  • Pour the desired amount of water into a larger pot – it depends on the number of glasses.
  • Then add sugar – add more sugar than water, the best ratio is 2:1.

Canning walnut kernels

Canning walnuts (specifically their kernels) may seem very unconventional to some. But this method of storage is the best option. However, the interesting thing is that no water or brine is used when canning the kernels.

You will need

  • walnut kernels
  • canning jars

Preparation process

  • If you are lucky enough to have walnuts right in your garden, you need to first remove the kernels from the shell.
  • Once you have enough, let the kernels dry thoroughly – they need to be really dry when canning.
  • Prepare canning jars of the required size and sterilize them.
  • The glasses must be properly dry before you fill them with cores.
  • Pour the kernels into the jars – sprinkle in parts and always shake the jar so that as many as possible get in.
  • Tightly tighten the lids on the jars and place them in the canning pot.
  • Add water to the pot – only up to half the glasses.
  • Once it boils, just let them boil for 10 minutes.
  • After removing the glass, turn it upside down and place it on a tea towel.
  • Allow to cool and store in a dark, cool place.

Canning nuts in the microwave

There is nothing easier than cooking nuts in the microwave. Want to know how to do it? So read on!

You will need

  • walnut kernels
  • jar

Preparation process

  • Prepare clean and dry mason jars.
  • Then fill them with peeled walnut kernels.
  • Set the microwave oven to 700 Watts.
  • Put the jar inside – do not cover, it is necessary for moisture to form inside.
  • Set the timer for 2 minutes.
  • Once done, cover the jars immediately.
  • Turn them upside down and let them cool.

  • Peel the walnut kernels and let them dry thoroughly.

  • Let the program finish.
  • Then take the jars out, turn them upside down and let them cool.

Canning nuts in the oven

You will need

  • walnut kernels
  • deep plate
  • towel

Preparation process

  • Remove the shells from the kernels and let them dry thoroughly.
  • Meanwhile, prepare jars for canning and sterilize them.
  • Once the kernels are really dry, fill the jars with them.
  • Line a deep baking tray with a tea towel.
  • Stack the glasses in it – 1 centimeter apart.
  • Cover with water and bake at 85 degrees for 15-20 minutes.
  • Take them out of the oven and turn them upside down.
  • Leave them to cool until the next day and store them in the right place.

Classic canning of nuts

For this recipe, you will need unripe green walnuts that do not have a ripe inner shell.

You will need

  • 30 unripe walnuts
  • 1 and ½ kg of crystal sugar
  • 3 and ¼ cups of water
  • 1-2 tablespoons of lemon juice
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 4 cloves or 1 teaspoon cardamom

Preparation process

  • Nuts need to be peeled first, use a scraper and gloves for this work so that you don’t have colored hands.
  • Place the walnuts in a pot of cold water and rinse them.
  • Prick them on each side with a fork.
  • Soak the walnuts in cold water and leave them soaked for 9 days.
  • In the meantime, change the water twice a day – this will get rid of the bitterness of the nuts.
  • The nuts will probably float to the surface, so secure them with, for example, a ceramic plate.
  • After 9 days, put the nuts in boiling water and leave them there for 10 minutes.
  • Pour the water out of the pot and let the nuts dry.
  • Meanwhile, prepare the sugar syrup.
  • As soon as the water starts to boil, put the nuts in it and boil them for about 30 minutes.
  • After the boiling time, turn off the flame, cover the pot with a lid and let it cool for about 6 hours (preferably overnight).
  • The next day, add the lemon juice, cinnamon, vanilla and cloves/cardamom to the pot.
  • Heat slowly and cook for another 30 minutes.
  • Check that the nuts are soft – they should have the texture of cheddar cheese – if they are still too firm, cook them longer until they soften.
  • When the walnuts are ready, pour them together with the syrup into sterilized jars and seal tightly.
  • For an excellent taste, let them ripen for at least 6 months in a cool and dark place.

Other options for preserving walnuts

Nut liqueur

Walnuts can also be used to make a great treat for adults – liqueur. It is delicious!

You will need

  • 0.5 l of vodka
  • 300 grams of kernels
  • 50 grams of sugar
  • 3 balls of allspice and 3 balls of pepper

Preparation process

  • Cut the unripe walnut kernels into small pieces and put them in the fermentation container.
  • Pour the alcoholic base – vodka on them, add new spices and pepper and mix.
  • Then seal the container tightly.
  • Leave in a dark place at room temperature for 14 days.
  • Shake once every 1-2 days.
  • Filter the resulting solution through a thin layer of fabric.
  • Pour the liquid into a clean new container and seal.
  • Sprinkle the remaining walnuts with sugar, shake and let them stand for 3-4 days until the sugar dissolves.
  • Shake once a day.
  • Filter the obtained walnut syrup
  • Mix both mixtures.
  • You can additionally supplement the drink with sugar or honey.
  • Pour the finished liqueur into decorative glasses and store in a dark and cool place.

Nut butter

Liven up your morning sweet breakfast with something unconventional. With this sweet nut butter, you will certainly score points not only with your children.

You will need

  • 1/2 cup walnuts – kernels
  • 200 g of softened butter
  • 1/4 cup brown sugar
  • 2 tablespoons pure maple syrup or honey
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon of vanilla extract
  • 1/8 teaspoon nutmeg

Preparation process

  • Preheat the oven to 180°C.
  • Place the walnuts on a baking sheet and bake for 8 to 10 minutes until lightly toasted.
  • Let the nuts cool.
  • Coarsely chop the walnuts and mix into the butter.
  • Gradually work in all the ingredients.
  • Put the mixture in food foil and shape it into a cylinder.
  • Seal the edges well.
  • Store in the refrigerator.
  • You can serve with pancakes, waffles, toast, etc.
