, corn and sugar.
- Bring to a boil, then reduce heat to low.
- Simmer for 20 minutes or until mixture thickens slightly.
- Serve with rice, parsley and avocado.

What will we need
- 1 large onion
- 1 red pepper
- 2 cloves of garlic
- 1 tablespoon of oil
- 1 heaping teaspoon of hot chili
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 500 g of lean ground beef
- 1 cube of beef stock
- 400 g of chopped tomatoes in a can
- ½ teaspoon dried marjoram
- 1 teaspoon of sugar
- 2 tablespoons of tomato puree
- 400 g can of red beans
- long grain rice, to serve

Method
- Cut the onion into small cubes, chop the pepper, finely chop 2 cloves of garlic.
- Add 1 tablespoon of oil to the pan and heat for 1-2 minutes.
- Add the onion and cook, stirring frequently, for about 5 minutes, or until the onion softens.
- Add garlic, red pepper, a teaspoon of chili, a teaspoon of paprika and a teaspoon of ground cumin.
- Mix well, then let it cook for another 5 minutes, stirring occasionally.
- Add the meat and continue to stir for at least 5 minutes.
- Next, crumble the beef stock cube in 300 ml of hot water.
- Then pour it into the pan with the meat mixture.
- Add a can of diced tomatoes.
- Add ½ teaspoon of dried marjoram, a teaspoon of sugar and season well with salt and pepper.
- Add 2 tablespoons of tomato paste and mix the sauce well.
- Bring everything to a boil, mix well and cover the pan with a lid. Reduce the heat to a gentle simmer and let it simmer for 20 minutes.
- After a slight boil, the mixture should look thick and juicy.
- Drain and rinse the can of red beans and stir them into the pot of chili.
- Bring to a boil again and let bubble gently, uncovered, for another 10 minutes.
- Turn off and let the chilli con carne rest under the lid for another 10 minutes.
- Serve with sour cream and plain boiled long-grain rice.

Bean spread
Quick White Bean Spread, or Vegan Pate, is a super quick recipe that works as an appetizer, snack, or party dip.
What will we need
- 1 medium onion
- 1 clove of garlic
- 2 tablespoons of olive oil
- 400 g of white beans
- 30 g of dried tomatoes in oil
- ½ lemon, juice
- 2 tablespoons of parsley
- 2 tablespoons of chives
- 1 tablespoon of water
- Salt and pepper to taste
Method
- Coarsely chop the onion and garlic, then fry them in oil until lightly browned.
- Drain and rinse the beans and add them to the bowl with the onion and garlic.
- Finally, add the lemon juice and the rest of the ingredients and mix everything well using a stick blender.
