Classic instructions for canning leche
Try this traditional recipe for canning leche in a crockpot. It’s simple and anyone can do it!
You will need
- 20 tomatoes
- 20 peppers of different colors
- 5 onions
- 3 cloves of garlic
- oil
- salt pepper
Preparation process
- First of all, prepare canning jars and lids – sterilize them.
- Place water in a large pot and bring to a boil.
- Pour the tomatoes into the boiling water and let them cook for 3 minutes.
- Then take them out of the pot, peel them and cut them into pieces.
- Then cut the onion into pieces, which you put in the pan to vitrify.
- In the meantime, clean the peppers and cut them into small pieces.
- Then add the vegetable mixture to the sautéed onion and fry for 10 minutes.
- Add water and simmer covered for another 10 minutes.
- Add salt or pepper as needed.
- Fill the resulting lecho into mason jars and seal tightly.
- Place the jars in a canning pot, add water and cook at a temperature of 85 degrees for 20 minutes.
- After removing the jar, turn it upside down and let it cool.
- Store in a cool, dark place.

Canning leche in the oven

You will need
- ready-made vegetable lecho
- canning jars and lids
- deep baking tray
- towel
Preparation process
- Properly sterilize the required number of jars.
- Preheat your oven to 150 degrees.
- Pour vegetable broth into dry glasses.
- Wipe the edges of the jars and seal.
- Stack the glasses in a deep tray, which needs to be lined with a tea towel.
- Fill the glasses with water, lower the oven temperature to 90 degrees and bake for about 20-25 minutes.
- After removing from the oven, turn the jars upside down and leave to cool.
- Store in a cool, dark place.

Canning leche in the microwave oven

You will need
- ready-made vegetable lecho

Preparation process
- First of all, prepare a sufficient number of canning jars and sterilize them – don’t forget the lids.
- Pour the finished vegetable soup into glasses.
- Wipe the rims of the glasses with a paper towel.
- Close the lid and place the glasses in a plastic bowl in the microwave oven – thanks to the bowl, the juice from the microwave will not leak out.
- Set the highest power to 700 Watts – 1 glass needs 6 minutes to brew, double the time with each additional glass.
- Pull out the jars and turn the lids down.
- Allow to cool and store in a dark and cool place.

- Then take out the glasses and turn them upside down.
- Allow to cool and store in a convenient place.

Zucchini leche canning

- 2 large courgettes
- 8 tomatoes
- 8 peppers
- 3 onions
- 2 cloves of garlic
- oil
- salt
Preparation process
- As a first step, sterilize the required number of canning jars and lids.
- Then peel the onion, cut it into pieces and put it in a pan with heated oil until it becomes glassy.
- In the meantime, clean the tomatoes, peppers and zucchini and cut them into smaller pieces, grate the zucchini on a coarser grater.
- You can remove the skins from the tomatoes or leave them on.
- Add the chopped vegetables to the sautéed onion and sauté for 10 minutes.
- Then add water and simmer for another 10 minutes under the lid.
- Add salt and pepper as needed.
- Fill the resulting lecho into pre-sterilized jars and seal tightly.
- Place the jars in the canning pot, but be careful not to touch them.
- Cover them with water and cook at a temperature of 85 degrees for 20 minutes.
- After removing the jar, turn it upside down and let it cool.
- Store in a cool, dark place.

Canning leche with sausage
Lečo does not necessarily have to be only vegetable. You can also add your favorite sausage to it. Try it out!
You will need
- 1 kg of peppers
- 1 kg of tomatoes
- 500 g of onion
- 400 g sausages
- salt
- pepper
- lard
Preparation process
- Prepare your mason jars and lids and sterilize them.
- Meanwhile, prepare the vegetables – clean and wash them, then cut them into pieces.
- Place the lard in a large saucepan and add the chopped onion.
- Lightly fry it and add chopped sausage, peppers and tomatoes to it.
- Boil for a while, cover with a lid and simmer until soft.
- Season with salt and pepper – according to your taste.
- Put the finished mixture into the prepared jars and cover.
- Stack the jars 1 centimeter apart in a canning pot and cover with water.
- Cook for 20 minutes at 85 degrees.
- Turn the jars upside down and leave to cool.
- Finally, store them as you are used to.
