As with almost all kinds of fruit, we also prepare a sugar syrup for sour cherries. Adjust the amount of water and sugar according to your needs.
You will need
- 500 g of sugar
- 1 liter of water
Preparation process
- Pour the water into a large pot and add the sugar.
- Bring the mixture to a boil, stirring constantly.
- Once the sugar has completely dissolved, set the mixture aside and let it cool.

Canning sour cherries in the dishwasher
Yes, you really can preserve sour cherries in the dishwasher! And with our guide it will be a piece of cake.
You will need
- cherries
- infusion
- canning jars
- plastic bowl
Preparation process
- Take the sour cherries, de-stem them and wash them.
- Prepare canning jars with lids – sterilize them thoroughly.
- In the meantime, prepare the sugar and water marinade.
- Place the sour cherries in the glasses and cover them with ¾ of a glass of water.
- Close the glasses and put them in the dishwasher.
- When canning in the dishwasher, the jars must stand straight.
- Also, don’t put them close to each other, they might crack.
- Turn on the dishwasher for the longest program and let it finish.
- Then take them out of the dishwasher and turn them upside down.
- Leave to cool until the next day and store in the refrigerator.

Canning sour cherries in the oven is one of the most popular canning methods. Almost everyone has an oven at home, and you only need sour cherries, pickles, a baking sheet and a tea towel. Enjoy it!
You will need
- cherries
- infusion
- deep plate
- towel or newspaper
Preparation process
- Sterilize the canning jars and prepare the pickle.
- Preheat the oven to 150 degrees Celsius.
- Wash the cherries and remove the stems and leaves.
- You can also pit the cherries – it’s up to you.
- Fill the glasses with sour cherries and cover them with the cooled pickle up to ¾.
- Close the jars carefully with a lid and place them on a tray lined with newspaper or a tea towel.
- Place the glasses further apart and fill them with water.
- Bake for about 20-25 minutes.
- When canning in the oven, you can try the option without lids, where you close the jars with the lids only after taking them out of the oven – the lids will stick to the jars immediately.
- After removing the jar, turn the lid down and let them cool until the next day.
- Then store them in a suitable place – a dark and cool chamber or cellar.

You will need

Preparation process
- Clean the stems from the cherries and rinse them with water.
- Prepare a sugary pickle and let it cool.
- Gradually put the sour cherries into the sterilized jars.
- Pour the prepared sugar and water solution into ¾ of a glass.
- Put the lids on the mason jars and tighten them tightly.
- Place a plastic bowl in the microwave, in which to place the glass – the bowl prevents leakage.

You can traditionally preserve pickled cherries in a canning pot. According to our instructions, everyone can do it!
You will need
- cherries
- infusion
- canning jars with lids
- canning pot and thermometer
Preparation process
- Wash the sour cherries thoroughly and remove the stems.
- You can also bake them, but it’s up to you.
- Prepare the sugar syrup and let it cool.
- Carefully sterilize the canning jars.
- Put the sour cherries in the prepared canning jars and fill them with the pickle – up to ¾ of the glass.
- Tighten the lids tightly.
- Place the jars in a canning pot and cover them with water.
- Cook for about 20 minutes at 85 degrees.
- Then take them out of the pot and turn them upside down.
- Allow to cool, check that all lids are firmly attached.
- Store in a dark and cool room.

Pickled cherries in rum
You will really get drunk on these sour cherries – but be careful, don’t give them to children. We will use rum instead of water.
You will need
- cherries
- rum
- sugar
- jar
- canning pot
Preparation process
- Wash the cherries, remove the stems and pit them.
- Prepare canning jars – sterilize them.
- Fill the glasses with cherries and sprinkle with sugar.
- Add rum to the glasses and close the lids.
- Prepare a canning pot in which to stack the jars.
- Be careful not to touch the glasses.
- Fill the glasses with water.
- Cook for 10 minutes at 80 degrees.
- After cooling, turn them upside down and let them cool.
- Store in a dark and cool place.

Other storage methods

Cherry jam without pectin
You will need:
- cherries
- sugar
- lemon juice
Use 1 cup of sugar and 3 tablespoons of lemon juice for 2 cups of fresh cherries.
Preparation process:
- Wash the cherries and remove the pits and stems.
- Pour them into a pot, add sugar and lemon juice.
- Cook over low heat, stirring constantly.
- Once the mixture reaches the desired consistency, it’s done.
- Pour the hot mixture into the glasses, close them and turn them upside down.
- Allow to cool and store in the chamber.

Cherry sauce
This sauce is a great addition to any grilled meat.
You will need
- 2 kg of sour cherries
- 1 ½ cups of water
- ¼ cup sugar
- 1-2 tablespoons of lemon juice
Preparation process
- Wash, pit and roughly chop the sour cherries.
- Pour the sour cherries into the pot and mash them slightly.
- Add the water and cook over low heat, stirring often, for 10 to 15 minutes, or until the fruit is soft.
- You can strain the mixture through a sieve, or use a hand blender and then strain again.
- Add sugar and lemon juice.
- Heat the resulting puree so that the sugar dissolves completely.
- Leave the resulting sauce to cool and you can either freeze it or cook it.
- Pour the sauce into sterilized mason jars.
- Close the lids carefully and cook for about 15 minutes.
- Allow to cool and store in a cool, dark place.

Pickled cherries
You will need
- 1.2 kg of sour cherries
- 2 cups of sugar
- 1 tablespoon of vinegar
- ¼ cup of water
Preparation process
- Take the sour cherries, wash them, remove the stems and pit them (not necessary).
- You can split the cherries in half or leave them whole – so they don’t burst, pierce them with a fork.
- Prepare a pickle from sugar, vinegar and water.
- Place the ingredients in a saucepan, stir and bring to a boil, stirring constantly.
- Reduce heat and simmer for 2 minutes.
- Leave to cool and you can serve the cherries.
- If you want to keep them for a later snack, you can preserve them
- Put sour cherries in the prepared pickle and cook for 2 to 5 minutes.
- Pour the mixture into sterilized mason jars and seal.
- Cook for about 15 minutes at 80 degrees.
- Remove the jars and turn them upside down.
- Allow to cool and then store.
