  • Pour the water into the pot, add salt and pepper and you can add paprika and bay leaf if you like.
  • Bring to a boil and cool.

Canning sausages in jars

You will need

Preparation process

  • First, prepare the jars – sterilize them, including the lids, and let them dry freely.
  • Then put the sausages in the jars – push them on top of each other to fit more sausages into the jars.
  • Pour the marinade over the sausages – the sausages need to be completely submerged in the marinade.
  • Wipe the edges of the jars with a paper towel and seal tightly.
  • Place the jars in the canning pot – stacking them 1 centimeter apart.
  • Cook at 90 degrees for one hour.
  • Then let the jars cool and store in a cool, dark chamber.

Preparation process

  • It is important to properly sterilize the canning jars, as well as the lids.
  • Once the jars are dry, place the smoked sausages horizontally in them.
  • Pour only 0.05 liters of water into the glass.
  • Remove grease from the edges of the jars and tighten the lids tightly.
  • Stack the jars 1 centimeter apart in the canning pot.
  • Cook for one hour at 90-95 degrees.

Canning homemade sausages

Would you like homemade sausage? But you don’t know how to prepare it? We have prepared a great recipe for this delicacy just for you, which you can prepare immediately.

You will need

  • 1 kg of game meat
  • 1 kg of minced pork
  • 2 tablespoons of salt
  • 1 teaspoon of sugar
  • 1 1/2 tablespoons fennel seeds – cracked seeds
  • 1 teaspoon coriander
  • 1 dcl of cold water
  • 1 ½ tablespoons of cayenne pepper
  • 1 teaspoon of chopped rosemary

Preparation process

  • Place the game and pork in the freezer and leave it there for about an hour.
  • Take out the meat after an hour and cut it into 2 centimeter strips.
  • Mix the dry ingredients and pour them into the meat mixture, cover and return to the freezer for about 30 minutes.
  • Meanwhile, prepare a meat grinder with a fine disc.
  • Remove the mixture from the freezer and grind it in a meat grinder.
  • Add cold water to the meat and spices and mix with your hands.
  • Start filling the pork intestines with the mixture prepared in this way.
  • Put the sausages in the smokehouse for 4 hours at 75 degrees.
  • Once done, let the sausages cool and rest.
  • Prepare canning jars and sterilize them properly.
  • Press the sausages into the jars, but make sure they can be pulled out well.
  • Pour melted lard over them – up to the edge.
  • Allow the lard to cool.
  • Once the lard has solidified, place the jars in the canning pot – stacking them further apart so they don’t crack.
  • Sterilize at 90 degrees for one hour.
  • After cooling, store the jars in a dark and cool place.

You will need

  • sausages
  • brine or water
  • canning jars with lids
  • deep tray with a tea towel

Preparation process

  • Sterilize the canning jars first and let them dry – loosely, do not use a cloth.
  • Then start putting the sausages in them.
  • Pour the marinade and wipe the edges of the glasses thoroughly to remove grease.
  • Cover and place in a deep tray on a tea towel.
  • Cover with water and bake at a temperature of 90 degrees for 50-60 minutes.

Pickled sausages in vinegar

You will need

  • white vinegar
  • water
  • salt
  • chili peppers or garlic
  • spices to taste

The amount of ingredients depends on your taste, usually the ratio of water and vinegar is 1:1.

Preparation process

  • First, start by preparing the necessary number of canning jars and sterilizing them, including the lids.
  • Prepare the marinade – pour strong white vinegar into the pot, together with salt and spices, add whole chili peppers or cloves of garlic, it depends on your taste.
  • Fill sterilized jars with loose cooked sausages and then pour the boiling solution over them.
  • Submerge the sausages completely.
  • Close the jars and let them cool.
  • Sausages can stay this way for a year, but are best consumed within three to four months.

Spicy canned sausages with cabbage

You will need

  • 2 kg spicy sausage
  • 200 g bacon
  • 800 g of carrots
  • 1.5 sauerkraut
  • pepper
  • onions
  • infusion
  • allspice, bay leaf

Preparation process

  • First of all, sterilize the necessary amount of canning jars, including the lids.
  • Then cut the bacon into pieces and brown it thoroughly.
  • Grate the carrot and mix it with the sauerkraut.
  • Cut the sausages, onion and pepper into larger pieces.
  • Mix the carrot and cabbage mixture with the crumbled bacon
  • In the jar, create a bed from a layer of onion, pepper, cabbage and place a layer of sausages on it – repeat, but the last layer must be cabbage.
